Ground Beef Stuffed Green Bell Peppers With Cheese image

We had these not too long ago and we both decided that they needed a little more seasoning. We put a little hot pepper sauce on them and they were much better. I would probably include 2 teaspoons in the meat mix the next time that I make them.

6 large green peppers
1 lb beef, Ground
1/2 cup onion, Chopped
1 (16 ounce) can tomatoes, diced
1/2 cup long grain rice, any available rice is fine it may affect cooking time though
1 cup water
1 teaspoon salt
1 teaspoon Worcestershire sauce
1 cup cheddar cheese, Shredded (about 4 ounces)

Steps:

  • Cut off the tops of green peppers; discard seeds and membranes.
  • Chop enough of the tops to make 1/4 cup, set aside.
  • Cook the whole green peppers, uncovered in boiling water for about 5 minutes; invert to drain well.
  • Sprinkle insides of the peppers lightly with salt.
  • In a skillet cook ground beef, onion and 1/4 cup chopped pepper till meat is browned and vegetables are tender.
  • Drain off excess fat. Add drained tomatoes, salt, Worcestershire, and a dash of pepper.
  • in a separate pot put water bring to boil add rice cook until rice is soft. if needed add more water.
  • add rice to beef mixture.
  • Stir in cheese. Stuff peppers with meat mixture. Place in a 10x6x2 baking dish.
  • Bake, covered in a 350 degree oven for 30 minutes. in the last 5 minutes add any remaining cheese to the top of the peppers.

3 large green bell peppers
5 cups water, Boiling, Salted
1 lb lean beef, Ground
1/4 cup onion, Chopped, 1 small
1/2 cup celery, Chopped
1 (8 ounce) can tomato sauce
1 teaspoon salt
1/4 teaspoon garlic salt
1 teaspoon Worcestershire sauce
1/2 cup instant rice, Uncooked
1/2 cup water

Steps:

  • Heat the oven to 350 degrees F.
  • Cut each bell pepper lengthwise in half.
  • Wash the insides and outsides of the peppers after removing the seeds and membranes.
  • Cook the peppers in the boiling salted water for 5 minutes then drain and set aside. Cook and stir the meat, onion and celery in a large skillet until the meat is brown.
  • Drain off the excess fat. Stir in half of the tomato sauce and the remaining ingredients, heat to boiling then reduce the heat and simmer, covered, for 5 minutes.
  • Place the peppers, cut sides up, in an ungreased baking pan 9 X 9 X 2 or 8 X 8 X 2-inches.
  • Spoon the meat filling into each of the pepper half evenly and then cover the pan with aluminum foil.
  • Bake for 25 minutes then uncover and top with the remaining tomato sauce and bake an additional 5 minutes.

1 pound Ground Beef 85/15
Salt And Pepper
1/4 cups Diced Onion
2- 1/4 ounces, weight Sliced Black Olives (Or Whole Olives Halved)
1 teaspoon Christopher Ranch Crushed Garlic (Or 2 Fresh Cloves, Minced)
8 ounces, fluid La Victoria Enchilada Sauce Medium (See Notes)
4 ounces, fluid Del Monte Tomato Sauce (See Notes)
1/2 teaspoons Mexican Oregano
1/4 teaspoons Black Pepper
1/4 teaspoons Red Pepper Flakes (optional)
1- 1/2 cup Sharp Cheddar Cheese, Shredded And Divided
2 Tablespoons Chopped Cilantro, For Garnish

Steps:

  • Preheat oven to 350ºF. Spray cooking spray in a baking pan big enough to hold all the halved peppers lying flat cut side up. Set aside.
  • Cut bell peppers in half lengthwise (down through the stem, or just beside the stem). Remove seeds and membranes. Put peppers in a microwaveable dish and splash with a tablespoon of water. Cover tightly and microwave on high for 3 minutes. Drain well, and lay the peppers out in the baking pan or casserole big enough for them to lay flat with their cut sides up.
  • Brown ground beef with onion in a large skillet. Give the meat a light sprinkle of salt and pepper while cooking. Cook until onions are translucent and water from meat has evaporated. Drain the grease.
  • While meat is cooking, drain olives and set aside 6 halves or slices to use as garnish.
  • Add garlic to cooked meat, and continue cooking for another minute. Add enchilada sauce, tomato sauce, drained olives, remaining spices, and 1 cup of the cheese to the hamburger. Stir until cheese is completely melted and mixture has thickened somewhat.
  • Divide enchilada stuffing evenly among pepper cups. Sprinkle remaining cheese over the top. If you reserved any of the olive halves/slices, put them on top of the cheese. This is just for presentation, so if you forgot to set some aside, don't worry about it.
  • Bake for 30 minutes, or until cheese on top begins to brown. Remove from oven, and sprinkle with chopped cilantro. Serve.
  • Leftovers may be frozen.
  • Notes:
  • • I stuffed both red and green bell peppers, and I like the red much better for this dish. They give it a sweetness the green does not impart. The green bell peppers have 1 less carb per serving. To improve macros, I recommend serving with some avocado slices on the side.
  • • Use any enchilada sauce that is gluten free, sugar free, and has no added tomato sauce.
  • • You'll be using only 1/2 of a small can of tomato sauce. Be sure you use one with no added sugar. You can freeze the other half in a freezer bag and save to use next time, or make 2 batches at one time and freeze the extras to be warmed and served later.

Steps:

  • Brown meat and onion in a large skillet on medium heat. Stir in 1 cup of the tomato sauce, 1 cup of the water and salad dressing mix.
  • Bring to boil.
  • Stir in rice, cover.
  • Remove from heat and let stand for 5 minutes.
  • Meanwhile cut tops off peppers, remove seeds and cu in half.

Inspired from Southern Food, these are quick prep and smell phenomenal while baking. It's a great way to use up the bounty of peppers from the summer garden. I increased the herbs, onion and garlic from the original recipe since it seemed to be lacking some flavor. This is a family favorite, which freezes well. I'm sure you'll enjoy it as much as we do!

9 large green bell peppers
1 tablespoon butter
1 tablespoon olive oil
1 cup chopped onion
1/2 cup chopped celery
1 (28 ounce) can diced tomatoes or 28 ounces peeled fresh tomatoes
1 (4 ounce) can tomato paste
4 garlic cloves, crushed
1 teaspoon dried oregano leaves
1/2 teaspoon dried leaf basil

Steps:

  • Cut tops off peppers; remove seeds and membranes. Chop edible part of tops and set aside. Rinse peppers under cold water. Bring a large pot of salted water to a boil, add peppers, cover ; reduce heat, and simmer for 5 minutes. Drain peppers and set aside.
  • Heat olive oil and butter in a large skillet over medium heat until hot. Sauté chopped green pepper (from tops), chopped onion, and chopped celery for about 5 minutes, or until vegetables are tender. 6 large green bell peppers (or color of your choice)
1 lb lean ground beef or ground lamb
1 Tbsp oil
1/2 c tomato puree
1/3 c onion, minced
1/4 c golden raisins (can use regular raisins)
1/4 c fresh roma tomatoes, peeled, seeded, and chopped
3 Tbsp dry sherry
2 Tbsp dark brown sugar (or more to taste)
1 1/2 Tbsp red wine vinegar
1 clove garlic, pressed
1 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1 c cooked rice
6 monterrey jack cheese slices

Steps:

  • 1. In a large skillet, brown ground beef (or lamb) in oil. Drain if necessary.
  • 2. Add tomato puree through cloves to the meat and simmer for 15-20 minutes until most of the liquid is gone. Allow mixture to cool and then add rice.
  • 3. Meanwhile, remove tops from peppers and clean out ribs and seeds. Steam peppers, cut side down, on a rack with approximately 1-2 inches boiling water, covered, for approximately 10 minutes.
  • 4. Place peppers, cut side up, in a greased baking dish just large enough to hold the peppers. Sprinkle insides of peppers with a little salt and pepper. Fill each pepper with the meat/rice mixture. Place a slice of cheese on top of each pepper.
  • 5. Bake peppers, with foil loosely tenting them, for 20 minutes at 375 degrees F.

4 bell peppers (any color)
4 - 6 c water

4 tablespoons butter
1 cup chopped onion
2 celery ribs, finely chopped
3 tablespoons finely chopped parsley
2 large cloves garlic, fnely minced
2 lbs lean ground beef
3 soft potato white bread
3 eggs, slightly beaten
1 teaspoon salt
1 teaspoon seasoned salt
1 teaspoon ground black pepper
1 (8 ounce) can tomato sauce or 1 (8 ounce) can creole seasoned tomatoes
1 cup shredded cheddar cheese

Steps:

  • Remove the stems and seeds from the bell peppers; set them aside. Melt the butter in a large skillet over medium low heat. Add the onions, celery, parsley, and garlic. Add the ground beef and saute together until the beef is completely cooked and the vegetables are lightly browned. Add the bread crumbs and season with salt and pepper. Remove from heat and let cool slightly.
  • Work the eggs into the stuffing. If more moisture is needed, add a little milk or broth to the stuffing mixture. 2 big red peppers
500 g ground beef (about 1 pd.)
1 large onion
100 g bread, without crust (about 1/4 pd.)
1/2 cup milk
oil
4 tablespoons dried bread, Grated

Steps:

  • Salt, pepper, chopped fresh parsley, minced garlic for taste. Wash the peppers and dry them very well.
  • Cut each one into two pieces (longitudinally). Get out all the seeds and any white part. Preheat oven.
  • FILLING: Put the bread in a cup with the milk.
  • Wait until the bread absorb all the liquid it can.
  • Then squeeze it; only the humid bread without liquid will be used.
  • Aside, put in a bowl the ground beef, the very finely chopped onion, the minced garlic and the parsley.
  • Mix all very well.
  • Add the humid bread cut in small pieces; put enough salt and pepper.
  • Fill the peppers halves.
  • Sprinkle each one with grated dried bread.
  • Put them on a shell with a thin oil layer.
  • Cook in the oven for about 30-40 minutes until the peppers are tender and the cover (the grated bread) gold brown.
  • Bon appetit! The same filling can be used to stuff zucchini and aubergines, for instance. These ones must be cooked previously in salted boiling water (already cut in halves). Then you have to empty each half with a tablespoon, taking care of not damaging the skin.
  • Part of the fruit retired (and chopped) can be mixed in the filling.

1 lb ground beef
1 cup cooked rice
1 cup grated cheddar cheese
1/3 cup onion, chopped
1 (10 3/4 ounce) can tomato soup
1 (8 ounce) can tomato sauce
4 large bell peppers
1/4 teaspoon salt
1 1/2 teaspoons flour
1/2 cup water
4 slices bacon, cut in thirds

Steps:

  • Preheat oven to 350 degrees.
  • Place a 14x20 oven bag inside a 9x13 cake pan.
  • Brown the ground beef and onions and drain off the fat.
  • Add tomato soup, rice, cheese, salt and pepper.
  • COOL.
  • Remove the pepper tops and seeds from the green peppers.
  • Stuff the peppers with the meat mixture.
  • Combined the tomato sauce, flour and water together.
  • Pour one half of the tomato sauce mixture into oven bag.
  • Place the peppers in oven bag, stuffed side up.
  • Spoon the remaining sauce over the top.
  • Place one or two slices of bacon over the top of each pepper.
  • Bake 30-40 minutes until the peppers are tender.

6 large green peppers
1 pound ground beef
1 ⁄2 cup onion, chopped
16-ounce can diced tomatoes
1 ⁄2 cup long-grain rice
1 ⁄2 cup water
1 teaspoon salt
1 teaspoon Worcestershire sauce
1 cup cheddar cheese, shredded, about 4 ounces

Steps:

  • Preheat oven to 350°F. Cut tops from green peppers; discard seeds and membranes. Chop enough of the green pepper tops to make 1/4 cup, set aside. Cook the whole green peppers, uncovered in boiling water for about 5 minutes; invert to drain well. Sprinkle insides of peppers lightly with salt. In a skillet cook ground beef, onion and 1/4 cup chopped pepper till meat is browned and vegetables are tender. Drain off excess fat. Add undrained tomatoes, uncooked rice, water, salt, Worcestershire, and a dash of pepper. Bring to a boil, reduce heat, cover and simmer about 20 minutes or until rice is tender. Stir in cheese. Stuff peppers with meat mixture. Place in a 10x6x2 baking dish. Bake, covered in a 350° oven for 30 minutes.

3 Tbsp. KRAFT Lite House Italian Dressing
1 small red onion, finely chopped
2 cloves garlic, minced
1-1/2 lb. lean ground beef
1/2 lb. red potatoes, (about 2), cooked, peeled and chopped
2 rocoto peppers (about 1/2 lb.), seeded, chopped
1 can (8 oz.) tomato sauce
1/3 cup chopped pecans
1/4 cup light sour cream
4 large red bell peppers
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Steps:

  • Heat oven to 400ºF.
  • Heat dressing in large skillet on medium heat. Add onions and garlic; cook and stir 4 min. Add meat; cook 6 to 8 min. or until evenly browned, stirring occasionally. Remove from heat. Add all remaining ingredients except red peppers and cheese; mix well.
  • Cut red peppers horizontally in half; remove and discard seeds and stems. Place peppers, cut sides up, in 13x9-inch baking dish. Fill with meat mixture; top with cheese. Cover.
  • Bake 35 to 40 min. or until filling is heated through and peppers are tender.

6 green bell peppers
1 tablespoons butter
1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped celery
1 can (14.5 ounces) diced tomatoes
1 can (8 ounces) tomato sauce
1 clove garlic, crushed
1 teaspoon dried leaf oregano
1/2 teaspoon dried leaf basil
2 teaspoons salt, divided
1/2 teaspoon ground black pepper, divided
1 egg, lightly beaten
1 1/2 teaspoons Worcestershire sauce
1 1/2 pounds lean ground beef or chuck
1 1/2 cups cooked long-grain rice
shredded mild Cheddar cheese, about 1/2 to 3/4 cup, optional

Steps:

  • Cut tops off peppers; remove seeds and membranes. Chop edible part of tops and set aside. Rinse peppers under cold water. Place peppers in a large pot; cover with salted water. Bring to a boil; reduce heat, cover, and simmer for 5 minutes. Drain peppers and set aside. Heat olive oil and butter in a large skillet over medium heat until hot. Sauté chopped green pepper (from tops), chopped onion, and chopped celery for about 5 minutes, or until vegetables are tender. Add tomatoes, tomato sauce, crushed garlic, oregano, basil, 1 teaspoon salt, and 1/4 teaspoon of pepper. Simmer for about 10 minutes. In a large mixing bowl, combine egg with remaining 1 teaspoon salt and 1/4 teaspoon pepper, and Worcestershire sauce. Gently stir to blend; add ground beef, cooked rice, and 1 cup of the tomato mixture. Mix well. Stuff peppers with meat mixture and place in a 3-quart baking dish. Pour remaining tomato mixture over the stuffed peppers. Bake at 350° for 55 to 65 minutes. If desired, top stuffed peppers with a little shredded Cheddar cheese just before peppers are done; bake until cheese is melted.
