Veal Stew with Artichoke Hearts, Fava Beans, and Peas image

3 sprigs flat-leaf parsley
2 sprigs thyme
1 dried bay leaf
1 garlic clove, crushed and peeled
1 small onion, peeled and thinly sliced
1 medium carrot, sliced 1 inch thick
1 medium celery stalk, sliced 1 inch thick
1/4 teaspoon whole black peppercorns
For stew
1 pound fresh fava beans, shelled (to yield 1 cup)
Coarse salt
1/4 cup dry white wine
2 pounds boneless veal shoulder, cut into 1 1/2-inch cubes
6 cups water
3 large fresh artichoke hearts, prepared as directed on page 296, and each cut into sixths
1 pound fresh green peas, shelled (to yield 1 cup)
For sauce
4 tablespoons (1/2 stick) unsalted butter
1/4 cup all-purpose flour
1 large egg yolk (optional)
1/4 cup heavy cream
For serving
Coarse salt and freshly ground pepper
Juice of 1 lemon, or to taste
Coarsely chopped fresh dill or parsley

Steps:

  • Prepare sachet d'epice Place the aromatics on a large piece of cheesecloth, gather the edges to enclose, and tie with kitchen twine.
  • Blanch favas Prepare an ice-water bath in a large bowl for shocking the beans (which stops the cooking and preserves their color). Drop the fava beans into a large pot of boiling salted water until bright green and just tender, about 2 minutes. Lift out the peas with a slotted spoon (or a spider) and plunge into the ice-water bath. Once they are thoroughly cool, drain and peel off the tough outer skins.
  • Cook veal and artichokes Pour the wine into a large saucepan and bring to a boil, then reduce the heat and simmer for 1 minute (to cook off some of the alcohol). Add veal, water, and 1 teaspoon salt. Bring to a boil and skim the foam from the surface with a slotted spoon (veal produces more surface foam than other meats, so this step is important). Add herb sachet and reduce heat to a low simmer. Cook, uncovered, 1 hour, skimming the surface frequently. Add artichokes to the pot, submerging them partially in the liquid. Cook until the artichokes and veal are tender when pierced with the tip of a sharp knife, 20 to 30 minutes more, adding peas during last 3 minutes of cooking. Remove the sachet and squeeze out the liquid into the pot. Then strain the contents of the pot through a fine sieve into a bowl or large measuring cup, reserving veal, artichokes, and peas. You should have about 3 cups liquid.
  • Thicken sauce Wipe out the pot and return it to the stove. First, make a roux by melting the butter over medium heat until foamy, swirling the pan to melt evenly, then whisk in the flour and cook, whisking constantly, 1 minute. Next, make a velouté by whisking the reserved liquid into the roux and bringing to a boil (again, always whisking), cooking until the mixture is smooth. (Classic culinary teaching would have you whisk cold stock into a hot roux, or vice versa, to prevent the sauce from forming lumps, but that isn't necessary as long as you whisk diligently.) Reduce heat and simmer 10 minutes.
  • Make liaison (optional) Whisk together the egg yolk, if using, and heavy cream, then temper by gradually whisking in a cup of the velouté (this will allow the egg to gently heat so it doesn't curdle). Now whisk everything back into the pot and cook over gentle heat until the sauce thickens enough to coat the back of the spoon, 1 to 2 minutes. (If you prefer, omit the egg and whisk the cream directly into the velouté in the pan.)
  • Serve Return the veal, artichokes, and peas to the pot along with the peeled favas and cook gently to heat through, stirring. Season with salt and pepper. Add lemon juice and chopped dill or parsley to taste.
  • Ingredients
  • This stew is best made in spring when all the ingredients are in season, but in a pinch, substitute frozen peas, fava beans, and even artichoke hearts, adding all at the end, just to heat through.
  • BLANQUETTE DE VEAU
  • Omit fava beans, peas, and artichokes. Once the veal has cooked for 1 hour and 20 minutes, melt 2 tablespoons unsalted butter in a medium saucepan over medium-high heat. Add 8 ounces small white button mushrooms and 6 ounces blanched and peeled pearl onions (page 31), tossing to combine. Pour in 1/4 cup stock from the stew and cook, stirring occasionally, until the vegetables are cooked through and the stock has reduced to a syrupy glaze, about 9 minutes. Finish with the liaison, then return veal to the pot along with the vegetables.

Braised Veal Shanks With Fava Bean Puree image

1 tablespoon olive oil
4 veal shanks, about 12 ounces each
6 large cloves garlic, peeled and thinly sliced
4 shallots, peeled and thinly sliced
1 cup white wine
3 cups chicken broth, homemade or low-sodium canned
5 medium-size carrots, peeled and cut across into 1/4-inch-thick slices
1/4 cup chopped Italian parsley
1 teaspoon kosher salt, plus more to taste
Freshly ground pepper to taste
3 cups shelled fava beans
2 tablespoons heavy cream
1 teaspoon olive oil
1 teaspoon kosher salt, plus more to taste
Freshly ground pepper to taste
4 teaspoons chopped fresh chives

Steps:

  • To make the veal, heat the olive oil in a large, deep, heavy-bottom skillet. Add the veal shanks and cook until brown on all sides, about 10 minutes. Remove the shanks from the skillet and set aside. Add the garlic and shallots and cook, stirring constantly, until browned, about 1 minute. Add the wine and simmer until reduced by half, about 5 minutes, scraping up any browned bits stuck to the bottom of the skillet.
  • Return the shanks to the pan and pour in the broth. Bring to a boil. Reduce heat and simmer slowly for 1 hour. Add the carrots. Continue cooking until the meat is very tender, about 1 hour more. Remove the shanks from the skillet. Increase the heat and simmer for 15 minutes. Stir in the parsley, salt and pepper and return the shanks to the skillet. Taste and adjust seasoning, if needed.
  • Meanwhile, to make the puree, place the fava beans in a medium-size saucepan and cover with cold water. Bring to a boil over medium-high heat. Reduce heat and simmer until soft, about 15 to 20 minutes. Drain, reserving the liquid. Place the beans in a food processor. Add 1/2 cup of the cooking liquid, the cream and the olive oil. Process until smooth, stopping to scrape the sides of the bowl. Season with salt and pepper to taste.
  • Place 1 shank on each of 4 plates and spoon the sauce over. Divide the puree among the plates and sprinkle with chives. Serve immediately.

4 veal kidneys
About 20 sage leaves
1/2 pound pancetta, thinly sliced
Coarse salt and freshly ground pepper

Steps:

  • Soak about 10 small wooden skewers in water for 30 minutes. Preheat broiler.
  • Trim the fat and filament from the kidneys and cut them in pieces about one-inch thick. Place the sage leaves on top of the kidneys, wrap in a slice of pancetta and thread on a skewer. Continue this way until you have threaded all the kidneys on skewers. There should be two small skewers a person.
  • Broil the kidneys about six inches from the heat until they are cooked to desired doneness. Do not overcook or they will be tough. They are at their best when pink in the middle. Add salt and pepper to taste.

Grilled Veal Chops with Chestnut Stuffing and Pickled Golden Raisins image

6 free-range veal chops, about 10 ounces each
1 tablespoon rosemary leaves
2 tablespoons thyme leaves
2 cloves garlic, smashed
2 tablespoons extra-virgin olive oil
2 tablespoons fleur de sel
1 scant tablespoon freshly cracked black pepper
2 ounces arugula, cleaned
Brian's pickled golden raisins (recipe follows)
Chestnut stuffing (recipe follows)

Brian's Pickled Golden Raisins
2 teaspoons yellow mustard seeds
1/2 cup granulated sugar
3 tablespoons champagne vinegar
1 chile de árbol, crumbled
1 bay leaf
1/3 pound golden raisins
1 teaspoon thyme leaves
1-inch sprig rosemary
1 teaspoon kosher salt
Chestnut Stuffing
1 pound country-style bread
1/2 cup extra-virgin olive oil
1 tablespoon fennel seeds
1/2 cup finely diced pancetta
1 small sprig rosemary
1 chile de árbol, broken in half
1 cup finely diced onion
1 cup finely diced fennel
1 tablespoon thyme leaves
2 teaspoons finely chopped lemon zest
1/2 cup white wine
1 1/2 cups chicken stock
4 tablespoons unsalted butter
2 cups steamed chestnuts, crumbled with your hands
1 extra-large egg, beaten
2 tablespoons chopped flat-leaf parsley
Kosher salt and freshly ground black pepper

Steps:

  • Season the veal chops with the rosemary, thyme, garlic, and olive oil. Cover, and refrigerate at least 4 hours, preferably overnight.
  • Light the grill 30 to 40 minutes before cooking, and remove the veal chops from the refrigerator to come to room temperature.
  • When the coals are broken down, red, and glowing, season both sides of the veal chops generously with fleur de sel and cracked black pepper. Place the chops on the grill, and cook 4 to 5 minutes per side, rotating once or twice, to sear nicely. Cook until medium-rare to medium-you can peek inside at the bone to check that the meat is still a little pink.
  • Scatter the arugula leaves over a large platter. Place the chops on top, and spoon the golden raisins over. Pass the stuffing at the table.
  • Brian's Pickled Golden Raisins
  • Place the mustard seeds in a small pan over medium heat, and toast a few minutes, shaking the pan often, until the seeds just start to pop.
  • Combine the mustard seeds with 1 cup water and the rest of the ingredients in a small nonaluminum pot. Bring to a boil, and turn the heat down to a low simmer. Cook 6 to 8 minutes, until the liquid has reduced by half. Let the raisins cool, and store them in the liquid in the refrigerator.
  • Chestnut Stuffing
  • Preheat the oven to 400°F.
  • Cut the crust off the bread and tear the remaining loaf into 1-inch pieces. Using your hands, toss with 6 tablespoons olive oil, squeezing the bread with your hands to help it absorb the olive oil. Toast on a baking sheet 12 to 15 minutes, tossing often, until the croutons are golden brown and crispy on the outside but still a little soft and tender inside. When the croutons have cooled, place them in a large bowl.
  • Meanwhile, toast the fennel seeds in a small pan over medium heat 2 to 3 minutes, shaking the pan often, until the seeds release their aroma and turn a light golden brown. Coarsely grind the seeds with a mortar and pestle or spice grinder.
  • Heat a large sauté pan over high heat for 2 minutes. Add the remaining 2 tablespoons olive oil and the pancetta. Sauté 1 to 2 minutes, stirring with a wooden spoon. Turn the heat down to medium, add the rosemary sprig and the chile, and let them sizzle in the pan a minute. Add the onion, fennel, fennel seeds, and thyme. Season with 1/4 teaspoon salt and a few grindings of pepper. Sauté about 8 minutes, until the vegetables are lightly caramelized. Stir in the lemon zest, and add the entire mixture to the croutons.
  • Return the pan to high heat and pour in the white wine. Bring the wine to a boil, and reduce by three-quarters. Add the chicken stock and bring to a boil. Pour the hot liquid over the croutons and vegetables, and toss well to combine.
  • Wipe the pan out with paper towels, and return it to the stove over medium heat. Swirl in 2 tablespoons butter, and when it foams, add the chestnuts. Sauté 4 to 5 minutes, until the chestnuts are golden and sizzling in the butter. Season with a pinch of salt and pepper, and add to the stuffing. Stir to combine, and taste for seasoning. Add the egg and parsley. Toss well, and put the stuffing in a ceramic baking dish or casserole. Cover with foil, and bake 40 minutes. Remove the foil, and top the stuffing with the remaining 2 tablespoons butter, cut into small cubes. Return the stuffing to the oven, and cook about 20 minutes, until crispy on top.
  • Note
  • You can bake the stuffing the day before. Reheat covered with aluminum foil, and then uncover and top with little pats of butter. Return to the oven, and bake until nice and crispy on top. The pickled raisins can be made long in advance.
  • The notion of roasting chestnuts over an open fire is picturesque and romantic, but in reality it's a tedious and very time-consuming chore to peel them once they're roasted. Instead, I use steamed chestnuts sold in a jar, available at quality supermarkets and gourmet shops.

2 ounces pancetta* or bacon, chopped
1 10-ounce basket pearl onions or 1 cup frozen
1 teaspoon sugar
1 cup canned unsalted chicken broth
1 cup peeled fava beans or frozen baby lima beans
2 teaspoons arrowroot
6 tablespoons sweet Marsala
1 teaspoon minced fresh marjoram
4 6-ounce thin-sliced veal loin chops or T-bone steaks, well trimmed
Ancho and New Mexico Chilis are available at Latin American markets and many supermarkets.

Steps:

  • Sauté pancetta in heavy large skillet over medium heat until crisp. Using slotted spoon, transfer to paper towels. Reduce heat to low, add onions, sprinkle with sugar and sauté until brown and tender, about 25 minutes. Transfer onions to bowl. Add broth, beans and arrowroot to skillet. Simmer until beans are tender, about 5 minutes. Using slotted spoon, transfer beans to onions in bowl. Cook liquid until slightly thickened, about 10 minutes. Add 1/4 cup Marsala and marjoram; return onions and beans to liquid. (Can be prepared 1 day ahead.)
  • Preheat barbecue (medium-high heat). Brush veal with remaining 2 tablespoons Marsala. Season with salt and pepper. Grill until just medium, approximately 3 minutes per side. Transfer veal to plates.
  • Meanwhile, simmer sauce 3 minutes. Season to taste with salt and pepper; stir in pancetta. Spoon sauce over veal and serve immediately.
