kosher salt, to taste
18 oz Sam's Choice® Italia Spaghetti
6.5 oz Sam's Choice® Italia Basil Pesto Sauce
2 cups zucchini, diced
1 lb sausage, grilled, sliced
grated parmesan cheese, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 10 minutes.
  • In a small pot, bring the sauce to a simmer over medium heat. Add the zucchini to the sauce and gently heat through, about 5 minutes.
  • Top the pasta with the sauce, grilled sausage and freshly grated Parmesan.
  • Enjoy!

Peppery arugula pesto is the perfect accompaniment to grilled Italian sausages. Save any extra pesto to use on other grilled meats or fish. It will last up to one week in the refrigerator.

1 bunch arugula (about 4 ounces), stems trimmed, washed
4 cloves garlic, peeled and smashed
1 cup freshly grated Parmesan cheese
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground pepper
1/2 cup extra-virgin olive oil
8 assorted Italian pork sausages (about 1 pound), both hot and sweet varieties

Steps:

  • Make the pesto: Place the arugula and garlic in the bowl of a food processor. Pulse until finely chopped, scraping down sides if necessary. Add cheese, salt, pepper, and olive oil, and puree until smooth and well combined.
  • Heat grill to medium-high heat. Prick sausages with fork to allow excess fat to drip. Grill until cooked through, about 4 minutes per side. Serve pesto over the grilled sausages.

2 herby Cumberland sausages , sliced in half lengthways
1 ciabatta roll , sliced in half
2 tbsp fresh pesto
1 roasted red pepper from a jar, sliced in half
½ x 125g ball mozzarella , sliced
handful rocket

Steps:

  • Heat grill to high. Put the sausages on a baking sheet, cut-side down, and grill for 5-6 mins or until cooked through, then set aside. Lay the ciabatta roll halves, cut-side up, on a baking tray and spread each with pesto. Top each half with a pepper and mozzarella slice, then grill for 2 mins or until golden and bubbling. Add the sausages and a handful of rocket, and put the roll back together, pressing down firmly to hold the fillings in place.
