Butternut Squash Mac & Cheese image

Butternut Squash Mac and Cheese, a healthier version of macaroni and cheese is so creamy and delicious, no one will ever guess it's also good for you!

Olive oil spray
Kosher salt
1 pound cubed butternut squash
10 ounces whole wheat elbow pasta
1 ½ cups low sodium vegetable broth (divided)
½ teaspoon onion powder
½ teaspoon garlic powder
Freshly ground black pepper (to taste)
¼ cup panko breadcrumbs
2 tablespoons freshly grated Parmesan cheese
1 tablespoon unsalted butter
1 medium shallot (minced)
¼ cup all-purpose flour
2 cups skim milk
½ cup shredded gruyere cheese
½ cup shredded cheddar cheese
Chopped chives (optional, for garnish)
Sriracha sauce (optional, for topping)

Steps:

  • Preheat oven to 375 degrees F. Spray a 9" x 11" glass baking dish with oil and set aside.
  • Bring a large pot of salted water to boil. Add squash and boil until tender, 5-6 minutes.
  • When fork tender, transfer squash with a slotted spoon to a blender.
  • Add pasta to boiling water and cook according to package directions. When cooked, drain and put back into the pot.
  • Meanwhile, add ½ cup vegetable broth, onion powder, garlic powder, ½ teaspoon salt and pepper to the blender with the squash. Blend until smooth and creamy.
  • In a small bowl, combine breadcrumbs, Parmesan, ¼ teaspoon salt and pepper. Set aside.
  • Melt the butter in a medium sauce pot over medium heat. Add the shallots and sauté 2 minutes. Sprinkle the flour evenly over the shallots and cook another minute.
  • Add the remaining 1 cup broth and milk and whisk to combine. Bring sauce to a boil, then reduce heat to medium-low and cook 5 minutes, whisking frequently.
  • Remove pot from heat and whisk in cheese, pureed squash, 1 teaspoon salt and pepper.
  • Add sauce to noodles, gently mix to combine, then transfer mixture to prepared baking dish.
  • Sprinkle with breadcrumb mixture and bake 25 minutes. Switch oven to high broil and broil for 2-3 minutes, or until crumbs are starting to brown.

1 batch Whole Food Plant-Based Cheese Sauce (linked above)
1 16oz pkg gluten-free pasta
1 dash Himalayan Salt
1/2 tsp Smoked Paprika

Steps:

  • Make a batch of the Whole Food Plant-Based Cheese Sauce according to recipe directions.
  • Bring a pot of water to a boil. Season with a pinch of salt.
  • Once water comes to a rolling boil, add pasta and cook according to package instructions.
  • Once cooked (do not overcook- gluten-free pasta gets mushy), drain and set aside until serving.
  • Add cheese sauce to pasta and mix well.
  • Add a dash of Himalayan salt and smoked paprika. Taste and adjust seasonings. Serve

Steps:

  • In a blender, combine the milk, cottage cheese, onion, Parmesan cheese, salt and pepper;cover and process until smooth. 1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups milk, of choice
1 tablespoon cornstarch
2 cups shredded sharp cheddar cheese, divided
16 ounces gluten-free elbow macaroni

Steps:

  • Preheat oven to 375 degrees.
  • Grease 9 x 13 inch baking dish.
  • Cook macaroni as directed on package, BUT, reduce cooking time so it is still firm. Drain and set aside.
  • Melt butter in saucepan.
  • Stir in salt and pepper, remove from heat.
  • In a large bowl, whisk cornstarch and milk until smooth.
  • Whisk milk mix into butter mix and blend well.
  • Stir constantly over medium heat until thickened, (about 5 minutes), remove from heat.
  • Stir 1 cup of the cheese into sauce until melted: reserve 1 cup of cheese for topping.
  • Combine cheese mix with macaroni and spoon into prepared dish.
  • Top with remaining cheese.
  • Bake uncovered 25 - 30 minutes or until cheese is toasted.

1 1/2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups skim milk, warmed for 1 minute in the microwave

2 teaspoons Worcestershire sauce
1/4 teaspoon salt

¼ cup butter

¾ teaspoon mustard powder
4 cups milk
¼ cup cornstarch
4 cups shredded Cheddar cheese, divided
2 gluten-free bread slices, toasted and broken into crumbs
1 teaspoon butter, softened
½ teaspoon paprika

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
