Steps:
- Sprinkle halibut with salt and pepper.
- Sauté zucchini, onion and garlic in 1 tbsp.
- oil for 2 minutes.
- Add tomato and parsley and cook covered for 1 minute.
- Remove from pan.
- Sauté halibut in 2 tbsps.
- hot oil until brown on both sides.
- Allow a total cooking time of 10 minutes per inch of thickness (measured at thickest part or until flakes easily with fork).
- Return vegetables to pan.
- Add lemon juice, salt and pepper to taste.
- Heat briefly.
- Recipe may be doubled.

Steps:
- Cut onion bulbs in half lengthwise (quarter if large). Cut enough onion tops into 2" lengths to measure 1 cup. Heat 1 tablespoon oil in a large skillet over medium-high heat until almost smoking. Add onion bulbs, cut side down; cook until golden, about 3 minutes. Transfer to a plate.
- Heat 1 tablespoon oil in same skillet. Add squash; cook, stirring occasionally, until golden brown and just tender, about 5 minutes. Stir in onion bulbs, 1 cup onion tops, and 1 tablespoon thyme leaves; season with salt and pepper and cook until onion tops wilt, about 1 minute longer. Remove from heat; set squash mixture aside.
- Heat remaining 2 tablespoons oil in a large nonstick or cast-iron skillet over medium-high heat. Season halibut with salt. Add fish and thyme sprigs to skillet and cook until fish is golden brown, about 5 minutes. Turn fish and cook until just cooked through and opaque in the center, about 2 minutes longer. Divide onion-squash sauté among plates; top with halibut.

- Cut halibut into 1-inch cubes.
- Season halibut with salt and pepper.
- Saute halibut chunks in 2 tablespoons oil barely cooked.
- Remove from skillet and reserve.
- Saute vegetables in remaining oil until crisp-tender.
- Return halibut to skillet and add ground ginger.
- Combine chicken broth, cornstarch, and lemon peel; add to halibut mixture.
- Cook and stir until thickened and halibut chunks will flake with a fork.

CRISPY HALIBUT WITH ZUCCHINI SAUTE & FRIED CAPERS
Steps:
- Preheat oven to 400 F Make a dredging station for the fish; combine flour, chili powder and salt in a powder and salt in a shallow bowl. Beat egg with milk and dijon in another bowl and place panko in the third bowl. Dredge fish first in flour, then in egg mixture and then in panko to coat. Heat 2 tbsp canola oil in a large frying pan on med. high heat. Add fish and fry, turning for 2 to 3 minutes or until crumbs are golden. Transfer fish to a baking sheet and bake for 7 minutes or until fish is cooked through. Wipe out pan, add remaining 1 tbsp canola oil and heat on high heat. Add capers and fry for 2 to 3 min. or until crispy. Transfer to a paper towel lined late to drain. Add olive oil to pan over medium heat. Add zucchini and fry for 1 minute or until just beginning to soften. add tomatoes and garlic fry 1 minute longer or until they have begun to release, juice. Season with salt and pepper and sprinkle with parsley and fried capers. Serve fish over zucchini mixture, spooning some sauce over fish.
