GUADALAJARA BURGER WITH TEQUILA-SPIKED SALSA
The salsa that goes with this burger is a refreshing step away from your typical tomatoes and lettuce. The recipe makes more salsa than you need, so serve the extra on the side with tortilla chips. You can make the salsa ahead of time. Originally from my favorite cookbook Cooking Light 2004.

Steps:
- Burger: Prepare grill.
- Combine chili powder, salt, and beef. Divide into four portions, shaping each into a 1/2-inch thick patty.
- Grill five minutes on each side, or until done. Grill rolls, cut sides down for one minute or until toasted.
- Place one patty, along with 1/3 cup of salsa on each bun.
- Salsa: Combine all ingredients in a bowl, toss gently.

THE TEXAS SQUEALER BURGER
This is my version of a Texas classic. This burger is moist, flavorful and stays together well when grilling!

Steps:
- Begin by chopping the raw bacon finely with a sharp knife. I slice it in half, then in strips, then dice it. The key is to make it small. I do not recommend a food processor because it heats the bacon up too much and can become gummy.
- Gently mix all ingredients in a large bowl and add the bacon. Form into 6-8 patties and put in the freezer for 30 minutes before grilling. This is not a necessary step, but I think the meat holds together nicely when the patties go on cold.
- Grill patties approximately 5 minutes on each side. Allow them to rest 5 minutes before serving.
- Top with cheese if you wish and any of your favorite toppings.
AUDREY'S SALSA BURGERS
I love beef and these hamburgers are a nice change from the traditional burger. I serve these with a side salad topped with grated Mexican cheese and dressing and Spanish rice.

Steps:
- In medium mixing bowl, combine ground beef, salsa and bread crumbs.
- Mix well and shape into 12 hamburger patties.
- No bigger than 4 inches in diameter and 1/4 inch thick.
- On 6 patties, sprinkle cheese on top of each patty.
- Place the remaining patties on top of the cheese covered patties to form a hamburger.
- Seal ends together by pressing the ends shut.
- Place on grill.
- Grill each side for 11 to 15 minutes or until your liking.
- Place cooked hamburger on bun topped with tomato, avocado, salsa and 1 Tablespoon sour cream.
- When doubling recipe, I found I needed to add more bread crumbs so the meat was the right consistency for a hamburger.
