1 (1 ounce) package McCormick® Guacamole Seasoning Mix
2 ripe avocados - peeled, pitted, and mashed
1 (8.75 ounce) can whole kernel corn, drained
1 cup canned black beans, rinsed and drained
1 cup chopped tomato

Steps:

  • Stir Seasoning Mix and mashed avocados in medium bowl until well blended. Stir in corn, beans and tomato. Cover surface with plastic wrap.
  • Refrigerate 30 minutes to allow flavors to blend. Stir before serving. Serve as a dip with tortilla chips.

3 medium ripe avocado, peeled and cubed
2 to 3 tablespoons fresh lime juice
1/2 to 1 teaspoon kosher salt
1/2 cup black beans, rinsed and drained
1/2 cup uncooked fresh whole kernel corn
1/4 teaspoon coarsely ground pepper

Steps:

  • In a bowl, mash avocados until almost smooth. Stir in lime juice and ½ teaspoon salt. Let stand 10 minutes to allow flavors to blend. Adjust seasoning with additional lime juice and salt if desired. Top with black beans and corn.

1 can (15 1/2 ounces) black beans, drained and rinsed
1 1/2 teaspoons coarse salt
1/2 large white onion, finely chopped
1 teaspoon minced jalapeno chile (seeds removed, if desired)
1 1/2 teaspoons minced chipotle in adobo
1 small clove garlic, minced
2 tablespoons plus 1 teaspoon fresh lime juice (from 1 to 2 limes)
2 ripe avocados, pitted and peeled
1/4 cup chopped cilantro
Blue corn tortilla chips, for serving

Steps:

  • Combine beans, salt, onion, jalapeno, chipotle, garlic, and lime juice in a bowl. Mash avocados; stir into bean mixture with cilantro. Serve immediately, with chips.

½ red bell pepper, minced
½ red onion, minced
2 cloves garlic, minced

2 tsp rapeseed oil
1 red chilli, deseeded and thinly sliced
1 large garlic clove, sliced
2 large eggs
400g can black beans
½ x 400g can cherry tomatoes
¼ tsp cumin seeds
1 small avocado, halved and sliced
handful fresh, chopped coriander
1 lime, cut into wedges

Steps:

  • Heat the oil in a large non-stick frying pan. Add the chilli and garlic and cook until softened and starting to colour. Break in the eggs on either side of the pan. Once they start to set, spoon the beans (with their juice) and the tomatoes around the pan and sprinkle over the cumin seeds. You're aiming to warm the beans and tomatoes rather than cook them.
  • Remove the pan from the heat and scatter over the avocado and coriander. Squeeze over half of the lime wedges. Serve with the remaining wedges on the side for squeezing over.

This was the winner in the May 2012 Better Homes and Gardens Ultimate Guacamole contest. Guacamole revved up with the addition of pineapple and black beans. Created by Beth McDonald - Churchville, NY. Her recipe description: "I love guacamole and I wanted to try something different. I kept adding new ingredients and adjusting amounts--the pineapple adds a little sweetness--and it seems that with each bite I taste a different flavor." I'm looking forward to trying this one. Yum! 2 medium avocados, halved, seeded and peeled
1/4 cup bottled green chili salsa (salsa verde)
1 tablespoon sour cream
1/2 cup finely chopped fresh pineapple or 1/2 cup canned crushed pineapple, drained
1/2 cup canned black beans, rinsed and drained
1 fresh jalapeno pepper, seeded and minced
2 tablespoons finely chopped red onions
2 tablespoons chopped fresh cilantro
1 tablespoon minced garlic
1 tablespoon lime juice
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 cup shredded monterey jack cheese

Steps:

  • In a large bowl mash avocados. Stir in salsa and sour cream until combined. Stir in pineapple, beans, jalapeno, onion cilantro, garlic, lime juice, salt and cumin. Cover and chill for 2 hours or until ready to serve. Sprinkle with Monterey Jack cheese. If desired, sprinkle guacamole with fresh cilantro and serve with tortilla chips.
