HEARTY COUNTRY HAM AND CABBAGE SOUP
This is a quick and easy comfort food, a meal in a bowl, that is ideal for cold winter evenings.

Steps:
- Heat oil in a large, heavy-bottomed pan. Add onion and fry until soft, about 5 minutes. Add country ham and cook for 3 to 4 minutes. Add chicken stock and potatoes; make sure potatoes are completely covered by the stock. Throw in thyme sprigs and bring to a boil.
- Reduce heat and simmer until potatoes are soft, about 20 minutes. Remove and discard thyme sprigs. Add cabbage and mix well; the liquid no longer needs to cover the cabbage-potato mix. Bring back to a boil.
- Cover and reduce heat; simmer until the thickest parts of the cabbage are softened, 5 to 10 more minutes. Taste, then season with salt and pepper if needed.
- Mix water and cornstarch in a small bowl and add slowly to the soup. Mix well and cook until soup is about the consistency of heavy cream or desired thickness; it should not be too thick. Cook for 2 to 3 more minutes before serving.

- Melt butter in a large stockpot over medium-high heat. Add celery, onion, and carrot. Saute for 4 minutes. Stir in flour and cook 1 minute more.

SMOKED HAM HOCK AND CABBAGE SOUP
Got this recipe from an Amish neighbor years ago, but she doesn't remember where she got it. I have had this at the Hoss's steakhouse chain as an appetizer or with a big salad.This is more about the broth than the ham or cabbage. Be careful of the salt as some ham hocks can be very salty, but on the plus side they are available at any grocery store.

- Remove skin from smoked ham hocks.
- In a large soup pot, heat oil over medium heat. Saute carrots, onions, chopped celery, oregano. thyme, bay leaf, and ham hocks until carrots are tender-about 10 minutes.
- Add the cabbage, garlic, and black pepper, and saute 5 minutes longer or until cabbage is tender.
- Add all the liquid and the whole stalk of celery and bring to a boil over high heat.
- Reduce heat and simmer, covered for 1 1/2 hours.
- Remove ham hocks and set aside to cool. Discard stalk of celery and bay leaf.
- Skim some or all fat.
- Remove meat from cooled ham hocks and add back into the soup.
- Add brown sugar. Salt very carefully. Allow to heat fully and serve.
- If you want it a little sweeter, add a little more brown sugar.

- To make the soup, heat the olive oil in a large saucepan. Add the onion and cook until softened, about 5 minutes. Add the chicken broth, caraway seeds, potato and cabbage and bring to a boil. - In a large saucepan or small stockpot over medium heat, warm the oil.
- Add the onion and cook, stirring occasionally, until starting to be translucent, about 5 minutes.
- Add the carrots, celery, and garlic and cook, stirring occasionally, until the carrots and celery are crisp-tender, about 3 minutes.
- Add the ham, broth, cabbage, and bay leaves and bring to a boil over high heat. Reduce to a simmer, cover, and cook until the cabbage is tender, 15 to 20 minutes. Add salt and pepper to taste. Remove the bay leaves before serving.

- Shred cabbage. Peel potatoes and cut them into 1/4" dice. Cut carrots into 1/4" dice. Coarsely chop scallions. Cut ham into 1/4" dice. In a medium saucepan, melt butter over medium heat until hot but not smoking. Add potatoes, carrots and scallions and saute until scallions are wilted, about 5 minutes. Stir in flour and cook, stirring, for 1 minute. Add cabbage, water, broth, dill and pepper, and bring the mixture to a boil over medium-high heat. - 1. Cover ham hocks with water and cook until falling apart. Should take about one hour on medium heat on the stovetop.
- 2. While this is cooking, prepare all the vegetables.
- 3. Remove ham from the broth. Discard the bones and fatty pieces. Cut ham into large chunks.
- 4. Skim off as much of the grease as possible from the broth. Or if you like, cool the broth. Place in the refrigerator for about an hour. The grease will float to the top for easy removal then place back on the stove. (Though this will take more time than I have allotted for preparation.)
- 5. Add the potatoes, carrots, celery and bay leaves on medium or just below medium heat on the stovetop. Cook for about 20 minutes.
- 6. Add the cabbage, onions, and chicken stock. Cook an additional 40 minutes on the same heat or until all is tender.
- 7. Then add the ham and cook an additional 10 minutes. Serve with pumpernickel or dark rye bread. Enjoy.

- Add water or broth, ham or smoked turkey, cabbage, tomatoes and chili powder.
