3 tomatoes, peeled, seeded and chopped (1 1/2 lbs)
1/2 cup extra virgin olive oil
3 tablespoons lemon juice
3 garlic cloves, minced
3/4 teaspoon salt
1/2 cup mixed fresh herbs, finely chopped (chervil, chives, tarragon and parsley)
2 (1 lb) tuna steaks, cut 1/14-inch thick

Steps:

  • In a medium bowl, stir together the tomatoes, olive oil, lemon juice, garlic and salt. Set aside for about 2 hours to allow the flavors to blend.
  • Light a grill or preheat the broiler. Stir the fresh herbs into the tomato sauce.
  • Grill or broil the tuna about 4" from the heat, turning once, until charred outside and still pink in the center, 3 to 4 minutes per side.
  • Transfer the tuna to a large platter and cut into thick strips. Thop with half of the tomato suace and pass the remainder.

1 medium tomatoes, peeled, seeded, and diced
1/4 cup green onion, finely chopped
1/4 cup fresh basil, chopped
1/4 cup olive oil
2 cloves garlic, minced
2 tablespoons red wine vinegar
1 teaspoon jalapeno pepper, seeded and finely chopped
1/4 teaspoon salt
1/8 teaspoon black pepper, freshly ground
4 tuna steaks, 3/4 inch thick (6 to 8 ounce)
2 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon lemon juice
1 tablespoon fresh thyme, chopped
1 teaspoon ginger, root peeled and grated
1/4 teaspoon salt
1/8 teaspoon black pepper, freshly ground
vegetable cooking spray

Steps:

  • Combine the topping ingredients in a small bowl; stir well. Cover and let it stand at room temperature at least 1 hour.
  • Place the tuna steaks in a large, heavy-duty, zip-lock plastic bag.
  • Combine 2 tbsp olive oil, and the next 6 ingredients in a small bowl; stir well. Pour the marinade mixture over the tuna steaks. Seal bag securely. Marinate in the refrigerator 30 minutes.
  • Remove the steaks from the marinade; discarding the marinade. Spray a grill basket with cooking spray, and place the steaks in the basket. Grill steaks, covered, over medium coals 5 minutes on each side or until fish flakes easily when tested with a fork.
  • Remove steaks to a serving platter and serve with the tomato topping.

1/4 cup crumbled feta cheese (1 ounce)
2 tablespoons chopped kalamata or ripe olives
3 tablespoons chopped fresh basil or oregano leaves
1/4 cup olive or vegetable oil
1/2 teaspoon garlic salt
1/4 teaspoon pepper
4 tuna steaks, 1 inch thick (about 2 pounds)

Steps:

  • In medium bowl, gently toss tomato, cheese, olives and 1 tablespoon of the basil. Cover and refrigerate until serving.
  • Spray grill rack with cooking spray. Heat coals or gas grill for direct heat.
  • In small bowl, mix remaining 2 tablespoons basil, the oil, garlic salt and pepper. Brush mixture over tuna.
  • Grill tuna uncovered 4 inches from medium-high heat 5 minutes. Turn carefully; brush with any remaining oil mixture. Grill 10 to 15 minutes longer or until tuna flakes easily with a fork. Serve topped with tomato mixture.

4 (6 ounce) yellowfin tuna steaks
½ cup vegetable oil
⅓ cup soy sauce
¼ cup fresh lemon juice
2 teaspoons Dijon mustard
1 teaspoon grated lemon peel
1 clove garlic, crushed
4 wedges lemon, for garnish

Steps:

  • Prick tuna steaks all over with a fork and place in shallow glass dish.
  • Whisk oil, soy sauce, lemon juice, Dijon mustard, lemon peel, and garlic together in a bowl; pour over the tuna steaks. Cover dish with plastic wrap and refrigerate 1 to 3 hours.
  • Preheat grill for medium heat and lightly oil the grate.
  • Remove tuna from the marinade. Shake excess moisture from the steaks.
  • Pour the marinade into a small saucepan and bring to a boil. Reduce heat to medium-low and cook marinade at a simmer for 10 minutes.

1/4 cup lime juice
3 tablespoons extra-virgin olive oil
1 tablespoon finely minced sun-dried tomatoes
1 teaspoon ground cumin
Hot pepper sauce to taste
2 1/2 pounds fresh tuna steaks (see note)
Pepper salsa (see recipe)

Steps:

  • Combine the lime juice, olive oil, sun-dried tomatoes, cumin and hot pepper sauce in a glass or ceramic dish large enough to hold the fish snugly in a single layer.
  • Cut the fish into six uniform pieces. Place them in the dish, turn them once to coat both sides, cover and refrigerate for at least two hours. Turn the fish once while it is marinating.
  • Heat a grill or broiler. Grill or broil the tuna until it is seared on the outside but still rare in the middle, two to three minutes on each side, depending on the thickness of the fish and the heat of the grill or broiler.
  • Serve at once topped with the pepper salsa.

1/4 cup fresh lemon juice
1 teaspoon olive oil
2 teaspoons kosher salt
1 1/2 teaspoons cracked black pepper
1 1 1/2-inch-thick tuna steak (about 1 1/2 pounds)
3 large tomatoes, cut into 1/2-inch-thick slices
1 large onion, peeled and cut into 1/2-inch-thick slices
Freshly ground pepper to taste
4 teaspoons chopped Italian parsley

Steps:

  • In a shallow dish combine the lemon juice, olive oil, 1 teaspoon of salt and pepper. Add the tuna and coat well. Refrigerate for 30 minutes.
  • Remove the tuna from the marinade and grill over white coals with the tomato and onion slices. Grill the tuna until browned on the outside but still pink in the center, about 5 minutes per side. Grill the tomato and onion slices until lightly charred, about 5 minutes per side.
  • Cut the tuna in half lengthwise and then across into thin slices. Quarter the tomato slices and cut the onion slices into large dice.
  • When ready to assemble, divide the tomatoes and onions among the pizzas. Top with the tuna slices and season with the remaining salt and pepper. Sprinkle with parsley and serve. Use on rosemary-olive crust.

1 tablespoon olive oil
2 garlic cloves, minced
