Cooking spray for greasing pan
8 medium green onions with tops
12 slices bread
2 cups cut-up cooked smoked ham (about 10 oz)
2 cups shredded Cheddar cheese (8 oz)
6 large eggs
2 cups milk
1 teaspoon ground mustard
1/4 teaspoon red pepper sauce
Paprika, if desired

Steps:

  • Spray a 13x9-inch (3-quart) glass baking dish with the cooking spray. Peel and thinly slice the green onions; you will need about 1/2 cup. Trim crusts from the bread.
  • Arrange 6 bread slices in baking dish. Layer the ham, cheese and onions on bread in dish. Cut remaining bread slices diagonally in half; arrange on onions.
  • In a medium bowl, beat the eggs, milk, mustard and pepper sauce with a fork or wire whisk; pour evenly over bread. Cover with plastic wrap or foil and refrigerate up to 24 hours.
  • Heat the oven to 300°F. Uncover strata and sprinkle with paprika. Bake uncovered 1 hour to 1 hour 10 minutes or until center is set and bread is golden brown. Let stand 10 minutes before cutting into serving pieces.

1 tablespoon olive oil
1 medium sweet onion, diced
1 bag (1 pound) frozen chopped broccoli, thawed
1 loaf Italian bread (14 ounces), cut into cubes
1/2 pound sliced low-sodium deli ham, chopped
6 large eggs
1 1/2 cups 2% milk
2 tablespoons chopped fresh or freeze-dried chives
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups shredded cheddar

Steps:

  • Directions 1. Heat oven to 375 degrees F. Coat a 2-quart oval baking dish with nonstick spray. 2. Heat oil in a large nonstick skillet over medium heat. Add onion and cook 5 minutes. Add broccoli and cook another 3 minutes. 3. Place bread cubes in a large bowl. Stir in broccoli-onion mixture and the ham. 4. In a medium bowl, whisk together the eggs, milk, chives, mustard, salt and pepper. Pour over bread mixture, stirring to mix. Transfer to prepared dish, and top evenly with cheese. 5. Bake at 375 degrees F for 40 to 45 minutes, or until strata registers 160 degrees F on an instant-read thermometer.

I like preparing this kind of meal especially weekends at the cottage.Prepare this in the evening, refrigerate overnight and bake it in the morning..good for Brunch.

4 cup(s) bite size broccoli florets
4 - eggs
2 cup(s) milk
1 teaspoon(s) dried basil
5 cup(s) whole wheat baguette cut into 1 inch pieces
1 tablespoon(s) honey or dijon mustard
6 ounce(s) black forest ham from deli cut into pieces
1 1/2 cup(s) cheddar cheese, shredded
1 tablespoon(s) paprika, sweet mild
- salt and pepper to taste

Steps:

  • Butter a 13 x 9 baking casserole. In a pot of boiling water cook broccoli for 3 minutes..drain and rinse in cold water drain well and pat dry.
  • In large bowl whisk eggs until blended whisk in the milk mustard, basil,paprika and s and p...add broccoli, bread, ham and half the cheese toss gently. Spread into prepared casserole and sprinkle with remaining cheese.Cover and refrigerate for at least 6 hours or overnight..Preheat oven to 350F.
  • Uncover casserole and bake for 30 to 35 minutes or until puffed and a knife inserted in centre comes out clean..Let stand for 5 minutes then serve.
  • You can substitute smoked salmon,chorizo sausage or cooked chicken for the ham.
