FISH IN LEMON BUTTER SAUCE WITH CAPERS & BROCCOLI



Fish in Lemon Butter Sauce with Capers & Broccoli image

Make this Fish in Lemon Butter Sauce in just 25 minutes for a flavor packed one pan meal that's going to be a fast favorite. The fish is cooked all the way in a sauce made from lemon, butter, white wine & capers - that's how you get maximum flavor.

1 Tbsp butter
½ cup white wine
⅔ cup heavy cream
¼ cup mini capers
1 lemon (juice only)
¼ tsp salt (according to taste, only if needed)
½ lb white fish filets
½ lb broccoli (cut in florets, stem peeled and chopped)
2 servings rice (optional)

Steps:

  • Preheat oven for 200 C/390 F.
  • Melt the butter in an oven safe frying pan or skillet over medium-high heat, then pour in the wine and bring to a boil. Simmer for 2 minutes.
  • Add cream and simmer for 2 minutes.
  • In a small bowl, mix the lemon juice with a few tablespoons of the cream sauce, then add to the sauce and simmer for 1 minute.
  • Remove the pan from the heat and add the capers. Taste test and season with salt as needed.
  • Place the fish filets in the bottom of the pan and place the broccoli on top. Spoon some sauce over the fish & broccoli.
  • Cook in the middle of the oven for 10-15 minutes. For thin plaice filets, 10 minutes is enough, for thicker fish filets like cod 15 minutes might be needed.
  • Serve on its own, or with a side of rice.

This is a real winner. I have never tasted anything quite like it. I love it over mashed potatoes.

2 1/2 lbs boneless pork, cut into 1 1/2-inch chunks
1/2 cup flour
1 teaspoon salt
1/2 teaspoon pepper
1/3 cup vegetable oil
1 large red bell pepper
1 large green bell pepper
1 small onion
2 cups beef broth
2 tablespoons soy sauce
1 tablespoon white wine vinegar
1 lb fresh broccoli
1 teaspoon fresh minced garlic

Steps:

  • Coat the meat with the flour, salt, and pepper.
  • Brown the meat in hot oil; reduce the heat to medium low.
  • Drain off all the pan drippings but 1 tablespoon.
  • Add the bell peppers and chopped onion to the pot.
  • Cook about 5 minutes, until wilted; remove to a bowl.
  • Add the broth, soy sauce, and vinegar to pot, stirring to scrape up browned bits.
  • Bring to a boil. Return the browned meat to pot. Cover and simmer 45 minutes. Taste to see if the seasonings are ok.
  • Simmer covered 30 minutes more, until the meat is tender.
  • Stir in the broccoli that has been seperated into florets.
  • Add the garlic and the peppers.
  • Cover and simmer 10 more minutes, or until the broccoli is tender and the sauce is slightly thickened. Serve over mashed potatoes. Enjoy!

1-1/2 cups chicken broth
1/2 cup uncooked long grain rice
1/4 teaspoon Italian seasoning
1/4 teaspoon garlic powder
3 cups frozen chopped broccoli, thawed and drained
1 tablespoon grated Parmesan cheese
1 can (2.8 ounces) french-fried onions, divided
1 pound cod
Dash paprika
1/2 cup shredded cheddar cheese

Steps:

  • In a large saucepan, combine the broth, rice, Italian seasoning and garlic powder, bring to a boil. Transfer to a greased 11x7-in. baking dish. Cover and bake at 375° for 10 minutes. Add the broccoli, Parmesan cheese and half of the onions. Top with fish fillets; sprinkle with paprika., Cover and bake 20-25 minutes longer or until the fish flakes easily with a fork. Uncover; sprinkle with cheddar cheese and remaining onions. Return to the oven for 3 minutes or until cheese is melted.

This recipe was handed down by my mother, although I have changed it a bit. This really reflects our region, since New England is famous for its fish.

Number Of Ingredients 10

1/2 cup butter, divided
3 medium onions, sliced
5 medium potatoes, peeled and diced
4 teaspoons salt
1/2 teaspoon pepper
3 cups boiling water
2 pounds haddock, cut into large chunks
4 cups milk
1 can (12 ounces) evaporated milk
Additional salt and pepper, optional

Steps:

  • In a Dutch oven, melt 1/4 cup butter over medium heat. Cook onions until tender but not browned. Add the potatoes, salt, pepper and water. Top with fish. Simmer, covered, until potatoes are fork-tender, 20-25 minutes. , In a large saucepan, heat milk over medium heat until bubbles form around side of saucepan. Stir in evaporated milk and remaining butter; add to fish and potato mixture. If desired, season with additional salt and pepper. Heat through.
