- Heat the oil in a large non-stick frying pan. Add the chilli and garlic and cook until softened and starting to colour. Break in the eggs on either side of the pan. Once they start to set, spoon the beans (with their juice) and the tomatoes around the pan and sprinkle over the cumin seeds. You're aiming to warm the beans and tomatoes rather than cook them.
- Remove the pan from the heat and scatter over the avocado and coriander. Squeeze over half of the lime wedges. Serve with the remaining wedges on the side for squeezing over.

This was the winner in the May 2012 Better Homes and Gardens Ultimate Guacamole contest. Guacamole revved up with the addition of pineapple and black beans. Created by Beth McDonald - Churchville, NY. Her recipe description: "I love guacamole and I wanted to try something different. I kept adding new ingredients and adjusting amounts--the pineapple adds a little sweetness--and it seems that with each bite I taste a different flavor." I'm looking forward to trying this one. Yum! - In a large bowl mash avocados. Stir in salsa and sour cream until combined. Stir in pineapple, beans, jalapeno, onion cilantro, garlic, lime juice, salt and cumin. Cover and chill for 2 hours or until ready to serve. Sprinkle with Monterey Jack cheese. If desired, sprinkle guacamole with fresh cilantro and serve with tortilla chips.
