Had some ground turkey I need to use. This is the result. Some may say this is more like a stew. Very good & warming on a cold day

Steps:
- Brown turkey in a large saucepan; drain.
- Add onion, carrots, celery.
- Sauté about 5 minutes Add tomato juice, beans, broth diced tomatoes and spices.
- Bring to a boil and then reduce heat.
- Simmer covered 45 minutes to 1 hour or until vegetables are tender.
- Add Worcestershire sauce and simmer another 5 minutes.
- Put in bowls.
- Sprinkle with cheese.
- Serves 6.

- Lightly coat a 4-quart Dutch oven or pot with cooking spray. Heat over medium heat. Cook ground turkey in hot Dutch oven about 5 minutes or until no longer pink, stirring occasionally. Drain off any fat. Stir in water, undrained tomatoes, V8 juice, barley, split peas, salt, oregano, basil, black pepper and bay leaf. Bring to a boil; reduce heat. Simmer, covered, for 30 minutes.
- Stir celery into soup mixture. Simmer, covered, for 30 minutes more or until celery and barley are tender. Remove and discard bay leaf. Makes.

VEGETABLE AND GROUND TURKEY SOUP
This has to be the easiest soup ever to make. It's like beef stew but subbing out the beef for ground turkey. I started making this when I cut back my beef intake. I don't add potatoes which makes for a very satisfying healthy low carb meal. I've found that extra lean ground turkey tends to be chewy and doesn't absorb the sauce and spice very well so I use regular ground turkey. You can use chicken, beef or veggie broth and any additional veggies that you like.

Steps:
- Heat olive oil in large pot and saute onions and celery until translucent, about 5-7 minutes.
- Add ground turkey and season with salt and pepper, add the minced garlic.
- Brown until no longer pink while stirring and breaking up large chunks of meat, drain well and return to pot.
- Add stewed tomatoes with juice along with remainder of ingredients.
- Bring to a boil, cover and simmer for an hour 1/2 or until veggies are soft.

- In a large skillet over medium heat, add olive oil and heat until sizzling. Cook ground turkey until browned about 5-6 minutes, stirring to break up meat. Add meat to a greased 4 quart slow cooker. Saute onion and garlic until softened, about 3 to 5 minutes. Add to the slow cooker. Add remaining ingredients. Cover and cook on high for 4 hours or on low for 8 hours. Serve with crackers
GROUND TURKEY VEGETABLE SOUP RECIPE
This easy ground turkey vegetable soup recipe is a wonderful hearty soup. It's a great weight loss soup and also freezes well.

- Brown the ground turkey and drain if necessary; set aside.
- In a large stock pot (I use this one) add 1 tablespoon of olive oil. Sauté the celery and the carrots for 3 to 4 minutes. Add the onion and continue to simmer another 3 to 4 minutes.
- Add the diced tomatoes, chicken broth and the tomato paste, stir until well blended. Add the corn, green beans, browned turkey, garlic, thyme, oregano and the potatoes, stir until well blended. Add the bay leaf. Bring to a boil then turn down heat and simmer for 30 to 35 minutes or until vegetables are tender. Remove bay leaf and serve.
