1 pound bacon
1 onion, diced
1 (16 ounce) package egg noodles
1 head cabbage, sliced
salt and ground black pepper to taste

Steps:

  • Snip bacon into small pieces with a scissors and cook in a large skillet over medium heat until crisp, stirring often, about 10 minutes. Cook and stir onion with bacon until translucent, about 5 more minutes; set bacon and onion aside, leaving drippings in the skillet.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
  • Transfer bacon and onion mixture with drippings into the pot used to cook the noodles and cook and stir cabbage until coated with drippings. Cover pot and cook until cabbage is tender, 10 to 12 minutes, stirring occasionally. Gently stir in noodles and season to taste with salt and black pepper.

HALUSHKI WITH PAP'S DUMPLINGS

2 cups all-purpose flour
3 eggs
3 ounces milk
Salt and pepper
8 ounces (2 sticks) butter
1 large yellow onion, cut into medium dice
1 head savoy cabbage, cut into medium dice
2 tablespoons Hungarian paprika
12 ounces smoked ham, cut into julienne strips

Steps:

  • Combine the flour, eggs, milk and some salt and pepper in a medium bowl. Mix by hand until incorporated, making sure not to overmix. Place in the refrigerator, covered, and let rest for 1 hour.
  • Bring a pot of salted water to a boil. Cut penny-size dumplings into the water by hand and let boil for 5 minutes. Drain the dumplings and set aside.
  • Melt the butter in a large pan. Add the onions and cook until translucent. Add the cabbage and paprika and cook until tender. Toss with the dumplings and smoked ham and serve.

This is a traditional Polish recipe handed down from my grandma. Its quick, simple, inexpensive, tasty and makes enough to feed an army.

1 ½ pounds pork chops
garlic powder to taste
salt and pepper to taste
1 onion, chopped
1 large head cabbage, cut into squares
1 pound large egg noodles
1 tablespoon butter

Steps:

  • Sprinkle pork chops with garlic powder, salt and pepper and place in a large greased sauce pan or deep skillet with chopped onion and fry until very brown and well cooked. It is ok if they stick a little, as the drippings are essential in this dish. When done, remove chops and set aside.
  • Add a little water to the saucepan or skillet and mix up the drippings a bit. Place cabbage into the pot, and allow to cook down completely.
  • In a separate large saucepan, boil the egg noodles in water until cooked. Drain noodles and mix in butter.
  • Cut up the pork chops to bite size pieces and set aside. When the cabbage has cooked down, add pork and cooked noodles and mix completely.

There must be dozens recipes out there, all made by their grandmother's and mother's, who were Polish,Ukranian, Hungarian, Russian or from others who have some other Eastern European background, but I decided I would add mine which my grandfather, from Rumania, used to make with me in our home in Cuba. My father would just melt when I made this and we served it with brisket and gravy, not that the dish needed anything else. In spite of what the directions may seem this is a quickie noodle dish. UPDATE: 12/27/07 just made this again and I used microwaveable(sp) turkey bacon(special request)and I used crushed red pepper flakes and it was great! We enjoyed it so much and I still would like more since I am only allowed a bite!!! "UP-UPDATE" 04/18/09 - have corrected the tiny grammatical error, thanks for the tip! ;)

1 head cabbage
1 1/2 cups broad egg noodles
1 1/2 cups onions
4 tablespoons unsalted butter or 4 tablespoons unsalted margarine, and
4 tablespoons virgin olive oil
2 teaspoons minced garlic
1/2 teaspoon brown sugar or 1/2 teaspoon Splenda sugar substitute, brown blend
salt, to taste
fresh coarse ground black pepper, to taste

Steps:

  • Variation #1:.
  • Cook broad noodles according to package instructions and drain.
  • Cut up cabbage, onions, add butter, garlic and brown sugar and water.
  • Cook until cabbage is done, making sure no water remains, 5-7 minutes.
  • Pour cabbage over noodles and mix well.
  • Add salt & pepper, to taste.
  • This is a more rustic looking recipe.
  • Variation #2:.
  • Cook the noodles according to package instructions and drain.
  • Cut the cabbage up any way you like, slices or shredded, do the same with the onions, I prefer sliced onions & shredded cabbage.
  • Heat a large pan on medium-high heat.
  • When the pan is hot, add butter/oil combo, or 'grease' of your choice.
  • When the butter & olive oil are hot, add cabbage and onions and saute for a few (about 5 minutes), then add garlic and sugar.
  • Turn down the heat to medium and cover the pan.
  • Let this cook until the cabbage is soft, about 3 more minutes.
  • If you want the cabbage browned more, remove the lid and turn up the heat once again.
  • Add the butter/oil combination as you need it.
  • Add the cooked noodles and serve.
  • Variation #3:.
  • Use 1/2 of the butter/oil combination and turn heat to medium-high, when it is hot; add the onions.
  • Saute the onions with sugar or substitute for about 10 minutes, until they start to caramelize, then add garlic for another 30 seconds to 1 minute.
  • Cook noodles according to package directions, and drain.
  • Place cabbage in large saute pan with 1 Tablespoon of the butter/oil combination and saute until lightly browned.
  • Add the caramelized onions, garlic, cabbage & noodles and marry them for about 1 or 2 minutes, then add salt & pepper, to taste .
  • Serve.
  • *The amount of ingredients you use depends on how much halushki you want to make. Experiment!

¼ cup butter
1 onion, chopped
1 medium head cabbage, chopped
1 pinch salt and freshly ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in egg noodles and return to a boil. Cook noodles uncovered, stirring occasionally, until tender but still slightly firm, about 5 minutes. Drain well.
  • Meanwhile, melt butter in a large skillet over medium-high heat and cook onion until soft and translucent, about 5 minutes. Add cabbage and cook until soft and almost brown, 15 to 20 minutes. Add cooked noodles and stir until it's hard to tell them apart from the cabbage, about 15 minutes more. Season with salt and pepper.

1 recipe dumpling dough, recipe follows
4 tablespoons butter
2 cups julienne onions
Salt
Freshly ground white pepper
1 pound cottage cheese
1 tablespoon finely chopped parsley leaves
2 cups water
2 teaspoons vegetable oil
1 egg
1 teaspoon salt
3 to 4 cups all-purpose flour

Steps:

  • Bring a pot of salted water to a boil. Turn the dough out unto a floured surface. Roll the dough out to about 14-inch rectangle and 1/4-inch thick. Cut the dough into 1-inch squares. Add the dough to the boiling water and cook for about 4 to 5 minutes, or until the dough floats for 1 minute in the water and is fully cooked. Remove and drain on paper towels. Season with salt. Meanwhile, melt the butter in a large saute pan. Add the onions. Season with salt and pepper. Saute until tender, about 3 to 4 minutes. In a large mixing bowl, toss the dumplings with the onions and cheese. Toss well. Season with salt and pepper. Spoon into a serving bowl and garnish with parsley. Serve warm.
  • In a mixing bowl, combine the water, oil and egg. Mix well. Add the salt and 3 cups of the flour. Mix until the dough comes together and form a smooth ball. **If the dough is too sticky-add a little more flour, about 1/4 cup at a time. Cover with plastic wrap and allow to rest for 30 minutes.

A simple, yet hearty eastern European dish that is a family favorite. The cheese mixture is indescribable. This dish can be prepared a day or two in advance, then baked just before serving. It also doubles or triples very well for holiday feasts or large parties.

1 small cabbage
12 ounces wide egg noodles
24 ounces cottage cheese
8 ounces sour cream
1 egg
1 small mild onion
1/2 cup butter or 1/2 cup margarine
salt and pepper

Steps:

  • Boil noodles, according to package instructions, until al dente. Set aside in large mixing bowl.
  • Dice onion. Saute in 1/3 stick of butter until they start to get a little color, then set aside.
  • Remove stem and chop cabbage into bite-sized pieces (about 3/4 inch). Saute in 2/3 stick of butter until tender and have a little color. Add to noodles.
  • Blend cottage cheese, sour cream, and egg. Add sautéed onions and mix well. Season with salt and pepper to taste.
  • Add cheese mixture to noodles and cabbage and mix well. Pour into a glass 9 x 13 baking dish lightly coated with non-stick spray.
  • Bake covered at 350°F for 30 minutes or until heated through. Uncover and bake an additional 10-15 minutes to crisp edges and top layer. Serve hot.
  • DO NOT sauté the onions and cabbage together. The onions will burn before the cabbage is done. This also helps to better distribute the butter throughout the dish.

I got this from a German friend of mine about 10 years ago. It's different from the others posted as it uses dumplings instead of noodles and adds some smoked ham for a more protein rich meal. Very tasty! (time does not include chill time for dumpling dough)

  • Finely chop cabbage.
  • Put in a pan with salted water to cover.
  • Bring to a boil.
  • Cook 5 minutes.
  • In the meantime, chop onions and saute in 1 C margarine until tender, approximately 10 minutes.
  • Drain cooked cabbage, rinse with cold water, squeeze out the excess water.
  • Mix into the cooked onion; add 1/2 C butter, mix and cook until medium browned, approximately 30 minutes, stirring to prevent overbrowning.

This is an old family recipe and we use potato dumplings rather than noodles of other versions, It is a Great Lentin dish or just an all around comfort food.

3 russet potatoes
1 large egg
1 small cooking onion
2 cups flour

  • In large pot, boil 12 cups of lightly salted water. Cut bacon into very small pieces and put into large stockpot on medium heat. Cut cabbage in half and shred. Put into the stockpot with the bacon.Cut up onion into chunks and place in, also.Add Paprika,Season Salt,and black pepper. Stir often to prevent sticking or burning. Peel potatoes and shred into large bowl. Add flour aall little at a time, mixing at the same time. When all mixed, add egg. Mix thoroughly. Form into big ball and put onto cutting board. With knife, cut thin strips and drop into boiling water. When dumplings rise to the top, they are done. Continue doing this until all of ball is cut into dumplings and boiled. This is an old ethnic recipe that is really tasty. I'm not sure what nationality it is. But it's GOOD and I hope you enjoy it as much as the people do here. Seems everyone knows what Halushki is----it's just cabbage and noodles.

1 medium to large head of cabbage
2 stick butter
1 medium chopped onion
1/2 pkg medium noodles
salt and pepper to taste

Steps:

  • 1. In a very large flatter pan melt the butter and add the chopped onion. Saute until onion is clear, being careful the butter doesn't burn. Meanwhile, cook the noodles in another pot of salted water to al dente'. Drain. Cut up the cabbage in approximately 1 inch pieces and add to the butter and onions add salt and pepper. Cook on medium heat stirring often, until the cabbage is soft and looks done (it will start to brown a little). Add the noodles and stir until well coated with the butter. Enjoy !!
  • 2. Usually, I double this recipe because we like it so much. I also send some over to our neighbor who is also a big fan. If I double it, I only use 3 sticks of butter not 4 then stir really well. This is also better the next day. Just heat it up in the microwave. YUM YUM!!

2 yellow or white onions-sliced
½ cup of water
2 Tbls of butter
2 Tbls of olive oil
16 oz of egg noodles
1Tbls caraway seed
salt and pepper to taste

Steps:

  • Boil the noodles in a large pot with salted water until then are al dente, while the pasta is cooking make the cabbage mixture. Cabbage mixture Melt the 2 Tbls of butter with the olive oil in a large sauté pan add the onions and sauté until they are lightly caramelized. Add the cabbage a little salt and the ½ cup of water. The water will help to steam the cabbage. Sautee until the cabbage is wilted and the water has evaporated. Add the caraway seed and continue to sauté the cabbage until it is lightly caramelized. Toss the cabbage mixture with the noodles and season with salt and pepper to taste.

2 heads cabbage, core julienned
1/2 lb bacon
2 large yellow onions, diced
1 (1 lb) package egg noodles, cooked
tossed w. butter, to prevent sticking
black pepper, lots,fresh grnd

  • Fry bacon in deep skillet until you have about 1/4 to 1/3 cup grease.
  • Set bacon aside for BLT's or nibbling.
  • (I add it to the recipe just before serving.) Add onion, and saute over medium heat until almost translucent.
  • Add cabbage, about 1/3 at a time, covering pan and lowering heat a bit to prevent scorching.
  • Continue until all cabbage is in pan, and cook until limp and tender.
  • Add 1/2 to 1 full tablespoon fresh pepper-- salt at the very end-- be reserved with salt-- the cabbage picks up the sodium in the bacon and the cooked noodles.
  • Add cabbage mixture to cooked noodles, tossing well to mix.
  • Serves about 450 people as a side dish, 6-8 as more of a main course.

This recipe is a traditional slovak dish used on meatless days. Growing up we had this on Fridays in Lent. The secret is to brown the butter (this is the difficult step because the butter can go from light to dark brown very quickly. You cannot substitute Margarine or light in this recipe.

One of our favorite weeknight meals! Hearty, easy, quick to fix, and wonderful with homemade mashed potatoes! A homestyle meal that everyone will enjoy! (Leftovers reheat nicely in the microwave, too!)

1 package(s) johnsonville bacon & cheddar sausages, grilled and sliced on the bias (or cook on stovetop according to package directions)
4 - strips lean quality thick-cut bacon, snipped into small pieces
1/2 - large head cabbage, sliced
1 medium onion, large diced
1 clove(s) garlic, minced
1 package(s) 12 oz. ( or half of a 24 oz. bag) reames frozen home-style egg noodles
1/2 teaspoon(s) kosher salt
1/4 teaspoon(s) coarse ground black pepper
4 tablespoon(s) real butter

Steps:

  • Grill (or cook) sausages according to package directions. (I like to grill them over lower heat for a longer amount of time). When done, slice 1/3" thick, or as you like, into a bowl. Cover and set aside.
  • Snip bacon into small pieces with kitchen scissors into a large frying pan and sauté over medium heat until crisp, stirring often, about 10 minutes. Add onion and garlic, and sauté with bacon until onion is softened and translucent, about 5 more minutes. Set aside leaving the bacon drippings in the pan. Add sliced cabbage, salt, pepper, and toss. Cover until needed.
  • Bring a large pot of salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but al dente, about 18 minutes if using Reames. Drain well. Scrape bacon and onion mixture (with the drippings) into the pot you used to cook the noodles, add butter, and cook and stir cabbage until coated with drippings. Cover pot and cook cabbage over medium-low heat, about 15 to 18 minutes, or until cabbage is tender. Stirring occasionally. Gently stir in noodles and sliced, grilled sausages.
  • Turn heat down to low and heat through, about 1 more minute, folding gently. Taste and adjust seasonings as you like. Serve with my homemade mashed potatoes if you'd like.
  • NOTE: *If you're like me, and bake (or fry) your bacon when you buy it and save the grease, use 4 strips cooked bacon, snipped into pieces, and 2 Tbl. bacon grease. Cook the onion and garlic in the bacon grease and add the already-cooked bacon when you add the cabbage.

It was wonderful because we gleaned great food from all these different communities. Most of the meals were simple, tasty and cost conscious. As a kid I didn't care for this dish, but my taste buds...

1 medium head of green or purple cabbage or half a head of each
16 oz extra wide noodles
8-12 oz bacon (1/2 - 3/4 pound)
1 large onion
seasoned salt and freshly ground pepper to taste
4 Tbsp butter, unsalted (1/2 stick)

Steps:

  • 1. Cut the bacon into 1 inch dice. In the bottom of a very large pot (8-12 quart) fry the bacon until crisp. Scoop out the bacon using a slotted spoon.
  • 2. Dice the onion and then sauté in the bacon fat until softened and barely golden.
  • 3. Quarter the cabbage, remove the core portion that is solid and tough. Cut each quarter in half again, the cut the cabbage into pieces about an inch wide. Separate the chunks of cabbage into individual leaves. Put into the pot with onions and bacon fat. Stir to coat the cabbage with the bacon fat. Put a lid on the pot and cook over medium-low heat until the cabbage is cooked to your taste. (My family likes a bit of crunch left in the cabbage). Stir occasionally being sure to scrape up any browned bits on the bottom of the pan. A wooden spoon works great for this.
  • 4. While the cabbage is cooking, prepare the noodles according to the package directions until al dente. Drain well.
  • 5. When the cabbage is done to your taste, add the noodles, bacon, and butter and combine. Add seasoned salt and pepper to your taste.
  • 6. I have also added cooked chicken breast (cut into bite-sized pieces) to this dish. You can also use ham instead of bacon. You can leave all the meat out for a vegetarian dish.
