GERMAN PICKLED CUCUMBER SALAD RECIPE OR GURKEN SALAT
This German pickled cucumber salad, or gurken salat, is a fresh, tart dish perfect for picnics or a summer meal on a hot day. No cooking required!

- In a medium mixing bowl, mix sugar, vinegar, water, and salt. Stir until the sugar and salt are dissolved. Now you need to taste; if it's too tart, add more sugar, 1 tablespoon at a time till you reach the point where it's neither too sweet nor too sour, but a balance of the two. Same goes for the vinegar - if you want it more tart, add more vinegar. If it's too strong, add more water. Set aside.
- In a large serving bowl combine the cucumbers, onions, and dill. Pour the sugar-vinegar liquid over cucumbers and onions, letting them sit in the refrigerator for 4 or more hours. The longer it sits, the better it will taste! I would turn the salad once to make sure every bit of cucumbers gets coated. Serve at room temperature, or chilled.

GERMAN CUCUMBER-DILL SALAD (GURKENSALAT)
Steps:
- Gather the ingredients.
- Rinse and dry the cucumber. With unwaxed, seedless cucumbers, you can leave part or all of the skin on in strips, which looks attractive when you cut it and actually helps hold the slices together. Other varieties should be peeled and seeded first.
- Using a mandoline , a food processor with the thin slicer attachment, or the slicer opening on a cheese grater, thinly slice the cucumber(s). They should be almost see-through. Set aside.
- Make the dressing by placing the vinegar, sugar, salt, and pepper in a serving bowl and whisk until the sugar completely dissolves.
- Add the sliced cucumber, red onion rings, and chopped dill (if using) and then toss well. Marinate for 5 or more minutes, toss again, and serve.

GURKENSALAT (GERMAN CUCUMBER SALAD)
A traditional German favorite that I have loved since I was a child. This recipe is quick, easy, and delicious. Substitute cider vinegar for a different flavor. I prefer to leave the skins on the cucumbers for more texture and flavor, but they can also be peeled prior to slicing if desired. Flavor is best when marinated for several hours before serving.

- Spread cucumbers and onion on a platter; season with salt and let rest for 30 minutes. Squeeze excess moisture from cucumbers.
- Stir sour cream, sugar, vinegar, dill, and parsley together in a large bowl.
- Fold cucumber and onion slices into the sour cream mixture.
- Refrigerate 8 hours to over night; garnish with paprika to serve.

- Peel cucumber with a vegetable peeler, peel and slice with a vegetable slicer into thin slices. Finely chop the dill and add to the beautiful cucumbers. Anything with 3 tablespoons sugar, 2 teaspoons salt, 6 tablespoons of vinegar, a little pepper and a dash of olive oil and season with infuse. Before serving, taste again.
- This is just how she translated it to English for my grandmother.

Posted for World Tour 2006, this is a mildly tangy cucumber salad of the sort you can find at small cafes and private homes in Germany. I loved this one when I lived there. It's not fancy but it is definitely tasty.

- Peel cucumbers and cut into very thin slices.
- Mix together vinegar, sugar, salt, and pepper and pour over cucumbers.
- Marinate about 20 minutes to an hour but no more than that; drain off liquid, toss cucumbers with sour cream, then top with fresh parsley and serve.

Steps:
- For marinade: mix all ingredients, oil comes last; mix well.
- Then cut the cucumber to fine slices using a potato peeler.
- Sprinkle salt on them and let it rest for 20 minutes.
- Drain liquid released by the cucumber.
- Mix the cucumber slices with the onion and marinade and add the herbs.
- Variation: You can add black olives and cubes of sheep´s or goat´s cheese.
