GUAVA, GRAPEFRUIT, AND ROSEMARY AGUA FRESCA (AGUA FRESCA DE GUAYABA, TORONJA Y ROMERO)

Guava, Grapefruit, and Rosemary Agua Fresca (Agua fresca de guayaba, toronja y romero) image

I have always thought that aguas frescas were born out of resourcefulness. If you only have one melon to juice but there are ten people coming over for lunch, how do you make it yield more? By turning it into an agua fresca. It is a wonderful fresh tradition shared by the entire country. It is the perfect drink to have when a fruit juice would be too much and plain water too boring. It has three basic ingredients: water, fruit, and sugar. The method is basically the same for all aguas. We have listed a basic method with four different ratios and flavor profiles, so you get familiar with the process and then make it your own. You can play with different fruit, herb, and spice combinations and by adjusting the sweetness levels to your taste and the ratio of water to fruit. For example, we like ours a bit more watery and I barely add any sugar. Following this one, we included three recipes for aguas that stray from the norm a bit and are each interesting in its own way.

Number Of Ingredients 5

3 cups (710 ml/24 fl oz) water
Juice of 3 grapefruits
2 cups (430 g) guava puree (preferably from fresh guavas)
Leaves from 1 sprig fresh rosemary
½ cup (100 g) sugar, or to taste

Steps:

  • In a blender, combine all the ingredients, except the sugar, and blend well. Standard blender jars probably won't fit all the ingredients so blend in batches. Strain through a fine-mesh sieve into a pitcher. Add sugar (or your preferred sweetener) to taste, adjusting for your own preference and based on how sweet the fruit is to begin with. Add enough ice to your liking. As an option, you can garnish with a piece of an ingredient in the agua. For example, a sprig of rosemary, a stick of cinnamon, or slices of lemon. Pour into ice-filled glasses.

CUCUMBER AGUA FRESCA WITH MINT AND GINGER

Cucumber Agua Fresca With Mint and Ginger image

Light and refreshing with a slight bite from fresh ginger, this cooling cucumber drink is perfect on days when the warmth of the sun bakes everything in its path. A simple syrup of bruised mint and sugar adds sweetness. Agua fresca, a chilled nonalcoholic drink popular in Mexico and Central America, is most often made by blending fruit or soaked grains or by steeping plant blossoms in water. The mix is then strained, sweetened and served chilled. Enjoy this cucumber version as is, or add a splash of gin to turn it into a light aperitif or a delightful afternoon cocktail.

Time 15m

Yield 4 cups

Number Of Ingredients 8

1 1/2 packed cups fresh mint leaves, plus sprigs for garnish
1/2 cup granulated sugar
1/4 teaspoon kosher salt (Diamond Crystal)
1 cup hot water
2 English cucumbers, ends trimmed, cut into 1-inch pieces
1 (3-inch) piece fresh ginger (about 2 ounces), scrubbed and chopped
1 lime, plus more as needed
Ice cubes, for serving

Steps:

  • In a medium bowl, combine the mint leaves, sugar and salt, and crush them all together using a fork or the back of a wooden spoon just until the mint is bruised. Pour in the hot water, and stir until the sugar and salt dissolve. Allow the mixture to steep for 5 minutes while you prepare the cucumbers.
  • Combine the cucumbers and ginger in a blender. Zest the lime right over the blender, then halve it and squeeze in its juice. Pour in 1 cup room-temperature water and purée on high until smooth. Pour the purée through a fine-mesh strainer, pressing lightly on the solids with a spatula to extract the liquid. Discard the solids and pour the agua fresca into a medium pitcher.
  • Pour the mint syrup through the same strainer into a container, pressing on the leaves to extract the liquid. Add ¼ cup strained syrup to the agua fresca. Taste and add more syrup or more lime juice to taste. Cover any leftover syrup and refrigerate for another use.
  • Fill glasses with ice, pour in the agua fresca, garnish with mint and serve immediately.

FRUIT-AND-HERB SORBETS

Fruit-and-Herb Sorbets image

A cold treat this time of year might seem like a curveball, but there are certain fall flavors that are made for sorbet, like concord grapes, rosemary, and cranberries to name a few. Using 100 percent juice rather than cooking fruit is a welcome shortcut, and you don't have to wait for it to cool, so you can get it churning ASAP. Our fruit-plus-herb formula is ripe for riffing. Here, grape and rosemary announce autumn, guava and basil tease the tropics, and cranberry nods to the harvest.

Time 4h40m

Yield Makes 1 quart

Number Of Ingredients 9

2/3 cup sugar
2 peeled strips (each 2 inches long) lemon zest, plus 4 teaspoons fresh juice
1/4 teaspoon kosher salt (we use Diamond Crystal)
3 cups 100 percent Concord-grape juice, such as Welch's, chilled and divided
2 rosemary sprigs
3 cups 100-percent-juice cranberry-apple juice, such as Apple & Eve, chilled and divided
3 mint sprigs
3 cups guava juice made from 100 percent juice, chilled and divided
3 basil sprigs

Steps:

  • In a saucepan, combine sugar, lemon zest, salt, 1 cup fruit juice of choice, and herb of choice. Bring to a boil, stirring until sugar has dissolved. Remove from heat, cover, and let steep 5 minutes. Strain into a heatproof container, discarding zest and herbs, and stir in lemon juice and remaining 2 cups fruit juice.
  • Process in an ice cream maker according to manufacturer's instructions. When it has the texture of soft-serve, transfer sorbet to a chilled loaf pan or other freezer-safe container. Cover and freeze until firm, at least 4 hours and up to 1 week.
