CRANBERRY WALNUT SALAD image

Number Of Ingredients 16

Cup of walnuts, roasted and chopped very fine
1 garlic clove, minced
1 1/4 tsp. salt
1/2 tsp. pepper
1 shallot, chopped
2 tblsps rice vinegar
2 tsps sugar
1 tsp Dijon mustard
1 cup oil (canola or olive or 1/2 cup of each)
For the salad and toppings:
1 bunch head or bag lettuce or salad greens
1/4 cup dried cranberries
1/4 cup mandarin oranges
1/4 cup blue cheese, gorgonzola or feta
3 tblsps walnuts, chopped
1/2 red onion, sliced thin

Steps:

  • Combine dressing ingredients in a small food processor or blender and puree. Drizzle dressing onto lettuce or salad greens. Add cranberries, cheese, walnuts and onion to taste.
