- Muddle the simple syrup, mint, lime, thyme and blackberries in the bottom of a cocktail shaker filled with ice. Measure in the rum. Shake well, about 20 seconds. Add club soda and shake the contents simultaneously into 2 mojito glasses. Garnish with lime and blackberries.

This is a very cool cocktail. I am taking the Paloma cocktail to next level. Paloma is a classic in Mexico made with tequila, very easy to drink and very easy to make.

- In a cocktail shaker, add the rhubarb and the strawberry, and muddle. Add the tequila, agave nectar, lime juice and some ice and shake. Strain into an ice-filled 12-ounce Collins glass that has been rimmed with salt. Top with the grapefruit soda and a pinch of salt.

- Juice 4 limes, yielding about 1/2 cup juice, and cut remaining lime into 6 wedges.
- Grasp mint sprig stems and slap leaves against a work surface to help release their oil; transfer to a sturdy glass pitcher. Stir in lime juice, rum, and strawberry syrup. Add club soda.
- Spread 1/4 to 1/2 inch sugar on a small, shallow plate. Run a lime wedge around the rim of each glass, then dip glass into sugar. Fill with ice. Pour in mojito mixture. Garnish with mint sprigs and strawberries.

I had this drink at a popular chain restaurant and decided to try it at home. I have served it at a couple different gatherings now and it has always been given rave reviews. It's the perfect drink for a hot summer day!

- Pour 1/4 to 1/2 inch of sugar onto a small, shallow plate. Run one of the lime quarters around the rim of each cocktail glass, then dip the glasses into the sugar to rim; set aside.
- Squeeze all of the lime quarters into a sturdy glass pitcher. Toss the juiced limes into the pitcher along with the mint, strawberries, and 1 cup of sugar. Crush the fruits together with a muddler to release the juices from the strawberries and the oil from the mint leaves. Stir in the rum and club soda until the sugar has dissolved. Pour into the sugared glasses over ice cubes to serve.
