2 tablespoons white wine vinegar
2 tablespoons sugar
1 tablespoon dill weed
3/4 teaspoon salt
1/8 to 1/4 teaspoon pepper, optional
4 salmon steaks (1-inch thick and 6 ounces each)
MUSTARD DILL SAUCE:
3 tablespoons mayonnaise
3 tablespoons Dijon mustard
3 tablespoons dill weed
1 tablespoon sugar
4 teaspoons white wine vinegar
1/4 teaspoon pepper, optional

Steps:

  • In a large resealable plastic bag, combine the first five ingredients. Add salmon; seal bag and turn to coat. Refrigerate for 1 hour, turning occasionally. , In a small bowl, combine the sauce ingredients; cover and refrigerate until chilled., Discard marinade. Grill salmon, covered, over medium heat for 6-7 minutes on each side or until fish flakes easily with a fork. Serve with mustard dill sauce.

4 salmon steaks 1-inch thick
1 teaspoon whole cumin seed
1 teaspoon whole coriander seed
1/2 teaspoon whole fennel seed
1 teaspoon dry green peppercorns
Sea salt or kosher salt
Canola or olive oil to coat steaks

Steps:

  • Prepare grill by lighting 4 quarts of charcoal (1 starter chimney's worth), or turning gas grill to medium-high.
  • Examine steaks for pin bones by rubbing fingers over surface of meat. If found, remove with bone tweezers or pliers reserved for culinary uses.
  • Using a sharp paring or boning knife, trim bones from the cavity side of the steak. Trim the stomach flaps so that 1 side is missing about 2 inches of skin and the other, 1 inch of meat. Roll the skinless section up into the hollow of the cavity, then wrap the other around the outside to form a round resembling a filet mignon. Tie in place with 2 passes of butcher's twine. (Do not tie it too tight or fish will pop out during cooking.)
  • Combine cumin, coriander, fennel and peppercorns on a double thick piece of aluminum foil and toast over grill, shaking gently until seeds become fragrant. Crush seeds in mortar and pestle or pour into spare pepper grinder. Coat steaks lightly with oil, season with salt, then liberally grind toasted seeds on both sides of steaks.
  • Quickly wipe hot grill grate with a rag or towel dipped in a little Canola oil, then grill fish to medium rare, about 3 minutes per side. (Fish should be well colored on the outside and barely translucent at the center.
  • Serve steaks alongside simple salad dressed with "Veni, Vedi, Vinaigrette."

2 serrano chiles
2 garlic cloves
1 cup cilantro leaves with tender stems
1/2 cup plain whole-milk Greek yogurt
1 Tbsp. extra-virgin olive oil
1 tsp. honey
2 (12-oz.) bone-in salmon steaks
Kosher salt

Steps:

  • Prepare a grill for medium-high heat; oil grate. Remove and discard seeds from 1 chile. Purée both chiles, garlic, cilantro, yogurt, oil, honey, and 1/4 cup water in a blender until smooth; season well with salt. Transfer half of sauce to a small bowl and set aside for serving.

4 center-cut salmon steaks, 3/4-1-inch thick
2 whole lemons
fresh dill sprig
1 1/2 tablespoons butter
1 1/2 teaspoons cornstarch
1/2 cup cold water
1/3 cup fresh lemon juice
1 tablespoon snipped fresh dill
1/4 teaspoon salt
1/8 teaspoon dried chervil, can sub parsley (optional)
1 dash cayenne pepper (optional)
3 slices lemons, unpeeled and cut into quarters

Steps:

  • In small saucepan, melt butter over medium high heat, remove from heat when melted.
  • Combine cornstarch with water and stir into butter.
  • Add rest of sauce ingredients except lemon slice quarters.
  • Bring sauce to a boil over medium heat stirring constantly.
  • Cook, stirring, until sauce thickens and turns clear.
  • Remove from heat and add lemon slice quarters.
  • Cover and set aside.
  • (Makes about 2/3 cup, so you can double this if desired.).
  • For salmon:.
  • Cut off ends of each whole lemon, then cut each lemon into 2 one inch thick slices.
  • Lay salmon steaks flat and put one slice into the opening at each end of each salmon steak.
  • Using toothpicks, secure salmon around and to the lemon slices.
  • Position grill rack about 6-8" above hot coals.
  • Arrange salmon steaks on grill and cook 5-7 minutes.
  • Turn steaks over carefully and cook an additional 5-7 minutes or to desired doneness.
  • Fish should flake easily with a fork.
  • Remove from grill and place on heated serving platter.
  • Garnish steaks with fresh dill sprigs.
  • Spoon a bit of the hot lemon-dill sauce over each steak.
  • Serve the rest of the sauce separately for dipping.
  • Remind guests to remove the toothpicks! ;).

Transfer butter to a sheet of parchment or wax paper and roll into a 1-inch-thick cylinder. Twist ends of parchment to close, then chill until firm, about 20 minutes.
  • Prepare grill for direct-heat cooking over medium-hot charcoal.
  • Put salmon steaks on a cutting board with tail-like flaps nearest you. Halve 1 steak lengthwise by cutting along each side of large center bone. Remove and discard bones (you will end up with 2 thin pieces of fillet). Flip 1 piece over, turning it so rounded thicker portion is nearest you. 4 (8 ounce) skinless salmon steaks, boned and halved
kitchen twine
2 tablespoons sunflower seed oil
2 limes, zested and juiced, divided
salt and freshly ground black pepper to taste
6 fresh mild chile peppers, seeded
5 tablespoons olive oil
2 tablespoons sunflower seeds
2 cloves garlic

Steps:

  • Place salmon on a flat work surface. Roll the thin ends into the thicker end and tie with cooking twine. Brush with sunflower oil. Transfer salmon rolls into a glass dish. Top with juice and zest of 1 lime. Season with salt and pepper. Cover with plastic wrap; refrigerate until well marinated, about 2 hours.
  • Place remaining lime juice and zest, chile peppers, 1 tablespoon olive oil, sunflower seeds, and garlic in a food processor. Puree, pouring the rest of the olive oil in gradually, until pesto is blended and thick.

4 salmon steaks, 1 inch thick,thawed if frozen (4-6oz.)
1 cup mesquite wood chips
1/2 cup packed fresh basil leaf
3 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons honey
1/2 teaspoon fresh ground pepper
1/8 teaspoon salt
lemon slice
basil sprig

Steps:

  • Combine marinade ingredients in a blender container.
  • Process until smooth.

4 salmon steaks (about 3/4 inch thick; 6 to 8 ounces each)
Kosher salt and freshly ground pepper
2 tablespoons paprika
1 tablespoon packed light brown sugar
2 teaspoons ground cumin
2 teaspoons garlic powder
5 tablespoons sliced almonds
1/2 cup jarred roasted red peppers
2 tablespoons sherry vinegar
1/4 cup plus 2 teaspoons extra-virgin olive oil, plus more for the grill
1 1/2 pounds green and yellow wax beans, trimmed
1 cup fresh basil

Steps:

  • Preheat a grill to medium high. Season the salmon with salt and pepper. Combine the paprika, brown sugar, cumin and garlic powder in a small bowl. Rub the spice mix all over the salmon and set aside. Toast the almonds in a small skillet over medium heat, swirling the skillet, 4 to 6 minutes. Transfer to a plate.
  • Combine 1/4 cup toasted almonds, the roasted red peppers, vinegar and 1 tablespoon water in a blender. Puree until mostly smooth. With the machine running, slowly add 1/4 cup olive oil and puree until smooth; season with salt and pepper.
  • Oil the grill grates. Toss the beans with the remaining 2 teaspoons olive oil; season with salt and pepper. Put in a grill basket and grill, tossing occasionally, until charred and tender, 8 to 10 minutes. Rub the salmon with olive oil and grill until well-marked, 3 to 4 minutes per side for medium doneness.
  • Toss the beans with the basil and divide among plates. Sprinkle with the remaining almonds. Add the salmon to the plates and top with the sauce.

4 salmon steaks (each weighing approx. 8 oz)
3 tablespoons olive oil
2 tablespoons lemon juice
1 spring onion, minced
6 tablespoons limoncello
1 teaspoon oregano
2 tablespoons minced parsley

Steps:

  • Rinse and pat dry the salmon steaks.
  • In a bowl large enough to contain the fish, whisk together olive oil, lemon, onion, liqueur, oregano and salt and freshly ground pepper.
  • Turn the salmon steaks in the marinade, to coat both sides, and leave to marinate, in the refrigerator, for 3-6 hours.
  • Remove the steaks from the marinade and cook on the bbq or grill for 10-12 minutes, turning once, until the fish is firm to the touch.
  • Careful not to overcook.
  • Serve immediately with a tossed green salad and oven-roasted cauliflower.

4 (10-ounce) salmon steaks, 1 to 1 1/2 inches thick
Salt and pepper
2 tablespoons olive oil
1 teaspoon grated lemon zest and 6 tablespoons juice (2 lemons)
1 shallot, minced
3 tablespoons unsalted butter, cut into 3 pieces
1 tablespoon capers, rinsed
2 tablespoons minced fresh parsley
1 (13 by 9-inch) disposable aluminum roasting pan

Steps:

  • 1. Pat salmon steaks dry with paper towels. Working with 1 steak at a time, carefully trim 1 1/2 inches of skin from 1 tail. Tightly wrap other tail around skinned portion and tie steaks with kitchen twine. Season salmon with salt and pepper and brush both sides with oil. Combine lemon zest, lemon juice, shallot, butter, capers, and 1/8 teaspoon salt in disposable pan. 2A. For a charcoal grill: Open bottom vent completely. Light large chimney starter filled with charcoal briquettes (6 quarts). When top coals are partially covered with ash, pour evenly over half of grill. Set cooking grate in place, cover, and open lid vent completely. Heat grill until hot, about 5 minutes. 2B. For a gas grill: Turn all burners to high, cover, and heat grill until hot, about 15 minutes. Leave primary burner on high and turn off other burner(s). 3. Clean and oil cooking grate. Place salmon on hot part of grill. Cook until browned, 2 to 3 minutes per side. Meanwhile, set pan on cool part of grill and cook until butter has melted, about 2 minutes. Transfer salmon to pan and gently turn to coat. Cook salmon (covered if using gas) until center is still translucent when checked with tip of paring knife and registers 125 degrees (for medium-rare), 6 to 14 minutes, flipping salmon and rotating pan halfway through grilling. Remove twine and transfer salmon to platter. Off heat whisk parsley into sauce. Drizzle sauce over steaks. Serve.

1/4 c lime juice
1 Tbsp freshly ground black pepper
4 9-oz salmon steaks
lime wedges, for serving

Steps:

  • 1. Combine first 3 ingredients. Place salmon in glass baking dish. Pour lime butter over. Let salmon marinate while preparing barbecue or preheating broiler.
  • 2. Prepare barbecue (medium-high heat) or preheat broiler. Cook salmon until just opaque, brushing with lime butter marinade occasionally, about 4 minutes per side.
  • 3. Transfer to plates. Brush with any remaining lime butter. Serve immediately with lime wedges.
