Grilled Yukon Gold Potatoes with Thyme and Garlic image

4 large Yukon gold potatoes
2 tablespoons freshly chopped thyme leaves
2 teaspoons minced garlic
3 tablespoons extra-virgin olive oil
Gray salt and freshly ground black pepper

Steps:

  • Before grilling the potatoes, blanch them. Put the potatoes in cold water and add salt. Bring water to a simmer and cook the potatoes until they are tender.
  • Preheat a grill or grill pan on medium-high heat.
  • Slice the potatoes lengthwise and add to a large mixing bowl with the thyme, garlic, and olive oil. Season with gray salt and pepper and toss to coat the potatoes well. Grill the potatoes over indirect heat for about 3 to 5 minutes on each side until well marked and fully cooked.

8 cloves garlic, left in their skins
1 tablespoon chopped fresh rosemary leaves

Steps:

  • Preheat oven to 425 degrees F.
  • Toss the potatoes, garlic, and rosemary with the oil, salt and pepper on a baking sheet. Arrange potatoes cut side down and roast until fork tender, 20 to 25 minutes. Serve hot.

3 pound new potatoes, yukon gold or red bliss
2 lemons
12 garlic cloves, roasted
1/8 cup rosemary sprigs
1/4 cup roasted garlic oil
Salt and pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Wash and cut the potatoes into quarter wedges. Juice lemons and with a sharp knife peel away the white pith. Cut rind into 1/4-inch strips.
  • Combine the lemon rind, half the juice, roasted garlic, rosemary, and oil in a roasting pan. Add the potatoes, mix well, and marinate overnight.
  • Preheat a grill.
  • Drain the potatoes in a colander reserving the lemon and garlic. Grill the potatoes on the 2 cut sides, just to mark slightly.
  • Using the same roasting pan, place the potatoes, lemon rinds, and garlic back in the pan and roast for 12 to 15 minutes, shaking and tossing the pan every 5 minutes.
  • Season with salt and pepper, and drizzle remaining lemon juice if desired.

6 lemons, cut in 1/2
Salt and freshly ground black pepper
2 teaspoons finely chopped garlic
2/3 cup extra-virgin olive oil
1/3 cup fresh rosemary leaves, chopped
4 rosemary sprigs (about 6 to 8 inches long) or wood or metal skewers
4 center-cut ahi tuna steaks (about 5 ounces each), cut into blocks 3/4 to 1-inch thick
Salt and freshly ground black pepper

Steps:

  • Preheat broiler. Place lemons, cut side up, in a small, non-aluminum flameproof baking dish and sprinkle with salt and pepper. Roast, about 6 inches below the heat, until very soft, about 20 minutes. The tops will darken and caramelize. Let cool in the baking dish.
  • Squeeze the lemon pulp and juice and scrape all the cooking juices from the baking dish into a strainer supported over a bowl. Force it through and add garlic. Whisk in rosemary and extra-virgin olive oil. Keeps up to 1 week refrigerated in a tightly sealed container.
  • Soak rosemary or wooden skewers in water to cover 1 to 2 hours.
  • Preheat grill or broiler. Skewer 2 tuna pieces lengthwise on each rosemary sprig and brush with marinade. Season with salt and pepper and grill, turning once or twice, to medium rare, 8 to 10 minutes, depending on heat. Serve immediately.

RAGOUT OF ROASTED YUKON GOLD POTATOES AND ARTICHOKES



Ragout of Roasted Yukon Gold Potatoes and Artichokes image

1 pound baby artichokes
1 pound Yukon Gold potatoes, boiled for 20 minutes in salted water, strained, and cooled
1/2 cup olive oil
4 tablespoons butter
2 tablespoons sliced garlic
2 cups chicken stock
4 tablespoons chopped parsley
Salt and pepper

Steps:

  • Trim the top 1-inch off of the artichokes and peel the outer leaves off to the tender light green ones. Quarter each artichoke into wedges. If not cooking immediately, place in lemon water to prevent browning. Cut potatoes into four wedges.
  • In a large skillet, on medium-high heat, saute the potatoes and artichokes in oil and butter for 5 minutes so the potatoes just start to brown. Add garlic and saute until garlic just starts to brown. Add chicken stock. Turn down heat and continue cooking for 15 minutes. Chicken stock should reduce down to a 1/2 cup. Season with salt, pepper, and parsley.

4 lbs small red potatoes, halved
1/4 cup olive oil, divided
1 tablespoon grated lemon juice
2 garlic cloves, pressed
1 1/2 teaspoons salt
1/2 teaspoon ground pepper
1/3 cup parsley, chopped
vegetable oil cooking spray

Steps:

  • Bring potatoes and water to cover to a boil in a large Dutch oven over medium high heat, cook 20 to 25 minutes or until tender. Drain and toss with 2 tablespoons olive oil.
  • Stir together lemon rind, nest five ingredients and remaining 2 tablespoons olive oil.
  • Coat a cold cooking grate with cooking spray and place on grill over medium heat, (350 degrees).
  • Place potatoes on cooking grate and grill, covered with grill lid, 5 minutes, turning occasionally.
  • Gently toss hot potatoes with lemon mixture.
  • Serve immediately or at room temperature.
