4 1-inch thick rib-eye steaks
¼ cup grill seasoning (such as Montreal Steak Seasoning®)
½ cup grainy French mustard (such as Moutarde de Meaux®)
1 cup diced red onion, divided
2 tablespoons unsalted butter

Steps:

  • Score both sides of each steak by making diagonal slices. Season with grill seasoning. Brush each side of the steak with the mustard, then press 1/2 of the red onions into the mustard on one side of the steak.
  • Melt the butter in a large skillet over high heat. Place the steaks onion side down in the skillet. Press the remaining onions evenly into the mustard on the top side of each steak. Cook steaks until they start to firm, and are browned on the outside and red in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 125 degrees F (52 degrees C). Remove steaks from the skillet, and allow them to rest for 5 minutes before serving.

1 cup half-and-half cream
1/2 cup Dijon mustard
1/4 cup plus 2 teaspoons crumbled blue cheese, divided
1 garlic clove, minced
2 beef ribeye steaks (1-1/2 inches thick and 12 ounces each)
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small saucepan over medium heat, whisk together cream, mustard, 1/4 cup blue cheese and garlic. Bring to a simmer. Reduce heat to low; whisk occasionally., Meanwhile, rub meat with olive oil; sprinkle with salt and pepper. Grill steaks, covered, on a greased rack over high direct heat 4-6 minutes on each side until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove from grill; let stand 10 minutes while sauce finishes cooking. When sauce is reduced by half, pour over steaks; top with remaining blue cheese.

A recipe that I found for ZWT on All British Food.com. This says to use a grill pan but also could be grilled on the BBQ, which is what I will do. Sounds so fresh and flavorful.

4 beef steak fillets
1 tablespoon cooking oil
1 tablespoon lemon juice
4 teaspoons dried parsley (or 3 tbsp chopped fresh)
2 garlic cloves, crushed
1 teaspoon dried basil (or chopped fresh basil)
fresh ground black pepper
1 teaspoon salt

Steps:

  • Mix oil, lemon juice, parsley, garlic, basil and pepper.
  • Roll steak in mixture and leave in refrigerator for 1 hour.
  • Place meat on the rack of a grill pan and cook 10 cm (4 inches) under a pre-heated grill for 5 to 7 minutes in total (rare) or 7 to 10 minutes in total (medium), basting meat with remaining oil mixture.
  • Season with salt and serve immediately.

2 beef filet mignon steaks (or sirloin steaks)
2 ounces butter, softened (50 g)
1/4 teaspoon very finely chopped fresh rosemary
2 teaspoons whole-grain Dijon mustard
1/4 teaspoon minced fresh garlic
fresh ground black pepper, to taste

Steps:

  • Place the butter in a bowl and beat until light and fluffy. Mix in the rosemary, mustard, garlic and pepper.
  • Spoon the butter onto a piece of parchment paper or cling wrap. Roll the butter inside the paper into a log shape; twist the ends of the paper to seal.
  • Refrigerate the butter at least 1 hour until firm (make-ahead tip: butter will keep in the fridge for several days, or may be frozen).
  • Cook steaks to your liking, and let rest 2-3 minutes before serving.
  • Slice the butter into thick rounds, set one on top of each grilled steak and serve.
  • Great with jacket potatoes and a fresh garden salad.
  • Note: Recipe makes enough butter for 2 steaks, but may easily be doubled or tripled etc. to suit.

2 large garlic cloves pressed
1/2 teaspoon crumbled dried rosemary leaves
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano
1/2 teaspoon freshly-ground black pepper
4 trimmed beef rib eye, 1" thick (or boneless top loin steaks)
Salt to taste

Steps:

  • Combine mustard, garlic, rosemary, thyme, oregano and pepper. Spread mixture on both sides of steaks. Grill steaks over medium coals, turning occasionally, 11 to 14 minutes for medium-rare to medium (if using top loin steaks, grill a little longer), turning halfway through cooking time. 2 cups fresh parsley leaves
1-1/2 cups fresh cilantro leaves
1/2 medium red onion, coarsely chopped
1 to 2 chipotle peppers in adobo sauce
5 garlic cloves, sliced
1/2 cup olive oil
1/4 cup white wine vinegar
1 teaspoon grated lime zest
1/4 cup lime juice
3 teaspoons dried oregano
1-1/4 teaspoons salt, divided
3/4 teaspoon pepper, divided
2 pounds beef flat iron steaks or 2 beef top sirloin steaks (1 pound each)

Steps:

  • For chimichurri, place the first 5 ingredients in a food processor; pulse until finely chopped. Add oil, vinegar, lime zest, lime juice, oregano, 1/2 teaspoon salt and 1/4 teaspoon pepper; process until blended. Transfer to a bowl; refrigerate, covered, until serving., Sprinkle steaks with the remaining salt and pepper.
