FILIPINO SAUSAGE SLIDERS

Number Of Ingredients 15

1 tablespoon plus 1 teaspoon vegetable oil
3/4 teaspoon annatto seeds (aka achiote seeds)
1 pound lean boneless pork shoulder, coarsely ground by your butcher
6 ounces pork fatback, coarsely ground by your butcher
1 tablespoon Worcestershire sauce
2 teaspoons reduced-sodium soy sauce
1 1/2 teaspoons kosher salt
1 1/2 teaspoons granulated sugar
1/2 teaspoon garlic powder
1/2 teaspoon Asian chili oil
1/2 teaspoon ground paprika
1/2 teaspoon ground black pepper
12 small soft sweet rolls, such as Hawaiian buns or potato rolls, split open
2 tablespoons vegetable oil
Garlic mayonnaise and pickled shallots, for serving (see below)

Steps:

  • Make the sausage: Combine the vegetable oil and annatto seeds in a very small pan and set over high heat. Tip the pan so the oil and seeds collect at one side and the oil more or less submerges the seeds. Cook until the oil looks bright red, 1 to 2 minutes. Let cool in the pan, then strain, discarding the seeds.
  • Combine the remaining sausage ingredients in a large bowl, add the annatto oil and mix with your hands just until the ingredients are well distributed. (Overmix and your sausage will be tough.) Let the mixture sit for at least 1 hour or keep in the fridge for up to 24 hours.
  • Make the sliders: Preheat the oven to 350 degrees F. Using about 1/4 cup of the sausage mixture for each, form twelve 1/2-inch-thick round patties.
  • Arrange the rolls cut-sides up in one layer on a baking sheet and toast in the oven until the cut sides are light golden and the insides are still soft, about 2 minutes. Meanwhile, heat 1 tablespoon vegetable oil in a large ovenproof skillet over medium heat until it shimmers. Add 6 of the patties and cook, flipping once, until they?re brown on both sides, about 2 minutes per side. Remove to a plate. Repeat with the remaining 1 tablespoon vegetable oil and remaining 6 patties. Return all of the browned patties to the skillet, then transfer the skillet to the oven and bake until the sausage is cooked through, about 3 minutes.
  • Spread as much garlic mayo as you like on both the roll tops and bottoms. Top with the sausage patties. Put as much as you want of the pickled shallots on the patties. Cover with the roll tops and eat.
  • Pickled Shallots
  • Combine 2 cups unseasoned rice vinegar, 1/4 cup Asian chili oil, 2 tablespoons sugar and 1 tablespoon each kosher salt and ground toasted coriander seeds in a bowl and stir to dissolve. Combine 10 ounces large shallots (sliced into 1/4-inch-thick rounds) and one 2-inch knob peeled ginger (cut into matchsticks) in a tall container and pour in the vinegar mixture. Let sit for a few hours at room temperature, stirring once. Eat while they?re crunchy, or even better, keep them covered in the fridge for at least 24 hours or up to 1 month. Makes about 1 quart.
  • Garlic Mayonnaise
  • Combine 1 cup mayonnaise, 2 tablespoons distilled white vinegar, 1 teaspoon garlic powder and 1/2 teaspoon finely ground black pepper and stir well. The garlic mayonnaise keeps in an airtight container in the fridge for up to a week.

2 lbs Johnsonville® All Natural Ground Sausage, or links, decased
1 lb ground beef
16 small slider buns or mini sandwich rolls
*Condiments
Provolone Cheese and Marinara Sauce
Fresh Mozzarella
Fresh Basil
Sliced Tomatoes
Giardiniera - (marinated chopped vegetables & olives)
Sauteed Onions and Roasted Red Peppers
Sauteed Mushrooms and Cheddar Cheese

Steps:

  • In a large bowl combine sausage and beef. Using your hands, blend the two meats together and form into one large ball. Use a spoon or a small measuring cup to gather up about a 3 oz ball and press into patties. In a large skillet over medium-high heat, pan fry 4 or 5 sliders at a time. Cook for about 3 minutes then flip and continue cooking for another 3 minutes. Test for doneness, internal temperature should be 160 degrees F. Slice the buns and top the sliders with your favorite condiments.

3/4 cup peach preserves
1/2 cup reduced-sodium soy sauce
3 tablespoons minced fresh gingerroot
3 tablespoons water
3 garlic cloves, minced
Dash hot pepper sauce, optional
4 medium sweet red peppers
1 medium eggplant
3 small zucchini
2 small yellow summer squash
12 hot Italian pork or turkey sausage links (4 ounces each)

Steps:

  • Place the first 5 ingredients in a blender; if desired, add pepper sauce. Cover and process until blended., Cut peppers lengthwise in half; remove seeds. Cut eggplant lengthwise into 1/2-in.-thick slices. Cut zucchini and yellow squash lengthwise into quarters. Place all vegetables in a large bowl; drizzle with 1/2 cup of the sauce and toss to coat., Place vegetables on a greased grill rack. Grill, covered, over medium heat 8-10 minutes or until tender and lightly charred, turning once. Cool slightly. Reduce grill temperature to medium-low heat., Cut vegetables into bite-sized pieces. Toss with additional 1/4 cup sauce; keep warm., Grill sausages, covered, over medium-low heat 15-20 minutes or until a thermometer reads 160° for pork sausages (165° for turkey sausages), turning occasionally. Remove sausages from grill; toss with remaining sauce. Serve with vegetables.

Ah it is baseball season again and warm weather. What best to go with the season than outdoor grilling, super fast and simple recipes, and a fun sandwich. Instead of the regular bun and big hamburger, go for a slider, smaller, cuter, and just plain fun. A bit of the twist is that this is a sausage slider and very versatile one at that.Change the condiments and toppings and you could have breakfast instead of lunch or dinner. This is a fun entrée for adults and kids alike. Use the smaller biscuits and have mini-mini sausage sliders and use as an appie. Just have fun and let me know the combinations you make from this versatile and easily adaptable recipe. Have fun. Invented recipe for RSC#16.

Number Of Ingredients 10

1 (8 -10 ounce) can refrigerated biscuits, Grande size
1 lb Italian sausage (mild or hot)
1 tablespoon fresh basil or 1/2 tablespoon dried basil
1 egg
1/2 cup corn, flake crumbs
1 teaspoon salt (I use sea salt)
1 teaspoon black pepper
4 slices swiss cheese, halved
1/2 vidalia onion, medium size sliced into thin slices. You need enough to cover each slider
1 cup spinach (divided) (optional)

Steps:

  • Follow directions on biscuit can to make biscuits, remove from oven let cool then slice or pull apart in half (top and bottom) I used the buttermilk Grande size. (This can be done ahead of time or while you are making the patties. I made mine a few minutes ahead of time, mixed the meat, and then grilled. Biscuits just coming from oven and let cool for 5 minute while I got the condiments together and table set.).
  • In a bowl mix together sausage, basil, S&P corn flake crumbs, and egg.
  • Make 8 mini patties just a tad larger than the biscuits and fry in a grill pan or grill on grill top til done approximately 4 min per side for well done.
  • Once patties are done, place onto bottom half of biscuit, top with ½ slice Swiss cheese, spinach, onion slice, and any garnish you choose. We like horseradish mustard or mayo, tomatoes and the onion.
  • Serve with a side salad or a baseball game and a smile.
