GRILLED TILAPIA WITH MANGO SALSA



Grilled Tilapia with Mango Salsa image

Don't let the list of ingredients fool you: this is super-easy, and gets rave reviews whenever I serve it. The salsa can be made the day ahead to save time. Strawberries can be substituted for the mango if you prefer--both are excellent! Combine leftover salsa with some drained black beans the next day for lunch.

⅓ cup extra-virgin olive oil
1 tablespoon lemon juice
1 tablespoon minced fresh parsley
1 clove garlic, minced
1 teaspoon dried basil
1 teaspoon ground black pepper
½ teaspoon salt
2 (6 ounce) tilapia fillets
1 large ripe mango, peeled, pitted and diced
½ red bell pepper, diced
2 tablespoons minced red onion
1 tablespoon chopped fresh cilantro
1 jalapeno pepper, seeded and minced
2 tablespoons lime juice
1 tablespoon lemon juice
salt and pepper to taste

Steps:

  • Whisk together the extra-virgin olive oil, 1 tablespoon lemon juice, parsley, garlic, basil, 1 teaspoon pepper, and 1/2 teaspoon salt in a bowl and pour into a resealable plastic bag. Add the tilapia fillets, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Prepare the mango salsa by combining the mango, red bell pepper, red onion, cilantro, and jalapeno pepper in a bowl. Add the lime juice and 1 tablespoon of lemon juice, and toss well. Season to taste with salt and pepper, and refrigerate until ready to serve.
  • Preheat an outdoor grill for medium-high heat, and lightly oil grate.
  • Remove the tilapia from the marinade, and shake off excess. Discard the remaining marinade. Grill the fillets until the fish is no longer translucent in the center, and flakes easily with a fork, 3 to 4 minutes per side, depending on the thickness of the fillets. Serve the tilapia topped with mango salsa.

4 tilapias
1/4 cup Unsalted Butter
2 lemons
2 tbsp Garlic Parley Salt
1 tbsp dill (garnish)

Steps:

  • Slice lemon into half rings. Butter into small chunks.
  • Make small incisions on tilapia. Season all sides generously. Stuff it with butter and lemon slices.
  • Grill tilapia at 450 °F for about 5 minutes on each side. Depending on the size of the fish, you may need to grill longer.

⅓ cup olive oil
1 teaspoon lemon-pepper seasoning, or to taste
1 teaspoon ground cumin, or to taste
1 teaspoon paprika, or to taste
1 teaspoon dried mustard, or to taste
garlic powder, or to taste
4 (4 ounce) fillets tilapia
cooking spray

Steps:

  • Mix olive oil, lemon pepper, cumin, paprika, dried mustard, and garlic powder together in a small bowl. Brush each tilapia fillet with mixture using a pastry brush. Flip; brush the other side. Cover with aluminum foil and refrigerate for 1 hour.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Spray a large piece of foil with cooking spray and place on the grill. Transfer tilapia onto the foil.
  • Cook fillets on the preheated grill until they're easily flaked with a fork, about 5 minutes per side. Serve.

This is my favorite way to make tilapia, especially because Costco has such a great deal on their packaged tilapia, (at least here in Arizona.) So this recipe is not only very yummy, it is very inexpensive. In fact, you probably have all of the ingredients in your kitchen. Enjoy!

2 garlic cloves
1/2 cup fresh parsley
1/2 lemon
3/4 cup olive oil
1/4 cup red wine (I prefer balsamic) or 1/4 cup balsamic vinegar (I prefer balsamic)
1 tablespoon dried oregano
1/2 teaspoon black pepper
2 dashes Tabasco sauce

Steps:

  • Mince the garlic into fine pieces.
  • Chop up the parsley into small pieces.
  • Place the parsley and garlic into a jar with a tight fitting lid.
  • Squeeze the juice into the jar.
  • Add the olive oil, balsamic, oregano, pepper and Tabasco to the jar.
  • Put the lid on the jar and shake well.
  • Marinade your tilapia fillets for 20-30 minutes.
  • I grill my tilapia for about 5 minutes, each side, but you could bake it for 30 minutes, or cook it in a frying pan, sprayed with Pam, for about 15 minutes on your stove top.
