1 1/4 lbs ground turkey
1 yellow onion, chopped
3 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 cup chicken broth
1 tablespoon dried oregano
1 tablespoon dried basil
1 teaspoon dried thyme
1 teaspoon sea salt
1/2 teaspoon cracked black pepper
1 tablespoon butter

Steps:

  • In a 4 1/2 quart pot/pan brown the ground turkey over medium heat.
  • Add the onion and garlic and cook until softened.
  • Add tomato paste and crushed tomatoes, stirring until all is combined.
  • Add chicken broth to thin it down a little bit.
  • Add spices, butter, and salt and pepper and allow to simmer over low heat for about 15 minutes (just long enough to boil the water and cook the pasta!).
  • Taste and adjust seasonings to preference.

Ever since I found out ground beef was public enemy #1 for my digestive system, I had to reinvent recipes I've loved since I was a kid. I have Irritable Bowel Syndrome (for more info you can check out helpforibs.com). This means I have to experiment a lot, so I came up with this recipe. For the longest time, I always ate spaghetti with just prepared spaghetti sauce and some parmesan cheese. Then I found out how much more satisfying adding ground beef was. Now, I can't even do that, anymore. :'( (not without pain anyway). That's where ground turkey comes in. So, here, I have a simple, and a little healthier version. My bf and my roomie both enjoy it and they can still smother it in cheese if they so wish, lol! I think it tastes pretty good, and is simple to make. This is the perfect weekday dinner when everyone's busy, and goes great with garlic bread and salad. The sauce heats up well from the fridge, and should be fine from the freezer; just add freshly cooked noodles. For variety, other pasta suggestions I use include tri-color rotini, thin spaghetti, penne, medium shells, or angel hair.

1 1/4 lbs ground turkey, packages come in about 1 1/4 lbs (lean, extra lean, it's your choice)
26 ounces of prepared spaghetti sauce, your choice of brand and flavor (usually 1 can or 1 jar)
uncooked spaghetti, any variety, and as much as you think you'll need. I usually use about one 16oz package
parmesan cheese (optional)

Steps:

  • Brown ground turkey until no longer pink.
  • Note: I am editing this recipe to add that lately I've been sauteeing chopped onion, chopped green pepper, and minced garlic along with the ground turkey; usually it's fine to add all these in at the same time and I have never had a problem with the different veggies and the ground turkey getting overdone/underdone.
  • Drain any fat.
  • Add cooked ground turkey back to the pan, add the can of spaghetti sauce, set aside.
  • Boil water for the noodles. Add a bit of salt once boiling, add noodles, cook per package instructions.
  • While noodles cook, heat up the sauce/turkey mixture. (Edited to add that my two favorite and best sauces are Prego brand Mushroom Supreme and Prego brand Roasted Garlic and Herb. My fave and steadfast combo is either one of these sauces to which I add the browned ground turkey, chopped onions, green peppers, and minced garlic.).
  • Drain noodles. Make sure sauce is heated through.
  • Serve! Ground turkey isn't as cheap as ground hamburger, but it's better for you and I've found you can replace ground turkey in nearly every ground beef recipe.
  • Try browning the ground turkey with some chopped onions too - that's always a yummy addition. But that's just because bf and I love onions.
  • You can also try the spaghetti sauce/turkey mixture over cooked white rice. Ground beef and spaghetti sauce tastes great over white rice, why not ground turkey?.

aluminum foil
1 spaghetti squash, halved and seeded
2 tablespoons olive oil
1 teaspoon salt, divided, or more to taste
1 teaspoon freshly ground black pepper, divided, or more to taste
1 pound ground turkey
1 (16 ounce) can diced tomatoes
8 fresh asparagus, trimmed and cut into 1/2 inch pieces
½ yellow onion, diced
¼ cup chopped fresh basil, or to taste
4 garlic cloves, minced
1 teaspoon dried oregano
4 ounces chicken broth

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Coat inside of each spaghetti squash half with olive oil and season with salt and pepper. Place spaghetti squash, skin-side up, on the prepared baking sheet.
  • Roast spaghetti squash in the preheated oven until skin can easily be pierced with a fork, 30 to 45 minutes.
  • Meanwhile, cook ground turkey in a skillet over medium heat until browned. Combine tomatoes, asparagus, onion, basil, garlic, oregano, salt, and pepper in a bowl and mix well. Add to browned ground turkey in the skillet. Cook, stirring occasionally, about 5 minutes. Pour in chicken broth and cook until asparagus is slightly tender, about 5 more minutes.
  • Remove cooked spaghetti squash from oven and let cool until easily handled. Scrape squash into spaghetti strands using a fork and place into a bowl. Try to maintain the integrity of the squash skin and you can using as a serving vessel.
  • Place 1/2 the spaghetti squash into a serving dish or the squash skin and top with turkey-vegetable mixture.

16 ounces spaghetti noodles
1 1/4 lbs ground turkey breast
1 cup green pepper (chopped)
1 cup yellow onion (chopped)
1 (4 1/2 ounce) jar mushrooms
1 (14 1/2 ounce) diced tomatoes (no salt added)
1 (10 3/4 ounce) can cream of mushroom soup
2 cups low-fat cheddar cheese
1/2 cup water
1/4 cup parmesan cheese (grated)

Steps:

  • Cook Spaghetti noodles until done and set aside.
  • Preheat oven to 350 degrees and grease a 9x13 casserole dish.
  • Cook the turkey breast, green peppers and onions in a skillet on medium heat until turkey is no longer pink.
  • Add the drained jar of mushrooms and the can of diced tomatoes to skillet. Simmer for 15 minutes.
  • In a small bowl mix the can of cream of mushroom soup with the water.
  • In the casserole dish place half of the cooked noodles, then topped with half the meat mixture, then 1 cup cheese . Repeat. then finally the cream of mushroom soup mixture. Top with the grated Parmesan cheese.
  • Cook on 350 for 35 minutes.

2 ounces uncooked spaghetti, broken in half
1 large egg, lightly beaten
2 tablespoons grated Parmesan cheese
3 tablespoons sour cream
1/2 pound ground turkey
1/4 cup chopped green pepper
2 tablespoons chopped onion
1 teaspoon butter
1/3 cup tomato sauce
1/4 teaspoon garlic salt
1/4 teaspoon dried oregano
Salt and pepper to taste
1/3 cup shredded part-skim mozzarella cheese

Steps:

  • Cook spaghetti according to package directions; drain. In a small bowl, combine the egg, Parmesan cheese and spaghetti. Press spaghetti mixture onto the bottom and up sides of a greased shallow 2-cup baking dish or 7-in. pie plate. Spread with sour cream., Crumble turkey into a skillet; add the pepper, onion and butter. Cook over medium heat until meat is no longer pink; drain. Stir in the tomato sauce, garlic salt, oregano, salt and pepper. Spoon into spaghetti crust. Sprinkle with mozzarella cheese. Cover edges loosely with foil. , Bake at 350° for 15-20 minutes or until heated through and cheese is melted. Serve immediately.

Sommer's Spaghetti With Ground Turkey image

This has become my favorite way to prepare spaghetti, even more than the basic spagetti with ground turkey I posted here awhile back. This usually serves my bf and me for one night and me for two lunches, or another night for the two of us if I don't use leftovers for lunch. My favorite brand of sauce to use is Prego and my two fave flavors are Prego Chunky Garden Mushroom Supreme or Prego Roasted Garlic and Herbs. I buy the standard 26oz jar. I had to estimate the amount of spaghetti noodles, as I have no way of measuring this. This is very friendly to my moderate to severe IBS. Also, my bf can add his parmesan cheese to his own serving. Wonderful with salad and garlic bread. The ratios in this recipe make for a hearty sauce.

nonstick cooking spray
1 1/4 lbs ground turkey (lean or extra-lean)
1/8 teaspoon Worcestershire sauce (optional)
1 medium green pepper, chopped
1 small onion, chopped (white or yellow)
26 ounces prepared spaghetti sauce, your favorite flavor (I use a jar of Prego)
water, for boiling spaghetti noodles
16 ounces spaghetti noodles
1/2 teaspoon olive oil (optional)
1/4 teaspoon salt (optional)

Steps:

  • In a large pan, add ground turkey, worcestershire sauce (if using), chopped green pepper, and chopped onion. Cook on med-high heat, breaking up and crumbling turkey, until browned, but pepper and onion are still crisp. If using lean or extra-lean turkey, you may want to use non-stick spray before adding turkey. Drain, if using full-fat ground turkey.
  • Return meat mixture to pan, turn heat down to medium and add the entire 26 oz. jar of spaghetti sauce. Stir to combine. Heat to boiling, stirring occasionally, then reduce heat to low to keep warm while finishing cooking spaghetti noodles.
  • While ground turkey mixture is cooking, fill a large pot full of water. Add in a bit of olive oil, if using. Heat on high to boiling. If using salt, add a small amount of salt to boiling water.
  • Break spaghetti noodles in half, if desired. Add to boiling water, turn down to medium-high but make sure water continues to boil. Cook spaghetti to desired doneness or per package directions. Drain.
  • Serve hot spaghetti noodles with sauce.

1 green bell pepper, diced
2 celery ribs, diced
12 ounces frozen diced onions
2 teaspoons chopped garlic
8 ounces sliced fresh mushrooms
28 ounces crushed tomatoes
8 baby carrots, sliced
1 small zucchini, diced
2 (6 ounce) cans tomato paste
2 tablespoons sugar
2 tablespoons olive oil
2 (15 ounce) cans tomato sauce
1 tablespoon italian seasoning
1 teaspoon fennel seed
1 tablespoon rosemary
salt and pepper

Steps:

  • Saute vegetables in olive oil then transfer with a slotted spoon to slow cooker. Cook ground turkey in same skillet, transfer to slow cooker. Add remaining ingredients to slow cooker stiring well. cook on low for 6 hours or high for 3 hours. serve over hot cooked whole wheat spaghetti. Freezes very well!
