GROUND BEEF MEXICAN STYLE
Spicy ground beef casserole - it is sort of an enchilada in a bowl without the tortillas! To vary the amount of spiciness, add mild, medium, or hot salsa.

Steps:
- In a large nonstick skillet, cook and stir ground beef until browned. Drain off excess fat.
- Stir in salsa and water. Simmer for 10 minutes.
- Meanwhile, cook pasta in boiling water until al dente. Drain.
- Stir in green pepper and onions, and continue simmering until veggies are crisp/tender. Stir in noodles and sour cream. Sprinkle grated cheese on top, and cover pan until the cheese melts. Sprinkle chopped tomatoes on the top, and serve.

- Heat oven to 350°F.
- Brown meat in large skillet. Meanwhile, microwave potatoes as directed on package, except reduce the microwaving time to 5 min.
- Drain meat; return to skillet. Stir in seasoning mix. Add sour cream and cheese; mix well. Gently stir in potatoes.
- Spoon into 13x9-inch baking dish sprayed with cooking spray; top with peppers.
- Bake 20 min. or until heated through.
