Crockpot Beef Stew image

This is a simple and delicious stew that my family loves. Serve it with rolls or french bread for a wonderful dinner!

Number Of Ingredients 12

2 lb lean beef stew meat, cut in cubes
1 can(s) snap-e-tom or v-8 vegetable juice (8 oz)
2 c carrots, cut in chunks
1 c onion, chopped
1 can(s) diced tomatoes, 15 oz can, with juice
2 stalk(s) celery, chopped
2 Tbsp instant tapioca
1/2 c water
2 c potatoes, cubed
1 tsp kosher salt
1/2 tsp black pepper
2 clove garlic, finely chopped

Steps:

  • 1. Place all ingredients in a crockpot sprayed with cooking spray. Stir well. Cook for 6 hours on low and avoid removing the lid until done.
  • 2. Can be cooked on high for 4 hours as well.
