Gluten free, whole 30, and delicious, this baked fish is perfect for an easy weeknight meal. Fresh sun-dried tomatoes work best here, but a clean olive oil packed version is ok too.

1 lb fresh halibut
2-3 tbsp sundried tomatoes, chopped
2-3 tbsp mayonnaise
2 garlic cloves, minced
1/4 tsp dried oregano
Optional: dash of red pepper flakes
1 tbsp fresh basil, chopped
olive oil, kosher salt, and fresh pepper to taste

Steps:

  • Preheat oven to 425 degrees F. Mix together chopped sun-dried tomatoes, mayo, garlic, oregano, and red pepper flakes (if using).
  • Coat a small baking sheet with a splash of olive oil and place the fish on top, skin side down. Sprinkle fish with a tiny bit of kosher salt. Spread the mayonnaise/tomato mixture over the top of the fish.
  • Bake at 425 for 15-17 minutes. My fish was about 1 1/2" thick and took 15 minutes. Remove from oven and top with fresh chopped basil. Enjoy!

One-Pan Baked Halibut Recipe with Vegetables image

You'll love this simple baked halibut recipe with colorful vegetables tossed in a citrus and olive oil sauce! Perfect for busy weeknights because it comes together in 20 minutes or less. If you can't find halibut, another white fish like cod, haddock, or red snapper would work well. This sheet pan dinner is a filling meal in one, but if you want to make the most of the zesty Mediterranean-style sauce, serve the halibut and veggies over a bed of barley or bulgur.

Zest of 2 lemons
Juice of 2 lemons
1 cup extra virgin olive oil
1 1/2 tablespoon freshly minced garlic
2 teaspoon dill weed
1 teaspoon seasoned salt, (more for later)
1/2 teaspoon ground black pepper
1 teaspoon dried oregano
1/2 to 3/4 teaspoon ground coriander
1 pound fresh green beans
1 pound cherry tomatoes
1 large yellow onion, (sliced into half moons)
1 1/2 pound halibut fillet, (slice into 1 1/2-inch pieces)

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large mixing bowl, whisk the sauce ingredients together. Add the green beans, tomatoes, and onions and toss to coat with the sauce. With a large slotted spoon or spatula, transfer the vegetables to a large baking sheet (21 x 15 x 1 inch baking sheet, for example). Keep the vegetables to one side or one half of the baking sheet and make sure they are spread out in one layer.
  • Now, add the halibut fillet strips to the remaining sauce, toss to coat. Transfer the halibut fillet to the baking sheet next to the vegetables and pour any remaining sauce on top.
  • Lightly sprinkle the halibut and vegetables with a little more seasoned salt.
  • Bake in 425 degrees F heated oven for 15 minutes. Then transfer the baking sheet to the top oven rack and broil for another 3 minutes or so, watching carefully. The cherry tomatoes should begin to pop under the broiler.
  • When ready, remove the baked halibut and vegetables from the oven. Serve immediately.

Dried Italian seasonings are readily available, from most supermarkets, already premixed. This high protein recipe is wonderful with fresh arugula or spinach salad and rice or sauteed new potatoes. For more servings, increase the recipe, accordingly. This recipe goes well with other white fish, such as haddock, cod, scrod, catfish, etc. A bottle of Chianti to aid digestion would not go amiss.

2 halibut steaks or 2 halibut fillets (6-8 oz/180-250 g)
1 pinch salt
1 pinch fresh ground black pepper
1 tablespoon olive oil
1/2 cup dry white wine
1/2 teaspoon dried Italian seasoning
2 large plum tomatoes, coarsely chopped
2 teaspoons capers, rinsed and drained

Steps:

  • Sprinkle both sides of fish with salt and pepper.
  • Heat oil in a large, non-stick frying pan and set over medium-high heat.
  • Add fish and cook until lightly golden, from 2 to 3 minutes per side.
  • Remove to a plate.
  • (If using fillets, remove skin, if you wish.) Cover with foil to keep warm.
  • Add wine to pan, then stir in Italian seasoning.
  • Boil, stirring occasionally over medium-high heat, until wine is reduced by half, from 1 to 2 minutes.
  • Stir in tomatoes and capers.
  • Return fish and any accumulated juices to pan.
  • Cover and reduce heat to medium-low.
  • Continue to cook, turning fish halfway through, until firm to the touch and a knife tip inserted into thickest part of fish comes out warm- from 7 to 10 minutes.
  • Place fish on dinner plates and spoon sauce overtop.

1 (12-ounce) or 2 (6-ounce) center-cut halibut fillets, skinned
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Extra-virgin olive oil, for drizzling
1 loaf ciabatta bread, ends trimmed, halved lengthwise
2 tablespoons extra-virgin olive oil
1 clove garlic, peeled and halved
1/3 cup mayonnaise
1/4 cup chopped sun-dried tomatoes
1/4 cup chopped fresh basil leaves
2 tablespoons chopped fresh parsley leaves
1 tablespoon capers, drained
Zest of 1 large lemon
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 cups arugula

Steps:

  • For the fish: Place an oven rack in the center of the oven. Preheat the oven to 450 degrees F. Spray a small baking sheet or glass baking dish with vegetable oil cooking spray. Set aside.
  • Season the halibut on both sides with the salt and pepper. Place on the baking sheet and drizzle with oil. Bake until the fish is cooked through and the flesh flakes easily with a fork, 10 to 15 minutes. Set aside to cool completely, about 20 minutes.
  • For the bread: Preheat a grill pan or a large nonstick skillet over medium-high heat. Remove some of the dough from the top half of the bread. Brush the cut-sides of the bread with olive oil. Grill the bread until golden, 1 to 2 minutes, and rub the cooked surface with the cut side of the garlic.
  • For the filling: In a medium bowl, combine the mayonnaise, sun-dried tomatoes, basil, parsley, capers, lemon zest, salt, and pepper.
  • Using a fork, flake the cooked fish and add to the filling. Mix until incorporated. Place the filling on the bottom half of the bread. Top with arugula. Add the top half of the bread and cut into 4 equal-sized sandwiches.

4 (6-ounce) packages Pacific halibut
Sea salt and freshly ground black pepper
1 cup cherry tomatoes, halved
¼ cup feta cheese, crumbled
⅓ cup pitted kalamata olives, crushed with side of knife
2 large cloves garlic, minced
2 tablespoons fresh thyme, or 2 teaspoons dried thyme
¼ cup extra-virgin olive oil
Juice from ½ a lemon

Steps:

  • Preheat oven to 375F.
  • Arrange halibut in a baking dish, leaving space between fillets. Season with salt and pepper. Scatter tomatoes, feta, and olives, garlic, and thyme on top of fish, then drizzle with olive oil. Squeeze half a lemon over the dish.
  • Place baking dish on center rack in oven and set timer to 10 minutes. At the 10-minute mark, check on the doneness of fillets. Halibut is done when thickest part flakes easily or has reached an internal temperature of 130 degrees on an instant read thermometer. Cook for a couple more minutes if not done.
  • Serve while hot or at room temperature with side of cooked greens, rice, or lemony roasted potatoes.

This fish is so easy and really flavorful. If you like spicy, try sprinkling a little bit of cayenne pepper as well as the seasoning on the fish before pour the mixture over it. One of the household favorites!

1 large tomato, chopped
1 onion, chopped

This dish, though, inspired by one from Southern Italy, elegantly feeds a crowd. The fish, halibut, is seasoned with chile, salt and olive oil, then topped with rosemary, lemon and olives and roasted. It's a lighter main dish that won't leave anyone hungry.

2 (8-ounce) halibut fillets, preferably at least 1-inch thick
1 1/2 teaspoons extra virgin olive oil, more to taste
Kosher salt
Ground chile pepper, preferably Turkish or Aleppo
2 rosemary branches
1 small lemon, very thinly sliced
1/4 cup sliced, pitted calamata or other good-quality black olives

Steps:

  • Heat oven to 450 degrees. Place fish in a baking dish, brush fillets with 1 teaspoon of oil and season with salt and chile pepper. Top each fillet with a rosemary branch and several slices of lemon. Drizzle remaining oil over lemon slices and sprinkle with additional salt. Scatter olives over fish and pan.
