1/2 cup all-purpose flour
Salt and freshly ground salt and pepper
2 (6-ounce) halibut fillets
Extra-virgin olive oil
3 tablespoons butter
2 slices prosciutto, cut into strips
1/2 cup white wine
1/2 lemon, juiced
2 teaspoons capers
2 tablespoons chopped fresh flat-leaf parsley plus whole sprigs, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the flour on a deep plate or in a shallow bowl and season well with salt and pepper. Dredge the fish in the flour. Put a large skillet over medium-high heat, add 1 tablespoon oil and the butter and get the skillet hot. Add the fillets and cook until browned on 1 side, 2 to 3 minutes. At the same time, add the prosciutto and cook, stirring, to brown. Then flip the fish, put the skillet in the oven, and roast until the fish is just cooked through, about 10 minutes.
  • Remove the fish to 2 serving plates. Dump the prosciutto out onto paper towels to drain. Put the skillet back over medium heat. Add another tablespoon olive oil, the white wine, lemon juice, capers, the remaining 2 tablespoons butter and the parsley and bring to a boil; boil until reduced and thickened. Season with salt and pepper. Pour the sauce over the fish, top with the prosciutto, and serve immediately.

Another great recipe from the back of the 2012 edition of Eat This, Not That! by David Zinczenko and Matt Goulding. This cooking method can be done with other meats, too. Chicken breast or pork loin can be placed in the center of a strip of prosciutto, seasoned with salt and pepper, wrapped tightly, and roasted at 400 degrees F in the oven until cooked through.

4 (5 ounce) halibut fillets (can be cod, sea bass, or any other flaky, white fish, 4-6 oz.)
salt, to taste
pepper, to taste
4 slices prosciutto, sliced thin
1 lemon, quartered
2 tablespoons pesto sauce, prepared

Steps:

  • Preheat the oven to 375 degrees F. Season the fish all over with salt and pepper.
  • Lay the slices of prosciutto flat and wrap a piece of fish tightly with one of the slices. Repeat with the remaining 3 slices.
  • Place the fish on a baking sheet and position it on the middle rack of the oven.
  • Roast until the prosciutto begins to crisp up and the fish flakes with gentle pressure from your finger (or a fork), about 10-12 minutes.
  • Serve each with a wedge of lemon and the pesto drizzled over the top.

Four 4- to 6-ounce halibut fillets
Salt and freshly ground black pepper
8 slices prosciutto
2 tablespoons olive oil
2 cloves garlic, minced
Zest of 1 lemon
Pinch chile flakes
2 cups shredded Brussels sprouts
1 cup shredded kale
1 cup whole wheat couscous
1 cup hot chicken stock or water
1/4 cup dried currants or chopped dried cranberries

Steps:

  • Preheat the oven to 375 degrees F.
  • Sprinkle the halibut with salt and pepper. Lay 2 slices of prosciutto on a flat surface, slightly overlapping each other. Place a halibut fillet at the end of the slices and roll up (like a mini burrito). Repeat with the remaining prosciutto and halibut.
  • Heat the oil in a large ovenproof skillet over medium-high heat. Sear the halibut just until the prosciutto gets browned, about 1 minute per side. (If your pan is hot enough, this will happen quickly. This is just for color and crisping the prosciutto; the fish will cook later in the oven!) Transfer the fish to a plate.
  • Quickly stir the garlic, lemon zest and chile flakes into the skillet. Add the Brussels sprouts and kale and saute until tender, 7 to 8 minutes. Season with salt and pepper. Stir in the couscous, hot stock and currants. Place the fish on top of the mixture and transfer to the oven. Bake for 8 minutes. Remove the fish from the skillet, fluff the couscous with a fork and serve.

2 tablespoons butter
4 small leeks, white part only, halved and thinly sliced
S&P
4 Granny Smith apples, peeled, cored, and thinly sliced
1/4 cup heavy cream
1-3/4 pounds halibut fillet, at least an inch thick, cut into four equal pieces
8 slices prosciutto
1 tablespoon EVOO

Steps:

  • In a skillet, melt butter. Add leeks, salt, and pepper and cover over medium-low heat for 10 minutes, stirring often, until leeks are tender. Stir in apples, cover pan, and continue cooking, stirring occasionally, for 20 minutes or until apple is tender. Pout cream into pan at the edges. Stir well and take off heat. Set the oven to 350 degrees. Sprinkle halibut with S&P and wrap 2 slices of prosciutto around each piece. Secure with toothpicks at sides, or tie with string. Add oil to ovenproof skillet. When hot, add fish and sear for about 2 minutes on one side. Turn when it releases easily from bottom. Transfer skillet to oven and cook fish for 10 minutes or until it springs back when pressed gently with fingertip. Stir apple mixture over medium-high heat until hot and cream is absorbed. Divide apple mixture among 4 plates and top with fish.
