8 ounces ground beef
1 ounce cooked bacon, chopped
1 ounce shredded cheddar cheese
2 tablespoons canola oil or 2 tablespoons olive oil
1 hamburger bun (optional)

Steps:

  • Special tools: 1 round mold (lid to a peanut butter jar or other round container recommended) and 1 sheet plastic wrap
  • Divide ground beef into approximately 2 equal portions. Set aside.
  • Line round mold with plastic wrap. Pat half of the ground beef into the round mold.
  • Layer with cheese and bacon, being careful not to go too close to the edges.
  • Cover with other half of the ground beef. Press down edges of ground beef together to seal.
  • Remove pattie from mold and pan fry over medium heat in 2 tablespoons of oil.
  • Serve plain or on a bun.

1 ounce shredded Cheddar
1 ounce cooked bacon, chopped
2 tablespoons canola or olive oil
1 hamburger bun, optional

Steps:

  • Divide the ground beef into approximately 2 equal portions. Set aside. Line a round mold, such as a lid to a peanut butter jar, with plastic wrap. Pat half of the ground beef into the round mold. Layer with the cheese and bacon, being careful not to go too close to the edges. Cover with the other half of the ground beef. Press together the edges of the ground beef together to seal. Remove the patty from the mold.
  • Heat the oil in a skillet or over high heat. Cook the patty to desired doneness. Serve plain or on a bun, as desired.

1/4 pound bacon, chopped
1/2 cup minced red onions
3 tablespoons fresh uncooked chorizo, out of casing
Salt and freshly ground black pepper
2 pounds ground chuck, 80/20 mix
1/2 pound Swiss cheese, thinly sliced, about 8 slices
4 kaiser rolls, split and toasted
3 tablespoons olive oil
1/4 cup diced red onion
8 Roma tomatoes, skinned, seeded, cut into 1/4-inch pieces
1 tablespoon chopped garlic
2 tablespoons Worcestershire sauce
1 tablespoon apple cider vinegar
2 tablespoons sugar
1/2 teaspoon chopped fresh dill
Salt and freshly ground black pepper
Pinch allspice
Pinch celery salt
Pinch mustard seed

Steps:

  • In a medium pan over medium to high heat, add bacon and onions, cook until the bacon is rendered but not crisp. Add the chorizo and cook until done. Remove the bacon mixture to a paper towel-lined plate to drain and cool.
  • Divide ground chuck into 8 equal parts. Form into a loose ball, and create 4-inch patties. Layer 1 piece of cheese onto the center of 1 patty. Top with 1/4 bacon mixture, another slice of cheese, then add another patty on top and gently seal edges and form into a patty, about 4 inches wide and 1 1/2 inches high. Repeat with the remaining patties to make a total of 4 large patties.
  • Heat a medium saute pan over medium heat. Place all 4 patties in the pan and cook for 3 to 4 minutes on 1 side, then gently turn over and cook for another 3 to 4 minutes. Remove the pan from the heat, cover and pop it in a 250 degree F oven for 10 minutes.
  • Remove from oven, place onto rolls and serve with Worcestershire Tomato Ketchup.
  • In medium saute pan over medium heat, add oil and onions. Cook until brown and caramelized. Add the tomatoes, and garlic and cook for a few minutes, just to soften the vegetables. Then add the remaining ingredients and simmer for 30 minutes.
  • You can either serve the ketchup chunky or puree it in a blender first and serve it smooth.

6 slices bacon, cut into bite size pieces
8 ounces cremini mushrooms, cleaned and sliced
2 pounds ground chuck
1 large shallot, diced
1 teaspoon black pepper
1 teaspoon coarse salt
2 tablespoons Worcestershire sauce
4 ounces Swiss cheese, cubed
4 sesame seed buns
2 tablespoons grapeseed oil

Steps:

  • Preheat the oven to 400 degrees F
  • Place the bacon in a large saute pan and cook until crispy, about 5 minutes. Remove the bacon with a slotted spoon and reserve 1 tablespoon of the bacon fat in the pan. Add the mushrooms and cook until caramelized, about 5 minutes. Set the mushrooms aside to cool in a bowl.
  • In a large bowl, combine the beef, shallot, black pepper, salt, and Worcestershire. Separate the mixture into 4 equal portions. Divide each portion into 2 separate patties.
  • Combine the cheese into the cooled mushrooms and bacon mixture. Take 1 patty and top with 2-ounces of the filling. Place another patty on top and pinch around the edges to make sure that the filling is totally covered. Make the rest of the patties the same way.
  • Over medium-high heat, heat a large skillet with grapeseed oil. Once hot, add the burgers and cook for 2 minutes per side. Place the pan into the oven and cook for 4 to 6 more minutes for medium burgers.
  • Remove from the oven and serve on a sesame seed bun.

1/2 cup crumbled blue cheese (2 to 3 ounces)
2 ounces cream cheese
2 tablespoons chopped flat leaf parsley
1 1/2 lbs ground beef
salt and pepper
2 tablespoons vegetable oil
2 tablespoons butter
4 hamburger buns, split and toasted
lettuce, onion slices and condiments, for serving

Steps:

  • In a small bowl, using a fork, mash together the blue cheese and cream cheese until smooth. Stir in the parsley. Divide the mixture into 4 disks about 1 1/2 inches across. Cover tightly with plastic wrap and refrigerate for at least 20 minutes.
  • In a large bowl, season the beef with salt and pepper and mix well. Form into 4 equally sized patties about 3/4 inch thick.
  • Form a deep cavity in the center of each beef patty. Place a cheese disk in each cavity and pull the meat together to completely cover the cheese.
  • In a large skillet, heat the oil and butter over medium-high heat. Add the burgers and cook, about 4 minutes on each side for medium. Serve on the buns with the lettuce, onion and condiments.
