1 (1 1/4 pound) flank steak
1 tablespoon salt, divided
1 tablespoon ground black pepper, divided
2 limes
½ teaspoon chili powder
1 large green bell pepper, cut into strips
1 large red onion, cut into strips
1 pinch salt and ground black pepper to taste
1 (15 ounce) can black beans, rinsed and drained
1 serving olive oil cooking spray
1 (8 ounce) package shredded Mexican cheese blend
1 (10 ounce) package flour tortillas

Steps:

  • Coat both sides of the flank steak with 1 tablespoon each salt and pepper, pressing into the steak. Place in a large freezer bag. Cut both limes in half and squeeze juice into the bag; add chili powder. Make sure all is mixed well and remove the air from the bag. Place in a refrigerator and marinate for about 3 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Season bell pepper and red onion with salt and pepper. Place in a grill pan and set aside.
  • Put black beans in a small pot on the stove over medium heat to heat through.
  • Cook steak on the preheated grill until browned on one side, 5 to 7 minutes. Spray vegetables with cooking spray and place them on the grill. Cook until vegetables begin to caramelize, turning often so they don't burn, and steak is beginning to firm and is hot and slightly pink in the center, 5 to 7 minutes. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C) for medium doneness. Remove steak and vegetables from the grill.
  • Slice steak into thin strips. Place beans, steak, vegetables, and Mexican cheese onto the tortillas and serve.

1 beef flank steak (1-1/2 pounds)
1 large onion, cut into wedges
1 medium green pepper, julienned
1 can (4 ounces) chopped green chiles
1/2 cup lemon juice
1/2 cup cider vinegar
1/2 cup vegetable oil

1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
1/2 teaspoon salt

Steps:

  • In a shallow dish, add beef. In another shallow dish, add the onion and green pepper. , In a large bowl, combine the chiles, lemon juice, vinegar, oil, garlic, Worcestershire sauce, oregano, salt and pepper. Pour 1-1/2 cups over meat. Pour remaining marinade over vegetables. Cover and refrigerate overnight. , Drain meat and vegetables, discarding marinade. Grill steak, covered, over medium-hot heat for 10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Meanwhile, cut 2 pieces of heavy-duty foil into 18x12-in. rectangles. Wrap tortillas in 1 piece and vegetables in the other; seal foil tightly. 3 tablespoons olive oil, plus more for the grill or grill pan
2 tablespoons plus 1/4 teaspoon chili-lime seasoning, such as Good & Gather™ Chili Lime Seasoning Blend
2 cloves garlic, grated
2 limes
Kosher salt and freshly ground black pepper
Two 8-ounce New York strip steaks, about 1 inch thick, such as Good & Gather™ USDA Choice New York Strip Steak
3 bell peppers (about 1 1/2 pounds), stemmed, seeded and sliced 1/2 inch thick, such as Good & Gather™ Tri-Colored Bell Peppers
1 medium onion (about 8 ounces), halved and sliced 1/2 inch thick
2 tablespoons unsalted butter, at room temperature
Eight 6-inch corn tortillas
Salsa, for serving

Steps:

  • Place a 12-inch cast-iron skillet on one side of a gas grill, preheat the grill to high and lightly oil the grates. Alternatively, lightly oil a large grill pan and preheat over high heat and preheat a 12-inch cast-iron skillet over high heat.
  • Mix the oil, 2 tablespoons chili-lime seasoning, garlic, the juice of 1 lime, 1 tablespoon salt and a generous amount of pepper in a large bowl. Place the steaks on a plate and spoon 3 tablespoons of the mixture on top, flipping so that both sides are nicely coated, spooning any marinade on the plate back onto the meat. Refrigerate covered for 15 minutes and up to 2 hours if time allows.
  • Put the peppers and onions in the large bowl with the remaining marinade and toss to coat evenly.
  • Place the steaks on the open side of the grill or on the grill pan and put the vegetables and any oil left in the bowl in the cast-iron skillet.
  • Cook the steaks, flipping once halfway through, until cooked through, about 8 minutes total for medium-rare. Transfer to a cutting board and let rest for 2 minutes. Cook the vegetables, stirring occasionally, until softened and charred in some spots, about 10 minutes.
  • Meanwhile, mix the butter and remaining 1/4 teaspoon chili-lime seasoning in a small bowl. Wrap the tortillas loosely in foil and grill until warm, about 1 minute per side.
  • Thinly slice the steaks and add to the skillet with the vegetables. Top with the butter and quickly stir until melted and incorporated, about 1 minute.

This is one recipe that my kids love. They are always within arms reach when the steaks are being cut up, begging for a bite.

2 beef flank steaks
1 Tbsp garlic powder
1 Tbsp onion powder
1/2 tsp cayenne pepper
1/2 tsp cumin
salt and pepper to taste
1-2 green bell pepper
1 sweet yellow onion
1 tsp vegetable oil
shredded cheddar cheese
shredded lettuce
diced tomatoes
flour totillas
salsa
sour cream

Steps:

  • 1. Mix seasonings together and apply liberally to both sides of the steak. Alowl to sit and come to room temperature to avoid the meat shrinking and becoming tough on grill. I usually eyeball my seasonings, but I am estimating the amount I use in the measurements above.
  • 2. Cut and seed green bell pepper, rub with oil and season with salt and pepper. Cut ends off of onion and peel skin, coat with oil salt and pepper and wrap completely with aluminum foil.
  • 3. As soon as fire dies down on charcoal grill place your onion on the coals. This will need the most time to cook so as soon as I can I place it in the heat.
  • 4. Once coals are ready place flank steaks on grill. This meat is lean so there are not normally many flare ups from the fire. Allow meat to cook approx 10 minutes on each side, flipping only once. You want the meat to have a medium center so that it will retain moisture and juiciness. Once you have flipped the meat add your peppers to the grill and char each side. Remove meat from grill and let rest for about 10-15 minutes tented with foil so that juices can recirculate.
  • 5. Cut steaks in thin strips with a SHARP knife on the bias Cut peppers and onions into strips.
  • 6. Serve on tortillas and top with cheese, lettuce, sour cream, diced tomatoes, and salsa.

olive oil
1 tsp gran. garlic, gran. onion, cumin, black pepper, cumin, mrs. dash extra spicy & zesty lime& paprika
1/2 tsp coarse sea salt

1 sweet onion, sliced
mushrooms slice, opitional
grated cheese, cheddar or your favorite
flour tortillas

Steps:

  • 2. Mix together spices in small bowl. Wipe beef dry, rub with olive oil, and spices. Wrap in plastic wrap, refrigerate.

  • 4. Slice veggies up & place in large bowl, sprinkle with olive oil & preferred spices, toss. Place on baking sheet appropriate for grilling.
  • 5. Grill veggies before or during fajatia grilling. Grill skirt steak on each side for about 20 min. on med. high grill heat. This is best eaten medium rare. The longer you cook it, the tougher it gets.
  • 6. Let rest for 20 min., then slice thinly against the grain. Since the grain run across the skirt steak you need to slice it crossways in about 3" strips, then go back & slice the strips against the grain. Place on warm tortilla, top with cheese & grilled veggies. Garnish with salsa, sour creme or pico de gallo.

Traditional recipe with ingredients that have been updated to ones more accessible to us in the USA but this is the same recipe and method used by Mexican families for generations! (The soy sauce is a recent AND YUMMY addition) I saw an Alton Brown show recently in which he used this same method of cooking! The hair dryer is a new generation update- in the 'old days' they just fanned the flames to rid the ashes. UPDATE: 9/2009 Due to a review that this was a little to sweet I have edited the recipe with that in mind. Please adjust the amount of onion and sweetness to your personal taste. 2 lbs skirt steaks, tenderized
1/2 cup olive oil
1/3 cup soy sauce
1 large onion, quartered (for less pronounced onion flavor save some for grilling later)
4 large garlic cloves, minced
2 limes, juice of, reserve flesh and rind
1 guajillo chilies, dried, torn in pieces or 1 chipotle chili, from a can of chipotles in adobo
1/2 teaspoon ground cumin
2 tablespoons dark brown sugar, packed (originally asked for 1/4 cup)
1/2 teaspoon salt
tomatoes, quartered (optional)
onion, quartered (optional)
mushrooms, quartered (optional) or mushroom, whole (optional)
summer squash, quartered (optional)
zucchini, quartered (optional)
bell pepper, any color, quartered (optional)
crema (optional)
sour cream (optional)
cheese, grated (optional)
pico de gallo (optional)
salsa (optional)

Steps:

  • In a blender, whir together oil, soy sauce, onion, garlic, lime juice, red pepper or chili/red pepper/chipotle, cumin, salt and sugar until there are no chunks- liquefied. If you do not want to blend them combine all the wet until the sugar is dissolved then add the other ingredients and proceed.
  • Place steak in a ziploc bag and pour in marinade. Toss in the squeezed limes that were juiced and reserved.
  • Seal bag, removing as much air as possible. Allow steak to marinate for at least 1 hour in refrigerator. We do it overnight.
  • Remove steak from bag and pat dry with paper towels. Toss out marinade.
  • Heat charcoal, preferably natural chunk, until gray ash appears. Daddy uses B & B brand.
  • You want the steak to fit nicely on the coals. You may need to cut the steak so that it fits nicely on the coals. You want the entire surface of the steak in DIRECT contact with the coals.
  • Using a blow dryer, YES A BLOW DRYER! Blow charcoal clean of ash. You could also use a fireplace bellows or something heavy and just 'fan' them until the ashes are off the coals.
  • Once clean of ash lay steaks directly onto hot coals for 1 minute per side. That is all. ONE MINUTE PER SIDE! (If you prefer NOT to use that method you CAN place them on the grill SEE NOTE BELOW!
  • Now place meat in double thickness of aluminum foil, wrap tightly to trap in all the heat and allow to sit for 15 minutes.
  • Want veggies too? While the meat is resting, place a cast iron skillet right on the coals and heat until really scorching HOT. You could use a grill basket instead if you like. Add a little olive oil to coat the pan so that your veggies don't stick. Toss in the veggies and stir (or shake basket a bit) to cook evenly. Remove from skillet when they have reached the desired degree of done-ness!
  • Remove meat from foil, reserving foil and juices. Slice thinly across the grain of the meat. Brush off any ash or coals that may have stuck to the meat.
  • Note: You can do this the GRINGO way and cook on a grill over a very hot fire. You want the meat to sear. Just cook about 3 minutes per side instead of 1 minute directly on the coals. The grill rack MUST be placed as close to the coals as possible and the grill rack has been preheated to HOT HOT HOT! You want to sear the heck outta that meat! Then just follow the regular steps! Remember, if you want the meat more DONE you can pop it under the broiler in the house for a minute or two BUT you cannot UNcook the meat! So err on the side of RARE rather than DONE here.).
  • Return to foil pouch (REPEAT AFTER MAMA- NO DISH TO WASH! YEA) and toss with the reserved juice.
  • Fix a taco! We like to heat lots of yummy tortillas right along side the coals. Just wrap the desired amount of tortillas- it is best to keep it 10 or under so that the ones in the middle get nice and yummy too! Anyway, wrap them in a double thickness of aluminum foil and place near the coals. They can hang out and get toasty warm and will be waiting for you!
  • Take a hot, steamy tortilla (authentically corn but use what you want) and add meat and veggies or whatever you like. Fold and eat!
  • ENJOY!
  • Oh ANOTHER Note: Some people like a little more sweetness to their fajita meat- If you are one try adding some 7-up or sprite to the marinade. mmmmm.

1 cup soy sauce
2 cups pineapple juice
2 tablespoons ground cumin
1 1/2 teaspoons minced garlic
1/4 cup freshly squeezed lime juice

  • To marinate the steak:.
  • Place the meat in a resealable container.
  • Pour the marinade over the meat and move the meat around to make sure it's evenly coated.
  • Marinate in the refrigerator 6 to 8 hours.
  • To grill the steak:.
  • Place the beef on the grill, directly over the coals, and leave undisturbed until grill marks form, then rotate the meat 90 degrees to create a second set of marks.
  • After 2 to 3 minutes, turn the beef to cook on the other side, using the same technique to form the grill marks.

2-2 1/2 lbs. beef tenderloin, cut into 1" x 3" strips, trim fat
salt
fresh ground pepper
3-4 limes, halved
8-10 flour tortillas
TOPPINGS OF CHOICE:
shredded letuce
pico de gallo (see my recipe)
guacamole
queso fresco, crumbled
hot sauce
grilled pepper strips, optional
grilled onion , optional

Steps:

  • 1. Heat half of grill to high heat. Other side to medium. Wrap tortillas in foil and place on warm side of grill to warm through. Turn now and then. Oil grill with vegetable oil-saturated paper towel using tongs so steak won't stick. Toss steak onto hot side of grill keeping in a shallow close pile. Add salt and pepper to taste. Squeeze juice of limes over steak. Toss frequently with tongs. Sear steak on outside to a nice deep brown leaving inside medium rare. This only takes about 1-3 minutes depending on how hot your grill is. Serve on warmed tortillas with toppings of choice. If wanting peppers and onions, toss them on the grill, too, with the steak. *No extra spices to mask the simple goodness of the steak. Incredibly delicious!! *Tortillas can also be grilled if preferred. **All grills differ, so just make sure you cut your steak pieces just large enough so that they don't fall through the grates, or use a mesh grill pan.

1 teaspoon kosher salt
1 teaspoon onion powder
2 pounds skirt steak, cut into 4 equal pieces
1/2 medium head green cabbage, cut into 2 wedges, core intact
1 large white onion, halved with some root end attached
1 bunch scallions, trimmed
6 tablespoons olive oil, divided
Kosher salt, freshly ground pepper
1/4 small red onion, finely chopped
3 tablespoons fresh lime juice
1 tablespoon chopped fresh cilantro

Steps:

  • For steak:
  • Purée garlic, lime juice, oil, paprika,
  • cilantro, cumin, salt, and onion powder in a
  • blender until smooth. Transfer marinade to
  • a resealable plastic bag and add steak. Seal
  • bag and turn to coat; chill at least 4 hours.
  • DO AHEAD: Steak can be marinated
  • day ahead. Keep chilled.
  • For vegetables and assembly:
  • Prepare grill for medium-high heat. (Alternatively, heat
  • a grill pan over medium-high heat.) Drizzle
  • cabbage, white onion, and scallions with 4
  • tablespoons oil; season with salt and pepper. Grill,
  • turning occasionally, until vegetables are
  • charred and softened, about 4 minutes for
  • scallions, 10-12 minutes for cabbage and
  • onion. Let vegetables cool slightly.
  • Core cabbage and cut into bite-size
  • pieces along with scallions and onion. Toss
  • chopped vegetables in a large bowl with
  • red onion, lime juice, cilantro, and remaining
  • tablespoons oil; season with salt and pepper.
  • Remove steak from marinade, scraping
  • off excess; season with salt and pepper.
  • Grill steak until medium-rare, about
  • minutes per side. Transfer to a cutting
  • board and let rest 5-10 minutes before
  • slicing. Serve steak with vegetables, tortillas,
  • and Dried Chile Salsa.

1 Tbsp. chili powder
1 beef skirt steak (1 lb.)
1 green pepper, cut into 1/2-inch-wide strips
1 red pepper, cut into 1/2-inch-wide strips
1 sweet onion, cut lengthwise in half, then crosswise into 1/2-inch-thick slices
1/2 cup Heinz BBQ Sauce Texas Bold & Spicy, divided
8 corn tortillas (6 inch)
1/2 cup KRAFT Shredded Monterey Jack Cheese
1/4 cup chopped fresh cilantro

Steps:

  • Heat greased grill to medium heat.
  • Rub chili power evenly into both sides of steak. Toss vegetables with 2 Tbsp. barbecue sauce; place in grill basket.
  • Reserve half the remaining barbecue sauce for brushing onto grilled steak just before serving. Grill steak and vegetables 10 min. or until steak is done (160ºF), turning and brushing steak with remaining barbecue sauce for the last few minutes and stirring vegetables occasionally. Remove steak from grill; brush with reserved barbecue sauce. Let stand 5 min.
  • Meanwhile, grill vegetables additional 2 to 4 min. or until tender and golden brown. About 1 min. before vegetables are done, grill tortillas 15 to 30 sec. on each side or just until warmed.
  • Cut steak across the grain into thin slices; place on tortillas. Top with vegetables, cheese and cilantro; roll up.
