Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- In a large bowl, mix the peppers, sugar, butter, vanilla, and eggs. Beat until smooth. In a separate bowl, sift together the flour, baking soda, and salt. Stir into the pepper mixture just until combined. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
- Bake 10 minutes in the preheated oven, or until golden brown. Cool on wire racks.

HABANERO AND ORANGE CHOCOLATE CHIP COOKIES
They may look innocent, but these little cookies are packed full of flavor from the first bite. First you are hit with a burst of orange, followed by the sweet, delicious chocolate. Then comes just a little bit of heat. Awesome! The perfect cookie to have with a nice tall glass of milk!

Steps:
- Using the electric mixer, blend together the butter and the oil. Add the sugars, egg, and vanilla and beat well. Add the orange rind and habanero, stir.
- Add the flour, cocoa powder, baking soda, and salt. Stir until combined. Mix in the chocolate chips.
- Drop cookies on to prepared cookie sheet and bake in a 375 degree oven for 9-11 minutes. Cool on a rack. Enjoy!

WHITE CHOCOLATE CHIP HABANERO COOKIES
Habaneros lend themselves beautifully to a vast assortment of things sweet, and they're fantastic in these white chocolate chip cookies. I suppose you can make these with regular milk chocolate, semi-sweet or dark chocolate chips, but I opted for the smoother, more mild taste of white chocolate. With these chips, you get the full range of flavors without having anything be overpoweringly sweet. Made the right way, these cookies work perfectly if you're hankerin' a sweet and spicy treat. Take one bite and you'll get the delicious taste of the dough and the white chocolate just melting in your mouth. The fruity flavor of the habanero peppers kick in at ten seconds in, and isn't until 15 to 20 seconds after first taking a bite does the heat fully develop. It's a cool "two stage" snack that goes great with a glass of milk or eggnog.

- Preheat oven to 375°. Mix granulated sugar, brown sugar, margarine and egg. Stir in flour, baking soda and salt; once done, the dough will be stiff and somewhat granulated in consistency. Stir in chocolate chips and habanero bits until well blended. Then Drop dough by rounded teaspoons about two inches apart onto ungreased cookie sheet. Bake for 8 to 10 minutes or until golden brown around edges. Cookie centers will be soft. Cool for 10 minutes, and then carefully remove from cookie sheet. Serve with cold milk and enjoy!
HABANERO COOKIES

- Note: Remove and discard the stems, seeds, and pulp from the peppers. Mince peppers, and place in a bowl with enough milk to cover. Place bowl in a microwave, and heat until milk is lukewarm. Let sit about 10 minutes. Discard milk, and rinse peppers thoroughly in warm water. Repeat as desired. 1. Preheat oven to 325 degrees F. 2. In a large bowl, mix peppers, sugar, butter, vanilla, and eggs. Beat until smooth. In a seperate bowl, sift together the flour, baking soda, and salt. Stir into the pepper mixture just until combined. Drop by rounded teaspoonfuls onto ungreased cookie sheets. 3. Bake 10 minutes in the preheated oven, or until golden brown. Cool on wire racks.
HABANERO CARAMEL COOKIES
Steps:
- Caramel In a sauce pan add 1 C sugar and enough water to wet to dampen the sugar. Heat pan until sugar and water melts and begins to turn golden amber. Turn off heat and add 1 C cream and chopped habaneros, while stirring continuously. Cream sugar, brown sugar and butter together until cream and sugar have dissolved. Beat eggs and add to butter and sugar mixture. Add salt. Slowly incorporate flour to the mixture. Add ¾ of the caramel to the dough. Fold caramel into dough, just until caramel can be seen through out the dough. Using hands seems to work best, however because of the heat of the habanero pepper, I recommend wearing gloves. Use a teaspoon to place dough on the cookie sheet. Use thumb to put a small divot in each cookie. To each cookie add a dab of caramel in the divot. Bake 10-12 minutes. Remove cookies to a cooling rack.
