GUMDROP BREAD
Colorful gumdrops make these fun miniature loaves just perfect for holiday gift-giving. "I usually bake this moist bread at Christmas, but it's also requested at Easter," notes Linda Samaan of Fort Wayne Indiana.

Steps:
- In a large bowl, combine biscuit mix and sugar. In another bowl, beat egg and milk; add to dry ingredients and stir well. Add nuts and gumdrops; stir just until mixed. Pour into three greased 5-3/4x3x2-in. loaf pans. , Bake at 350° for 35 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pans to wire racks to cool completely.

CHRISTMAS GUMDROP BREAD
Quick but luxurious and fun for giving. The baking mix makes it quick, while cherries, candy, fruit and nuts make it look festive when cut open. For a gift presentation, either cut the bread and arrange on a plate, or wrap in nice packaging, because the loaves are a bit brown and lumpy on the outside.

- Beat the eggs, then beat in baking mix, sugar and vanilla.
- Stir in the cherries, apricots, dates, gumdrops and almonds.
- Spoon into 4 greased miniature baking pans (about 5 inches by 3 inches).
- Bake at 300°F for 1 hour 20 minutes.
- Cool in pans 5 minutes.
- Remove to wire racks and cool completely.
- Batter may be used for muffins.

GUMDROP BREAD
I like to make these in the soup cans for gifts. Either way, it's a great Holiday bread that is very pretty when sliced.

- 1. Heat oven to 350. Grease bottom only of loaf pan, 9x5x3 inches. (Substitute 6 well greased 10 1/2-ounce soup cans. [1 1/4 cup capacity]for the loaf pan, if desired.)
- 2. Beat all ingredients except gumdrops and nuts in large bowl on low speed 15 seconds. Beat on medium speed, scraping bowl constantly, 30 seconds. Stir in gumdrops and nuts. pour into pan.
- 3. Bake until wooden toothpick inserted in center comes out clean, 60 to 65 minutes. Loosen sides of loaf from pan; remove from pan. Cool completely on wire rack. For best results, store bread for at least 24 hours before slicing. To store, wrap and refrigerate no longer than 1 week. For soup cans divide batter among soup cans. Bake about 40 minutes. Remove from cans to cool.

- 1. Mix first four ingredients and bring to a boil. Add the next 3 ingredients. Bring to a boil again, and then cool. When cool add the final 7 ingredients, and mix well.
- 2. Fill greased muffin cups or loaf pans(fill muffin cups 2/3 full). Bake for 1 hour, then turn off the oven. Allow to sit in the oven for 15 minutes. Then cool another 15 minutes out of the oven, but still in the pan. Thus the indicated cook time of 1 1/2 hours. Store in waxed paper or tin foil. Freezes well.

- Preheat oven to 350 degrees. Spray two loaf pans. Whisk together the flour, salt, baking powder and lemon zest. Add the gumdrops and stir to separate all the pieces. In a mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, then slowly add the milk and lemon juice. Add the flour mixture and stir just until fully incorporated. Spread the mixture into the prepared pans and bake for about 50 minutes (check after 40) or until a toothpick comes out clean. Cool in the pans on a rack for about 10 minutes, then remove from pans and cool on the rack. Note: About 1/2 cup chopped walnuts and/or golden raisins can be added with the gumdrops. Note: Putting the gumdrop candy in the freezer for about 20 minutes will help with cutting.
