1/4 cup orange juice
1/4 cup lemon juice
1/4 cup lime juice
1/4 cup orange marmalade
2 garlic cloves minced
3 Tablespoons Soy Sauce
1/4 cup brown sugar
1 Tablespoon Cornstarch
1 Tablespoon Water
Reynolds Wrap® Non-Stick Aluminum Foil
2 pounds salmon filet
Recipe for Pineapple Salsa
Sliced orange (lemon, and lime)

Steps:

  • In a medium sized saucepan whisk together orange juice, lemon juice, lime juice, orange marmalade, garlic, soy sauce, and brown sugar. In a small bowl combine cornstarch and water and whisk into the sauce. Heat to medium high heat and let simmer until it starts to thicken. Remove from heat.
  • Heat grill to medium high heat. On a sheet of Reynolds Wrap® Aluminum Foil place the salmon on top. Fold up the edges of the aluminum foil. Spread on half of the marinade. Place the foil on the grill and let the salmon cook for 10-12 minutes or until salmon is opaque and cooked throughout. Spread remaining marinade on top and serve.

4 teaspoons olive oil, divided
4 (6-ounce) salmon fillets, skin-on
2 teaspoons Essence, recipe follows
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 recipe Fruit Salsa, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
3/4 cup small diced pineapple
3/4 cup small diced mango
1/2 cup small diced strawberries
1/4 cup small diced red onion
1 jalapeno, stemmed, seeded and finely chopped
2 tablespoons chopped fresh mint leaves
2 tablespoons freshly squeezed orange juice
1 tablespoon freshly squeezed lime juice
1/4 teaspoon salt

Steps:

  • Preheat a grill to medium.
  • Brush both sides of the salmon with the olive oil. Season the salmon on both sides with the Essence, salt and pepper. Place the fish on the grill, skin side down and cook for about 3 minutes then turn the fish 45 degrees and cook for an additional 3 minutes. Turn the fish over and cook for an additional 2 minutes, or until cooked through to the desired degree of doneness.
  • Remove the fish from the grill and serve with the fruit salsa spooned over the fish. Serve immediately.
  • Combine all ingredients thoroughly.
  • In a medium non-reactive bowl, combine all of the ingredients and stir to blend. Cover with plastic wrap and allow the salsa to macerate for 20 to 30 minutes before serving.

4 salmon fillets, 6 ounces each
2 tablespoons soy sauce
1/2 tablespoon worcestershire sauce
1/2 tablespoon olive oil
1 cup pineapple chunks
1 sweet onion, sliced
1 lime

Steps:

  • For the Salmon: Place salmon filets on a sheet of foil. Combine the soy sauce and Worcestershire sauce, and then lightly pour over the salmon. Fold up the foil to wrap the salmon filets and set aside for about 30 minutes. Place the filets on a heated grill, keeping it on medium-high heat, and grill on each side for 10-15 minutes or until the salmon is completely cooked. For the Salsa: In a medium-sized saucepan, warm up the olive oil, then place the pineapple chunks and onion in the pan. Squeeze the juice from the lime in the pan and then let this sauté and simmer for about 10 minutes or until lightly browned and warmed. Serve the pineapple salsa over the salmon.

1 mango, peeled, seeded, cubed
1 cup chopped onion
1 cup chopped fresh pineapple
1/4 cup fresh cilantro or 1/4 cup basil
2 -4 chopped jalapenos
2 teaspoons lime juice
2 -3 dashes hot sauce
2 lbs center cut salmon fillets
2 tablespoons olive oil
2 tablespoons lemon juice
salt & pepper

Steps:

  • preheat grill to high.
  • in a medium bowl mix all the salsa ingredients.
  • cover and refrigerate for up to 3 days.

1 teaspoon cajun seasoning

14 ounces pineapple chunks, in own juice
1 cup cherry tomatoes (halved or quartered) or 1 cup grape tomatoes (halved or quartered)
1/2 cup chopped red onion
2 tablespoons chopped fresh parsley
1 tablespoon extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine first 5 ingredients in a small bowl; rub onto salmon.
  • Place salmon, skin side down, on greased grill over medium heat; close lid and cook, turning once, until fish flakes easily when tested, about 10 minutes -- OR bake in preheated 350F oven for about 10 minutes.

1 can (20 ounces) unsweetened pineapple tidbits
1 cup chopped seeded ripe tomatoes
3 green onions, sliced
1 jalapeno pepper, seeded and chopped
2 tablespoons cider vinegar
2 garlic cloves, minced
1-1/2 teaspoons sesame oil
1 teaspoon honey
1-1/2 teaspoons minced fresh gingerroot
1/4 teaspoon crushed red pepper flakes

  • Drain pineapple, reserving 1/4 cup juice.
