GRUYERE SCALLOPED POTATOES



Gruyere Scalloped Potatoes image

A delicious scalloped potatoes recipe. Use a shallow casserole dish. If you need a faster cooking time, parboil the potatoes for a few minutes.

3 tablespoons butter
2 lbs russet potatoes, peeled, sliced 1/8-inch thick (about 4 medium-sized potatoes)
1 large yellow onions or 1 large white onion, thinly sliced
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh chives (optional)
2 thick slices bacon, cooked and chopped
2 1/2 cups gruyere cheese, grated
1/2 cup parmesan cheese, grated
3 cups half-and-half
salt, to taste
fresh ground pepper, to taste

Steps:

  • Preheat oven to 350°F; butter a large casserole dish with 1 1/2 Tbsp of butter. If you use a casserole dish that is about 9x13, you'll have more surface area, more of the potatoes will brown, and the cooking time will be faster.
  • Layer the bottom of the casserole dish with 1/3 of the potato slices.
  • Sprinkle with salt and pepper.
  • Layer on 1/2 of the sliced onions and 1/2 cup of the Gruyere cheese.
  • Layer on 1/2 of the bacon, 1/2 of the parsley and chives.
  • Sprinkle with a little Parmesan.
  • Repeat by layering on 1/3 of the potato slices, sprinkle again with salt and pepper.
  • Layer on the remaining sliced onions, 1/2 cup of the Gruyere cheese, the remaining bacon, parsley and chives.
  • Sprinkle with a little Parmesan.
  • Top the casserole with the remaining potato slices. Add the half and half. Dot the potatoes with the remaining 1 1/2 Tbsp of butter.
  • Cover the casserole with aluminum foil and bake in the oven for one hour. After an hour, remove from the oven, remove the foil, sprinkle on the remaining cheese.
  • Return to the oven for an additional 30-40 minutes.
  • When done, the potatoes should be tender, but not mushy, and the liquid should be mostly absorbed.
  • Note: For a faster cooking time, you can parboil the sliced potatoes for 8 minutes first, patting them dry, before layering them in the casserole pan. In this case the total oven cooking time is about 35-45 minutes.

Stuffed Twice-Baked Potatoes with Ham, Mushrooms, and Gruyere Cheese image

6 large baking potatoes, scrubbed clean
Rock salt
2 tablespoons olive oil
1 tablespoon unsalted butter
1/2 pound cooked ham, cut into julienne strips about 1 by 1/4-inch
1/4 pound button mushrooms, cut into julienne strips about 1 by 1/4-inch
Granulated salt or sea salt
Freshly ground black pepper
1/4 cup creme fraiche or sour cream
2 tablespoons unsalted butter, at room temperature
8 ounces shredded Gruyere, Swiss, or cheddar

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the potatoes on a cutting board. With the tip of a small, sharp knife, score a lid shape on the top of each potato about a third of the way down, cutting in about 1/8 inch all the way around.
  • Spread a 1/4-inch-thick bed of rock salt on a baking tray. Place the potatoes on the bed of rock salt. Bake the potatoes until tender enough to be pierced easily with a wooden skewer, about 45 minutes. Remove the baking sheet from the oven and leave them for a few minutes to cool slightly. Leave the oven on.
  • Heat a saute pan over high heat. Add the olive oil and, as soon as it swirls easily, add the butter. When the butter foams, add the ham and mushrooms and saute until they are hot, 2 to 3 minutes. Transfer the ham and mushrooms to a small mixing bowl.
  • Using a small, sharp knife, and protecting your hand from the heat with a folded kitchen towel, carefully cut off the lids from the still-hot baked potatoes, following the scoring marks. With a sharp-edged tablespoon, scoop the flesh from the potatoes, including the lids, leaving a wall about 1/4-inch thick, and transferring the scooped-out flesh to a large mixing bowl. Return the potato shells and lids to the bed of rock salt. Put the tray back in the hot oven, leaving the oven door open, to keep the potato shells and lids warm.
  • With a potato masher, mash the potatoes. Season the mixture, to taste, with salt and generously with pepper. Add the creme fraiche or sour cream and the butter and mash to combine them with the potatoes. Stir in the ham, mushrooms, and 2 ounces of the cheese.
  • Remove the baking sheet from the oven and turn the temperature up to 500 degrees F.
  • Carefully spoon the mashed potato mixture back into each potato shell. Sprinkle the remaining cheese on top of the filling on each potato. Leave the lids unfilled, placing them around the side of the tray.
  • Return the tray to the oven and continue baking the potatoes until they are heated through and the cheese has melted, 7 to 10 minutes. If the cheese has not browned, turn on the broiler and broil the potatoes briefly, keeping a close eye on them to prevent burning.
  • Using tongs, transfer the potatoes to a heated serving platter or individual plates. Place the lids on top of the potatoes at an angle, inserting 1 end partway into the filling to secure them.

  • In a large skillet, heat 1/4 cup butter over medium-high heat. Add onions, 1/4 teaspoon salt and 1/8 teaspoon pepper; cook and stir 8-10 minutes or until softened. Reduce heat to medium-low; cook 40-50 minutes or until deep golden brown, stirring occasionally and stirring in thyme during last 5 minutes., Place potatoes in a 6-qt stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 20-25 minutes or until tender. Drain; return to pan. Add milk and remaining butter, salt and pepper. Steps:

  • Rub potatoes with a drizzle of oil and pierce skins with the tines of a fork. Microwave on high 12 minutes or until tender.
  • While the potatoes cook in the microwave, heat a small skillet over medium heat. Add 1 tablespoon of extra-virgin olive oil and saute chopped shallots 2 to 3 minutes or until bits are just tender. Set aside.

Cottage cheese may seem like an unusual choice, but it adds a tangy flavor similar to that of sour cream. The potatoes can be prepared through step 4 up to a day ahead; refrigerate, covered, until ready to proceed.

12 small Yukon gold potatoes (about 3 pounds)
6 large egg yolks
4 tablespoons unsalted butter, room temperature
1/2 cup heavy cream
1 1/2 cups grated Gruyere cheese
1 tablespoon plus 2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Preheat the oven to 425 degrees. Wrap potatoes in aluminum foil, and bake until tender when pierced with the tip of a knife, about 1 hour. Let cool.
  • When potatoes are cool enough to handle, cut each in half. Scoop out flesh, reserving skins, and pass through a ricer, or mash by hand. Stir in egg yolks, butter, cream, 1 cup Gruyere cheese, salt, and pepper. Scoop filling onto reserved skins. Cover with foil, and refrigerate until shortly before serving.
  • Preheat the oven to 400 degrees. Place filled potatoes on a baking sheet, and sprinkle with remaining Gruyere. Bake until filling is set and tops are golden brown, about 25 minutes. Serve immediately.

2 1/2 lbs potatoes, thinly sliced
4 tablespoons butter
pepper
1 cup grated gruyere cheese
1/4 cup parmesan cheese
1 small yellow onion, thinly sliced
1 1/4 cups beef broth

Steps:

  • Preheat oven to 425 degrees. Butter inside of 2-quart casserole dish with 2 T. butter.
  • Start bringing broth to a boil after all of your ingredients are ready to go.
  • Pat dry half of potatoes. Overlap slices on bottom of baking dish. Sprinkle with some pepper, half of onion slices, and half of both cheeses. Dot with the rest of the butter.
  • Repeat layering for a second layer. Last layer isn't topped with butter, though.
  • Pour boiling broth over the potatoes.
  • Bake for 55-60 min or until done (potatoes are tender, top is brown and broth is absorbed).

4 russet potatoes, scrubbed and halved lengthwise (about 2 1/2 pounds)
vegetable oil
3/4 cup sour cream
1/2 cup whole milk
1/2 cup minced cooked ham
1 1/2 cups grated gruyere cheese, divided
2 teaspoons Dijon mustard
kosher salt
fresh ground black pepper

Steps:

  • Brush or spray the potato halves with vegetable oil. Grill over Direct Medium heat until tender when pierced with a fork, 30 to 35 minutes, turning three or four times during grilling time. Remove from the grill and allow to cool slightly.
  • When cool enough to handle, use a small sharp knife to cut around the cut side of the potato to within 1/4 inch of the skin. Using a teaspoon or melon baller, scoop out the interior of the potato, leaving a 1/4-inch-thick shell attached to the skin. Place the potato pulp in a large bowl. Set the potato shells aside while preparing the stuffing.
  • TO MAKE THE STUFFING:.
  • Using a potato masher or pastry blender, mash the potato pulp. Add the sour cream and milk and mix well. Stir in the ham and half of the cheese. Add the mustard and season with salt and pepper. Mix well. Adjust the seasoning with more mustard, if desired. Divide the stuffing evenly among the skins so the stuffing mounds slightly. Sprinkle the remaining cheese over the stuffing.
  • Grill the stuffed potatoes over Direct Medium heat until the cheese is melted and the potatoes are heated through, about 10 minutes. Serve immediately.

Over the Thanksgiving holiday I tried gruyere cheese for the first time and fell in love. I had some left over so this is what I came up with.

4 baking potatoes
1 Tbsp chives (i used dried)
1/2 c gruyere cheese shredded
1/4 c gruyere cheese shredded
4 thick slices of bacon cubed
4 scallions chopped
1/3 c sour cream
salt and pepper to taste
3 Tbsp butter (cubed)

Steps:

  • 1. Poke hole around potatoes with a fork. Bake in the oven at 375° for 45 minutes to an hour. When you slightly press the sides they give and are soft, that's how I tell when they are done (do this with an oven mitt on, not your bare hands, ouch!)
  • 2. While potatoes bake, brown the bacon until it's the crispiness you love. Drain the fat. In mixing bowl add all other ingredients except the 1/4 cup gruyere cheese.
  • 3. With your hand covered in an oven mitt, hold the potato horizontal and remove the top skin with a knife. Set the "tops" aside and using small spoon, scoop out as much potato as you can without tearing the skin.
  • 4. Add the scooped out potato to the mixing bowl with everything else and stir to combine (make sure the butter gets melted.) Carefully use the mix to fill the potatoes back up (careful not to tear the skin.) This will make them overflow with stuffing and that's a good thing.
  • 5. Top potatoes and the potato tops with the remaining gruyere cheese. Put back in the oven and bake 30 - 45 minutes, until the cheese is lightly brown on top.

4 baking potatoes
2 teaspoons butter
2 teaspoons smashed garlic, about 2 cloves
1/2 cup 2% low-fat milk
1/2 cup shredded gruyere cheese
1/2 cup chopped cooked ham
1 tablespoon chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 500°.
  • Pierce the potatoes with fork and arrange in a circle in microwave oven.
  • Cover with damp paper towels.
  • Microwave potatoes at high 12 minutes or until done.
  • Rearrange after 6 minutes.
  • Let stand 2 minutes.
  • Split open, lengthwise in half, scoop out pulp, leaving a 1/4 inch shell.
  • Reserve shells, set aside pulp.
  • Heat butter in a small fry pan over medium high heat.
  • Add garlic; sauté 30 seconds.
  • Add milk; bring to a simmer.
  • Pour milk mixture over potato pulp.
  • Add 1/4 cup cheese, ham and remaining ingredients; mix well.
  • Stuff shells with potato mixture.
  • Sprinkle evenly with 1/4 cup cheese.
  • Bake at 500° for 8 minutes or until the cheese begins to brown.
  • Recipe can easily be doubled.

Inspired by a variety of recipes. Like most frittatas, this is refrigerator velcro, and I had a bunch of stuff I wanted to use up. Make sure your potatoes aren't too big; you want the volume of onion-and-potato to be about the same as the volume of egg.

1 tablespoon olive oil
1 cup diced pancetta
1 onion, diced
2 small red potatoes, in 1/2-inch dice
1 garlic clove, minced
4 large eggs
2 tablespoons half-and-half
3/4 cup grated gruyere cheese
1/4 teaspoon dried thyme
salt
ground black pepper
1/2 cup grated parmesan cheese
sour cream, for garnish
minced chives, for garnish

Steps:

  • Heat oil in 12" non-stick skillet until shimmering. Add pancetta and cook over medium heat until browned on edges, 6-8 minutes. Remove to a bowl with a slotted spoon and set aside.
  • Add onion and potato to fat in skillet and cook until tender, 8-10 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Beat eggs and half-and-half. Stir in Gruyere, thyme, salt and pepper.
  • Return pancetta to skillet, along with eggs. Stir well. Occasionally pull eggs away from edge of pan and tilt to allow any liquid egg to run under.
  • When eggs are about half-set, sprinkle with Parmesan and place into a preheated 400F oven. Eggs are done when puffed and golden, about 10 minutes. Garnish with sour cream and chives.

Nonstick vegetable oil spray
1 2-pound butternut squash, halved, seeded
1 pound russet potatoes, peeled, cut into 1-inch pieces
3 garlic cloves, peeled
4 tablespoons finely grated Gruyère cheese (about 1 ounce)

Steps:

  • Preheat oven to 350°F. Spray baking sheet with nonstick spray. Place squash halves, cut side down, on prepared sheet. Bake until squash is very tender when pierced with fork, about 1 hour. Scoop out squash pulp; transfer to bowl and mash until almost smooth.
  • Meanwhile, cook potatoes and garlic in large saucepan of boiling salted water until potatoes are very tender, about 20 minutes. Drain. Return potato mixture to saucepan and mash until almost smooth. Add squash and mash to blend well. Stir in 3 tablespoons cheese. Season to taste with salt and pepper. 2 eggs
1 2/3 cup half and half
1 Tbsp. butter or margaring

Steps:

  • Cut potatoes into enough thin slices to measure about 4 cups; rub oblong baking dish (10x6x1 1/2 ins. with cut garlic clove; brush with 1 tsp. margarine. Arrange potatoes in 3 layers in casserole, sprinkling each layer with 1/3 of the salt, nutmeg, pepper and cheese. Beat eggs and half and half ;pour over potato slices. Dot with 1 Tbsp. margarine. Cook uncovered in 350 oven until potatoes are tender and top is golden brown, about 1 hr.
