Grilled Veggie-Portobello Mushroom Burgers image

Portobello mushrooms, winter squash, and eggplant are marinated, then grilled and topped with blue cheese in what's become a favorite at my house.

6 large portobello mushroom, stems removed
1 eggplant, sliced into 1/2 inch rounds
1 medium yellow squash, cut into 1/4-inch slices
1 zucchini, cut into 1/4-inch slices
1 (16 fl oz) bottle balsamic vinaigrette
1 (4 ounce) package crumbled blue cheese
6 hamburger buns, split and lightly toasted

Steps:

  • Place the mushrooms, eggplant, winter squash, and zucchini into a shallow bowl or baking dish. Drizzle with the balsamic vinaigrette, turning to coat evenly. Cover, and refrigerate at least 2 hours, or up to 24 hours, stirring occasionally.
  • Preheat grill to medium-high heat.
  • Drain vegetables and discard marinade. Place vegetables on preheated grill, and cook until lightly browned, turning once, or about 3 minutes on each side. (Note that cooking times vary between grills.) Sprinkle the mushrooms with blue cheese, and let the cheese melt slightly.
  • Open the 6 hamburger buns and divide the eggplant, squash, and zucchini among bottom halves. Place the portobello mushrooms on top of the vegetables, cheese side up. Top with the remaining 6 hamburger bun halves. If necessary, use toothpicks to hold the buns in place. Serve immediately.

This protein-rich vegetarian (vegan) recipe is from "Cooking Light Magazine". Chill the tempeh well before slicing so it will be less apt to crumble. This recipe requires at least 3 hours of marinating, the longer the better. Serve with whole-grain burger buns, and whatever toppings you enjoy!

2 (8 ounce) packages soy tempeh
3/4 cup water
3 tablespoons low sodium soy sauce
2 teaspoons vegetable oil
1 teaspoon grated peeled fresh ginger
1 dash ground red pepper
1 garlic clove, minced
cooking spray

Steps:

  • Split tempeh in half horizontally with a sharp knife; cut each piece in half crosswise. Place tempeh in a heavy-duty zip-top plastic bag. Combine water and next 5 ingredients (water through garlic) in a small saucepan; bring to a boil. Pour over tempeh; seal bag. Marinate in refrigerator 3 hours to overnight.
  • Prepare grill.
  • Remove tempeh from marinade, reserving marinade. Place tempeh on grill rack coated with cooking spray; grill 2 minutes on each side or until lightly browned, basting frequently with reserved marinade.

1/2 cup frozen whole kernel corn (from 12 oz bag)
1/4 cup finely chopped red bell pepper
1 tablespoon cider vinegar
1/4 teaspoon chili powder
1/8 teaspoon ground cumin
2 frozen vegetable burgers
2 whole wheat pita breads (6 inch), cut in half to form pockets
2 tablespoons reduced-fat sour cream

Steps:

  • Heat gas or charcoal grill. In 1-quart saucepan, mix corn, bell pepper, vinegar, chili powder and cumin. Heat to boiling. Reduce heat to medium-low. Cook about 5 minutes or until vegetables are crisp-tender.
  • Cover and grill burgers over medium heat 8 to 12 minutes, turning once, until heated through.
  • Cut burgers in half. Place each burger half in pita bread pocket. Top with corn mixture and sour cream.

1 tablespoon balsamic vinegar
3 tablespoons olive oil
fresh salt and pepper
1 portabella mushroom cap (without stem)
1 small red onion, sliced in 1/2 in slices
1 (14 ounce) can black beans, mashed
3/4 cup canned chick-peas, mashed
1 roasted red pepper, diced small
3 garlic cloves, minced
1 small carrot, grated on box grater
1 egg
3/4 cup breadcrumbs
1 tablespoon ketchup
1 tablespoon fresh basil, chopped finely
1 tablespoon fresh parsley, chopped finely
1 pinch crushed red pepper flakes

Steps:

  • Brush marinade on the mushroom and the red onion slices on both sides and grilled them until they are pliable but still firm about 3 mins a side on med heat. Remove on plate and allow to cool slightly. Dice them in small pieces and add to mixture below.
  • Reserve marinade for brushing later.
  • Drain rinse and pat dry beans and mash them with a potato masher. Add the carrot, garlic, pepper, ketchup, herbs and egg and mix well. Start adding the bread crumbs a few tablespoons at a time and add until the mixture will stick together without sticking to hands if you roll it.
  • Make patties and arrange on plate and put in fridge until ready to cook or you can begin to cook on the grill on medium immediately.
  • Brush grill with olive oil and warm it up on med heat. With the leftover marinade brush it lightly on the tops and put this side down first on the grill and brush to tops for when you will flip them. Grill on each side for 4 mins
  • Add cheese and whatever other condiments you might like and hope you enjoy.

It sounded like an impossible assignment: a recipe for a from-scratch veggie burger that can go right from the mixing bowl onto the grill without falling apart? Lo and behold, we found a way.

Number Of Ingredients 12

2 Tbsp. extra-virgin olive oil, plus more for greasing
1 14-oz. block extra-firm tofu, drained
2 14.5-oz. cans black beans, rinsed, drained well
¼ cup almond butter
¼ cup mayonnaise (vegan, if you are vegan)
2 garlic cloves, finely grated
4 tsp. chili powder (make sure it's salt-free)
4 tsp. Diamond Crystal or 2 tsp. Morton kosher salt
2 cups cooked quinoa (we prefer red or black), cooled
¼ cup flaxseed meal
2 Tbsp. cornstarch
Toasted buns, pickled onions, tomato, lettuce, pickles, and chipotle yogurt (for serving)

Steps:

  • Prepare a grill for medium-high, direct heat. Clean and oil grate. Shred tofu using the large holes of a box grater. Firmly squeeze tofu in between paper towels to drain as much excess liquid as possible.
  • Heat 2 Tbsp. oil in a large nonstick skillet over medium. Cook tofu and beans, tossing occasionally, until beans look slightly dried out and their skins are darkened, 10-12 minutes.
  • Meanwhile, whisk almond butter and mayonnaise in a medium bowl until smooth. Whisk in garlic, chili powder, and salt. Add tofu-bean mixture and cooked quinoa and stir well to combine.
  • Stir flaxseed and ¼ cup cold water in a small bowl. Let sit until a thick paste forms, about 1 minute. Add to tofu-bean mixture along with cornstarch and stir well to combine.
  • Using oiled hands, form mixture into 8-10 patties about ½" thick (about a scant ¾ cup each). Grill until lightly charred around the edges, about 2 minutes. Turn carefully using a metal spatula to cleanly lift off grate and grill until lightly charred on second side and warmed through, about 2 minutes more.
  • Place burgers on bottoms of buns. Pile high with pickled onions, tomato, lettuce, pickles, and chipotle yogurt. Close with top bun and serve.
  • Do Ahead: Patties can be formed 3 days ahead. Tightly wrap each in plastic and chill.

  • Cook boca burger patties to taste on the grill. Lightly toast hamburger buns on the grill. Assemble burgers with 2 tablespoons bbq sauce on each burger patty. Layer dill pickle slices on burger or eat on the side.
