CHEESY HAM, GREEN BEAN AND POTATO BAKE
Steps:
- Heat oven to 350 degrees. Prepare potatoes and place in a steamer basket over boiling water. Cover and steam while preparing green beans. Add green beans to potatoes and steam about 5 minutes more. Just long enough that potatoes can be pierced easily with a fork. While veggies are steaming, prepare cheese sauce. Melt butter in a medium sauce pan. Add onion and saute over medium heat for 3-5 minutes, until translucent. Add flour, and stir until flour is incorporated. Cook 1-2 minutes to get rid of raw flour taste. Add milk and stir constantly until mixture has thickened--about 5 minutes. Add grated cheese. Season with salt and pepper. Pour sauce over ham mixture and top with remaining cheese. Bake, uncovered until heated through, 10-15 minutes. Place under broiler for 3-4 minutes to brown cheese, if desired.

- Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 3-quart saucepan, heat ham, barbecue sauce, onion and beans over medium-high heat, stirring occasionally, until thoroughly heated. Pour into baking dish.
- In large bowl, stir 2 pouches muffin mix, milk, butter and eggs just until moistened (batter will be lumpy). Spread over ham and bean mixture to edges of dish.
- Bake uncovered about 20 minutes or until toothpick inserted in center comes out clean and cornbread is golden brown.

- In a large skillet, saute onion, green pepper and garlic in butter until tender. Stir in ham, beans, tomatoes, tomato sauce, chili powder, mustard, salt, pepper and hot pepper sauce. Bring to a boil. Meanwhile, in a bowl, combine the cornmeal, flour, baking powder and salt. In another bowl, combine the milk, egg and oil; stir in corn. Add to cornmeal mixture just until combined., Transfer the hot bean mixture to a greased 13x9-in. baking dish. Drop cornbread batter by spoonful over the top. Bake, uncovered, at 375° for 30-35 minutes or until bubbly and a toothpick inserted in the center of topping comes out clean.
