GRILLED CHEESE-STUFFED BURGERS
These individually wrapped burgers are great to take along to picnics, cookouts or camping trips. The cheese is already stuffed inside, so all you need are your buns and condiments.

- 1. Preheat a grill over high heat. Divide the meat into four 6-ounce balls. Press 4 small cubes of cheese into the center of each ball and flatten into a 1/2-inch-thick patty about 4 inches in diameter, making sure the cheese stays wrapped in the meat. Sprinkle both sides of the patties evenly with 1 teaspoon salt and 1/2 teaspoon pepper. Wrap each burger in a piece of nonstick aluminum foil, twisting any excess foil at each end so the burger is wrapped in a single layer of foil only. Mix the ketchup and Worcestershire together in a small bowl.
- 2. Grill the burgers for 5 minutes per side. Remove from the grill and carefully open up the foil packets, allowing the steam to escape. Place the opened foil packets back on the grill, add a spoonful of sauce to the top of each patty and continue to cook until the patty is cooked to at least medium to allow the cheese inside to fully melt, another 4 to 6 minutes.
- 3. On the bottom half of each bun, spread a bit of sauce and top with a lettuce leaf, onion slice and tomato slice. Top with a patty, another spoon of the remaining sauce and the top of the bun. Serve with chips or fries.
30-MINUTE SOUTHWESTERN CHEESY STUFFED BURGERS
This Grilled Southwestern Cheesy Stuffed Burgers packs an amazing taste. This is a 30-minute gourmet burger unlike anything you have eaten before.

- Preheat your grill to high. Mix beef, seasoning and salt together, in a medium bowl. Form mixture into ¼" patties. Set aside one cup of cheese for topping. Scoop 2 ounces of the remaining cheese in the center of one patty place a second patty on top. Press the two together and crimp the edges with your fingertips sealing it so the cheese does not leak out. Repeat until all burgers are prepared. Make a slight indentation in the center of the burgers to prevent it from doming up in the center. The indentation will rise as your burger cooks. Grill until golden brown and slightly charred (about 5 minutes), turning once (cook for 4 minutes on the other side for medium). Avoid pressing with a spatula, you don't want the juice or cheese to escape! Carefully add 1 tablespoon of cheese to the top of each burger for the last minute of cooking. Set burger aside and allow to rest for 5 minutes before cutting. Place buns on grill (inside down) for about 1 minute, until they are golden. Remove buns and 1 tablespoon remaining cheese on top of bottom bun, then add burger, ¼ cup salsa and top bun. Serve and enjoy!

- In a large bowl, combine the first six ingredients. Crumble beef and sausage over mixture; mix well. Shape into eight patties. , Grill, covered, over medium heat for 5 minutes on each side or until a thermometer reads 160° and juices run clear. Top each burger with a cheese slice. , Grill 1-2 minutes longer or until cheese begins to melt. Serve on buns with the lettuce, tomato, avocado and mayonnaise or mustard if desired.

BEEF AND CHORIZO STUFFED BURGERS WITH CARAMELIZED ONIONS

- Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- For the caramelized onions: Add the butter, onions and a pinch of salt to a medium saute pan. Place the pan on the indirect heat side of the grill and cook, stirring occasionally until the onions are tender and deeply caramelized, about 1 hour. When ready, remove from the grill and set aside.
- In a mixing bowl, combine the beef and chorizo. Divide the mixture evenly between 8 deli container lids. Flatten the meat into each lid to create an even disk. Pop the 8 meat disks out of the lids. Add the cheese to the center of 4 of the meat disks, then top with the remaining 4 meat disk and seal the edges.
- Preheat a large cast-iron pan on the direct heat side of the grill. Season both sides of the burgers with salt and drizzle with olive oil. Place the burgers in the pan and immediately smash them with a spatula. Cook the burgers for about 2 minutes per side. Remove the burgers from the grill. Spread the mayo on the burger buns and toast them the indirect heat side of the grill.
- To build: To each bun, add some caramelized onions, a burger, the condiments of your choice and cilantro. Serve!
GRILLED SOUTHWEST STUFFED BURGERS

- Preheat greased grill to medium-high heat.
- Mix meat, 3 tablespoons of the Mayo and the seasoning mix; shape into 12 thin patties.
- Combine cheese with 2 tablespoons salsa.
- Spoon over 6 of the patties.
- Cover each with one of the remaining patties, making a 'sandwich', pinching edges together to seal.
- Grill approximately 7 minutes on each side, or until cooked through (160 degrees F).
- Meanwhile, combine remaining 2 tablespoons salsa with remaining 1 tablespoon Mayo.
- Place a lettuce leaf, tomato slice and burger on bottom half of bun.
- Top with salsa mixture; cover with top of bun.
