2 pounds potatoes, peeled and cubed
1/2 cup sour cream
1/3 cup 2% milk, warmed
1 garlic clove, minced
1/4 cup butter, cubed
1/4 cup shredded Gruyere or Swiss cheese
1/4 cup minced fresh chives
2 green onions, chopped
1/2 teaspoon garlic salt
1/4 teaspoon pepper

Steps:

  • Place potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 10-15 minutes., Drain; return to pot. Mash potatoes, gradually adding sour cream, milk and garlic. Stir in remaining ingredients.

2 pounds mashed potatoes, baked and scooped out
3/4 cup half & half
2 tablespoons butter
1-1/2 cups Gruyere cheese, grated
3 tablespoons fresh parsley, chopped
2 teaspoons salt
1 teaspoon pepper
1/8 teaspoon nutmeg

Steps:

  • In a mixing bowl, mix together potatoes, half and half, butter, Gruyere, parsley and seasoning until smooth. Place into a lightly oiled souffle dish or 4 6-ounce ramekins for individual servings. Bake at 350 degrees F until hot and lightly browned, about 20-25 minutes.

Nonstick vegetable oil spray
1 2-pound butternut squash, halved, seeded
1 pound russet potatoes, peeled, cut into 1-inch pieces
3 garlic cloves, peeled
4 tablespoons finely grated Gruyère cheese (about 1 ounce)

Steps:

  • Preheat oven to 350°F. Spray baking sheet with nonstick spray. Place squash halves, cut side down, on prepared sheet. Bake until squash is very tender when pierced with fork, about 1 hour. Scoop out squash pulp; transfer to bowl and mash until almost smooth.
  • Meanwhile, cook potatoes and garlic in large saucepan of boiling salted water until potatoes are very tender, about 20 minutes. Drain. Return potato mixture to saucepan and mash until almost smooth. Add squash and mash to blend well. Stir in 3 tablespoons cheese. Season to taste with salt and pepper. Transfer mashed vegetable mixture to 9-inch-diameter glass pie dish. Sprinkle with remaining 1 tablespoon cheese. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Preheat oven to 450#&176;F. Bake vegetable mixture until heated through, about 15 minutes if at room temperature or 25 minutes if chilled. Serve hot.

3 medium turnips, peeled and cut into 1/2-inch cubes
6 garlic cloves, halved
1/3 cup whole milk
2 tablespoons butter
1 cup shredded Gruyere cheese
2 green onions, chopped
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place the potatoes, turnips and garlic in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender., Meanwhile, in a small saucepan, heat milk and butter until butter is melted. Drain potato mixture; mash with milk mixture. Stir in the cheese, onions, salt and pepper.
