This is my favorite way to fry shrimp! The recipe comes from The Bubba Gump Shrimp Company Cookbook. The secret ingredient is the Spicy French dressing! Prep time includes chilling time.

2 lbs unpeeled medium-large size shrimp
4 large eggs, beaten
2/3 cup commercial spicy French dressing
1 1/2 teaspoons lemon juice
3/4 teaspoon onion powder
vegetable oil
1 1/3 cups crushed saltine crackers
2/3 cup crushed corn flakes cereal
1/3 cup white cornmeal

Steps:

  • Peel shrimp, leaving the tails intact; devein.
  • Place shrimp in a large shallow bowl.
  • Combine eggs, French dressing, lemon juice and onion powder.
  • Pour over shrimp, stirring gently to coat.
  • Cover and marinate in refrigerator for at least 3 hours, stirring occasionally.
  • Pour oil to depth of 2-inches into a dutch oven; heat to 375°F.
  • Combine cracker crumbs, crushed cornflakes, and cornmeal.
  • Remove shrimp from marinade, discarding marinate.
  • Dredge shrimp in cracker mixture and fry a few at a time until golden.
  • Drain shrimp on paper towels.

1 lb small shrimp (cooked)
3 cups salad macroni pasta
1 cup mayonnaise
1/2 cup ranch dressing (not from a bottle)
2 tablespoons lemon juice
1 teaspoon Worcestershire sauce
2 teaspoons prepared horseradish
3 tablespoons chili sauce
1/2 cup diced tomato, diced
3/4 cup green onion, diced
1/2 red bell pepper, diced
1 cup frozen peas
3 celery ribs, sliced thin
1/2 teaspoon cracked pepper
1 cup marinated artichoke hearts, diced (get them from Costco)

Steps:

  • Dice and slice veggies.
  • mix to combine.
  • Chill in icebox for two hours.
  • Serve on top of peices of iceberg lettuce.

8 tablespoons vegetable oil or 8 tablespoons canola oil
4 tablespoons all-purpose flour
3/4 cup chopped onion
3/4 cup chopped celery
3/4 cup chopped carrot
3/4 cup diced red bell pepper
2 1/2 teaspoons minced garlic
1/4 cup cayenne pepper
3/4 teaspoon dried thyme
3/8 teaspoon kosher salt, plus more to taste
3/8 teaspoon fresh ground black pepper, plus more to taste
3 cups chicken stock, plus extra if needed
1 (28 ounce) can diced tomatoes, drained well
5 springs fresh flat-leaf parsley
2 bay leaves, broken in half
12 ounces okra, cut into 1/4-inch rounds
6 ounces andouille sausages, cut into 1/4-inch dice
1 lb large raw shrimp, shelled and deveined
4 cups cooked white rice

Steps:

  • Make a roux-heat 4 tablespoons oil in a medium, heavy skillet set over medium heat.
  • When hot, add flour and stir constantly with a wooden spoon until the mixture thickens and turns a deep reddish brown, 6-8 minutes.
  • Remove from heat and set aside.
  • Add 2 tablespoons oil to a large heavy, deep sided pot set over med-high heat.
  • When hot, add in onion, celery, carrot, and red bell pepper.
  • Saute, stirring constantly, for 3 minutes.
  • Add in garlic and cook, stirring for 1 minute.
  • Stir in cayenne, thyme, salt, and pepper.
  • Add stock, tomatoes, parsley, and bay leaves; bring mixture to a simmer.
  • Decrease heat to low so that mixture stays at a simmer, then whisk in the roux.
  • Simmer gumbo until vegetables are tender and mixture has thickened, about 20 minutes.
  • Meanwhile, heat the remaining 2 tablespoons oil in a large heavy skillet over med-high heat.
  • When hot, add the okra and saute, stirring, until just lightly browned around the edges, 4-5 minutes.
  • Add okra and sausage to the gumbo after it has simmered 20 minutes.
  • Cook 1 minute to heat through.
  • When ready to serve, add shrimp to the gumbo and cook until the shrimp curl and turn pink, about 3 minutes (do not overcook the shrimp).
  • Taste gumbo and season with salt and pepper, if needed.
  • If gumbo is too thick, thin it with extra stock to desired consistency.
  • To serve, place about 2/3 cup rice in 6 shallow soup bowls and ladle gumbo over rice.

Shrimp Salad:
1 pound - Florida Shrimp, medium to large size
¼ cup - celery, diced
1 tablespoon - parsley, chopped
½ cup - Louis dressing
Louis Dressing:
1 cup - mayonnaise
¼ cup - chili sauce
2 tablespoons - red wine vinegar
2 tablespoons - green onions, chopped
To taste - salt
To taste - white pepper

Steps:

  • Peel, devein and clean the shrimp. Poach the shrimp in boiling water for 3-5 minutes, until they are fully cooked. Once there, remove the shrimp from the boiling water and let cool completely. Once cool, lightly toss the shrimp, celery and parsley with the dressing. To finish, place the mixture on your favorite hoagie roll with a slice of lettuce and Enjoy! To prepare the Louis Dressing, combine all the dressing ingredients together in a medium bowl and mix well. Next, adjust the seasoning to taste with the salt & pepper and set aside for later use.

4 cups sliced stuffed olives

1-6 oz can(s) shrimp (or 1 lb of fresh boiled and peeled shrimp)
1-8 oz pkg cream cheese, softened
1/2 c mayonnaise
1/4 c chili sauce
1 c minced green onions (use less if you prefer less onion taste)
1/2 c finely chopped celery
3 Tbsp fress squeeze lemon juice
2 Tbsp chopped fresh parsley
1/2 tsp salt
1/8 tsp ground red pepper

Steps:

  • 1. Finely chop shrimp and set aside.
  • 2. Chop fresh parsley and celery. Mince green onions.
  • 3. Combine cream cheese, mayonnaise, and chili sauce in a bowl.
  • 4. Add the green onions and the rest of the ingredients except for the shrimp.
  • 5. Stir well before adding shrimp.
  • 6. Chill several hours before serving.

1 1/2 pounds shrimp, jumbo, peeled and deveined, shells reserved
1 cup bottled clam broth, chicken broth, or water
8 tablespoons butter, unsalted (1 stick)
6 cloves garlic, minced
4 scallion, both white and green parts, trimmed and finely chopped
1 to 2 tablespoon hot sauce, such as Tabasco or other Louisiana-style hot sauce
1 tablespoon Worcestershire sauce
2 bay leaves
2 teaspoons cayenne pepper
2 teaspoons paprika, sweet
2 teaspoons thyme, dried
2 teaspoons oregano, dried
1 1/2 teaspoons salt
1 teaspoon black pepper, freshly ground
3/4 cup dark cane syrup (see note)

Steps:

  • 1. Combine the shrimp shells and clam broth in a medium-size saucepan and bring to a boil. Reduce the heat to low and simmer, uncovered, until slightly reduced and well flavored (the shrimp shells will turn orange), 10 to 15 minutes. Strain the broth into another medium-size saucepan you should have about 3/4 cup.2. To the shrimp broth add the butter, garlic, scallions, Tabasco, Worcestershire sauce, bay leaves, cayenne, paprika, thyme, oregano, salt, black pepper, and syrup. Bring to a boil over medium heat and cook, uncovered, until thick, syrupy, and richly flavored, about 10 minutes. Remove from the heat and let cool to room temperature.3. Meanwhile, rinse the shrimp under cold running water, then drain and blot dry with paper towels.4. Add the shrimp to the cooled marinade in the saucepan and toss to coat. Cover and let marinate, in the refrigerator, for 2 to 4 hours.5. Preheat the grill to high.6. When ready to cook, oil the grill grate. Remove the shrimp from the marinade, reserving the marinade. Arrange the shrimp on the hot grate and grill, turning with tongs, until nicely browned on the outside and firm and pink inside, about 2 minutes per side. Brush the shrimp with 2 to 3 tablespoons of the reserved marinade while cooking.7. Transfer the shrimp to a serving platter. Bring the remaining marinade to a boil in its saucepan over medium heat. Pour over the shrimp and serve immediately.Serves 6 to 8 as an appetizer, 4 as an entrée
