BROCCOLI HAM TURNOVERS

Steps:
- Place broccoli in a steamer basket over 1 in. of boiling water in a saucepan. Cover and steam for 5-8 minutes or until crisp-tender. Rinse in cold water; drain well. In a bowl, combine broccoli, cheese, ham, onions, parsley, nutmeg, salt and pepper. , On a floured surface, roll out pastry; cut each in half. Place 1-1/2 cups filling on one side of each half; flatten filling with a spoon. Combine egg and cream; brush some over pastry edges. Fold pastry over filling. Seal edges and prick tops with a fork. , Place on a baking sheet; brush with remaining egg mixture. Bake at 400° for 18-22 minutes or until golden brown. Let stand 5 minutes before serving.

- Heat oven to 350°F. Cook and drain spaghetti as directed on package. Cook frozen broccoli as directed on bag.
- In ungreased 2-quart casserole, mix cooked broccoli, ham, milk, Alfredo sauce and pimientos. Gently stir in cooked spaghetti; cover.
- Bake 35 minutes. Uncover; sprinkle with cheese.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil; cook the pasta in the boiling water, stirring occasionally, until tender but not mushy, about 10 minutes. Drain.
- Thaw the broccoli in a microwave oven until you can break it apart into small pieces.
- Heat the olive oil in a large skillet over medium heat; cook and stir the diced ham in the hot oil until the edges start to brown, about 10 minutes. Stir in the broccoli and cook and stir until any excess water has cooked away and the ham and broccoli are hot. Pour in the jar of Alfredo sauce and the milk; stir to blend, sprinkle with pepper, and add the cooked pasta. Stir everything together to coat the pasta with sauce and bring to a simmer.
- Spread the bubbling pasta mixture into the prepared baking dish, top with shredded Colby-Monterey jack cheese, and bake in the preheated oven until the casserole is hot and the cheese is melted and starting to brown, about 30 minutes.

- In a small saucepan, melt butter; stir in flour. Stir in the mustard, horseradish, Worcestershire sauce, onion and salt. Combine the pineapple juice, milk and egg yolk. Gradually stir into butter mixture. Bring to a gentle boil; cook until thickened. Remove from the heat and set aside. , Top each piece of ham with a cheese slice and two to three broccoli spears. Spoon 1 tablespoon sauce over broccoli. Roll-up, securing with toothpicks if necessary. Place, seam side down, in a greased shallow baking dish. Top with remaining sauce. , Cover and bake at 350° for 15-20 minutes or until heated through. Discard toothpicks.

EASY HAM AND BROCCOLI TURNOVERS

- Prepare by cooking broccoli in a pot with water on medium to high heat. Keep broccoli stems and florets intact.When cooled, cut up the broccoli into long pieces while still leaving the whole stems and florets intact. Set aside.Chop up the block of cream cheese into chunks. Set aside.
- Unroll the crescent rolls and separate them. On each crescent roll, at the wide end, place one slice of ham, then place 2 stems of broccoli each facing opposite ends.TIP: Place broccoli stems in a position so that the floret head sticks out of each end of the crescent roll when rolled up.Add a single chunk of cream cheese.
- Starting at the wide end, roll up the crescent roll and place on a cookie sheet.Bake according to the Pillsbury package directions.After baking, let cool. Enjoy!

THis recipe came from the Junior League of Cobb-Marietta, Georgia. The name of the cookbook is "Georgia on My Menu". I got it out of our Georgia Magazine, September 2004. DH does not like horseradish so I decreased the amout to 1 teaspoon. (he never knew it was used...hehehe)

- Preheat oven to 350 degrees.
- Place one slice of cheese on top of each slice of ham; top with 1 to 2 spears of broccoli and set aside.
- In medium saucepan, melt butter, blend in flour, salt horseradish, mustard, Worcestershire and onion.
- Combine egg youlks and pineapple juice; gently stir into butter mixture.
- Stir in milk and cook over low heat, stirring constantly until thick and bubbling.
- Spoon 1 tablespoon sauce over broccoli; roll ham and cheese around broccoli and secure with wooden toothpick.
- Place roll-ups in baking dish; cover and cook at 350 degrees for 25 to 30 minutes.
- Spoon remaining hot mustard sauce over ham rolls just before serving.
