"GROWN UP" GRILLED CHEESE SANDWICH

Steps:
- Cut loaf of bread in half lengthwise. Top the bottom bread slice with the Teleme cheese, then the smoked ham, distributing it evenly. Place top of bread on sandwich and brush with butter.
- Heat a sandwich grill until hot. Set sandwich, butter side down in grill. Butter top side of bread. Place a heavy pan on top of entire sandwich to evenly distribute weight and cook until nicely browned and the cheese is melted, turning once, 3 to 4 minutes on each side.
- Transfer the sandwich to a work surface and remove the top slice of bread. Spread the underside of the bread with mustard, and add roasted peppers, if desired.
- Replace the top slice of bread, cut the sandwiches into slices, and serve immediately.
PUMPED-UP GRILLED CHEESE
I'm the only one in my house that will eat Velveeta! Came up with this when I wanted something a little better than just a grilled cheese sandwich. I'm pretty sure kids would like it, and maybe even some other adults!

- Lightly butter one slice of bread and place on plate, butter side down.
- Place thin slices of Velveeta, to cover, or thickness you like, on upturned bread.
- Place 3 slices cooked bacon on top of Velveeta.
- Place 1 thick slice of tomato on top of bacon.
- Lightly butter one slice of bread and place on top of filling, butter side up.
- Heat frying pan on medium heat. When hot, slide sandwich into pan. Cook until lightly browned. Flip sandwich and cook other side until lightly browned.
- Cool a bit before eating, especially if made for a small child. Enjoy!

GRILLED CHEESE, DINER STYLE
The mayonnaise in place of the butter makes the bread toast evenly and gives a similar yet different crispiness. This is how they made it on the grill at a diner I used to frequent, the kind where the grill is behind the counter and you can watch. CAUTION: using low fat or no fat mayo or even miracle whip will change the outcome of the final product, the first 2 contain water and the second sugar that does not act in the same manor as an oil or fat sub.

Steps:
- Heat a small skillet to medium.
- Using a butter knife, spread half of mayonnaise onto one slice of the bread, place mayo side down in the skillet.
- Top with cheese.
- Spread remaining mayonnaise onto second slice of bread and place mayonnaise side up on top of cheese.
- Cook 3 minutes, or until bread is toasty brown, turn and repeat.
- Note: Miracle Whip does not work for this, as the sugar in it tends to burn.

BRIE GRILLED CHEESE SANDWICH
Adapted from the Two Brothers Roundhouse restaurant in Aurora, IL which uses Brioche. Since Brioche is so hard to come by, I have substituted French Bread. The Quince Jam is the hardest to find, I found it at Williams Sonoma.

- Spread Brie onto one slice of French Bread.
- Spread Quince Jam onto other slice of French Bread.
- Combine French Bread Slices by placing the Brie and Jam sides together.
- Butter exposed bread slices.
- Heat up skillet at medium-low with enough EVOO to coat the bottom.
- Grill each side of the sandwich until medium brown, not burnt and cheese is melted inside.

FRESH DATES WITH BRIE
Not quite sure this is a recipe.....but it sure is a wonderful way to enjoy your dates and Brie Cheese! We can get the most wonderful fresh dates from nearby markets and I usually add them to my cheeseboard. you can really use most soft cheeses with your dates....Brie is just my fave. You can prepare some as a snack and as optional extras...drizzle them with honey and add in some crushed walnuts or pecans with the cheese

Steps:
- Remove seeds from the dates.
- Cut through the dates on one side and open them up. Remove the seeds.(Dont cut all of the way through).
- Cut Brie into small wedges and fill the dates. CLose the dates back over.
- Enjoy!

- Place bread on work surface and spread the outsides of both slices with either butter or mayonnaise, making sure to cover the surfaces. Spread the interiors with either butter, mustard, or fruit preserves. Top one slice of bread with 2 slices of cheese and a combination of your favorite fillings. Sandwich together with second slice of bread.
- Preheat a well-seasoned cast-iron skillet over medium heat. Add the assembled sandwich. Once the cheese starts to melt and the bread on the bottom is golden brown, flip the sandwich; avoid pressing with the spatula to flatten. Grill until cheese has fully melted and the other side is golden brown.
