1 container (2.8 oz) French-fried onions
6 cups water
2 lb fresh green beans, trimmed and cut into 1 1/2-inch lengths
1/4 cup butter
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1 cup Progresso™ chicken broth (from 32-oz carton)
1 cup half-and-half
4 oz cream cheese
2 cups shredded Cheddar cheese (8 oz)
1 cup finely chopped cooked ham

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. Reserve 1/2 cup French-fried onions for topping.
  • In 4- to 5-quart saucepan, heat 6 cups water to boiling over medium-high heat. Add green beans. Cook 6 minutes, stirring occasionally. Remove from heat; drain, and place green beans back into pan; set aside.
  • Meanwhile, in 3-quart saucepan, melt butter over medium-high heat. Add flour and salt; stir with whisk or fork until blended. Gradually stir in broth and half-and-half; cook and stir 6 to 8 minutes or until smooth, bubbly and sauce thickens. Remove from heat. Add cream cheese and Cheddar cheese; stir until cheeses are melted. Stir in remaining French-fried onions and the ham.
  • Pour cheese mixture over green beans; stir to coat. Spread mixture in baking dish. Top with reserved 1/2 cup French-fried onions.
  • Bake 25 to 30 minutes or until hot and bubbly.

1/2 cup black beans, cooked (can use canned)
1/8 teaspoon salt
1 cup rice, cooked & cooled (left-over is great)
1 medium onion, chopped
1/2 green pepper, chopped
1 cup ham, diced (can use more)
1 bay leaf
2 tablespoons oil

Steps:

  • Preheat oven to 350*F.
  • Saute onions, green pepper, ham, bay leaf and 1/8 teaspoonful salt in oil. In large casserole, place drained beans, rice and onion/ham mixture. Toss lightly together. Cover and bake for 30 minutes or until thoroughly heated.

3 tablespoons butter
3 cups cubed bread
1 onion, minced
3 cups cooked ham, cut into one inch cubes
1 (10 ounce) can cream of celery soup, undiluted
½ cup milk
1 ½ cups instant rice
1 ½ cups water
1 (15 ounce) can green beans, drained
6 slices American cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Oil a 9-inch baking dish with spray cooking oil.
  • Place the bread cubes in a small bowl. Melt the butter in a large skillet, and pour half over the bread cubes. Toss cubes and set the bowl aside.
  • Add the onion to the remaining butter in the skillet and cook over medium heat until softened, about 2 minutes. Add the chopped ham. Stir in the cream of celery soup and the milk. Bring the mixture to a boil, stirring. Remove from heat.
  • Put the rice and water into the baking dish. Top with the drained green beans. Then spoon the ham mixture on top of the green beans. Cover with the slices of American cheese, then sprinkle over all with the bread cubes.
  • Bake uncovered until cheese melts and edges bubble, about 45 minutes.

1 tablespoon olive oil
1 large cooking onion, diced
2 tablespoons minced garlic
2 cups diced cooked ham
3 cups cooked white pea beans
2 cups canned Italian tomatoes or 2 cups Mexican-style stewed tomatoes with jalapeno peppers, diced
1 cup grated cheddar cheese
1 1/2 cups fresh breadcrumbs
1/4 cup parmesan cheese or 1/4 cup romano cheese
1/4 cup finely chopped fresh parsley
1 tablespoon olive oil
1 cup grated provolone cheese (optional)
1/2 teaspoon basil (optional)
1/4 teaspoon pepper (optional)

Steps:

  • In a nonstick skillet, heat the olive oil over medium/high heat. Sauté the onions and garlic until soft. Remove from heat.
  • (Note: If you are using Italian stewed tomatoes, change the cheese to the Provolone and add the basil & pepper. If you are using the Mexican stew tomatoes stay with the cheddar cheese.).
  • In a large bowl, combine the garlic/onion mixture with the ham, beans, tomatoes, cheese, basil & pepper. Spoon into a lightly greased 3 quart casserole dish.

1 tbsp butter
1 tbsp flour
3/4 cup milk
2 tbsp soy sauce
1 cup sour cream
2 cups cubed cooked ham
1 can thinly sliced water chestnuts
1 cup bread crumbs with melted butter
paprika

Steps:

  • Thaw beans. In a saucepan melt butter and blend in flour. Stir in milk and soy sauce. Cook, stirring occasionally, over medium heat until thick. Next stir in sour cream, ham, beans, and water chestnuts. Pour into a 10 x 6 inch baking dish. Sprinkle bread crumbs on top. Top with paprika. Bake at 350 degrees for 30 minutes.
