SWEET AND SOUR SALMON



Sweet and Sour Salmon image

Sweet and Sour Salmon. Broiled salmon filets brushed with a quick and easy sweet and sour sauce!

4 salmon filets (skin on)
2 tablespoons low sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon granulated sugar
2 tablespoons thai chili sauce
3 cloves garlic
1/2 teaspoon cornstarch
green onions for garnish (if desired)
sesame seeds for garnish (if desired)

Steps:

  • Preheat the oven to broil and position the oven rack to the top rack. Line a baking sheet with foil and spray with non stick cooking spray. Place the salmon filets skin side down on the prepared baking sheet, set aside.
  • In a small saucepan combine soy sauce, vinegar, sugar, thai chili sauce, garlic and cornstarch. Bring to a simmer and whisk constantly until the sauce has thickened.
  • Brush half of the sauce on top the salmon filets. Place in the oven and broil for 8-10 minutes or until the salmon is fully cooked, brushing the remaining sauce on top halfway through cooking. If the salmon starts to get too brown move the rack down some.
  • Once the salmon has cooled a bit remove the skin and serve immediately with green onions and sesame seeds for garnish, if desired.

Sweet and Spicy Grilled Salmon image

The decadent-tasting "good" fat in salmon complements the sweet-spicy Buffalo glaze. The skin gets caramelized and crisp on the grill as the sauce drips onto it. It's delicious, but can be discarded to save fat and calories. (The numbers below include the skin.) A crisp and refreshing celery slaw is dressed with the same sauce, made creamy with light mayo, and brightened with onions and chives.

2 tablespoons hot sauce, such as Frank's
1 tablespoon packed dark brown sugar
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
2 tablespoons light mayonnaise
1 tablespoon snipped chives
8 stalks celery, very thinly sliced in half moons on an angle
1/2 small red onion, very thinly sliced
Four 5-ounce center-cut skin-on salmon fillets, about 1-inch thick
Kosher salt and freshly ground black pepper
Vegetable oil, for oiling the grill

Steps:

  • Preheat an outdoor grill or grill pan on medium high.
  • Mix together the hot sauce, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well.
  • Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more.
  • Transfer the fillets to individual plates and serve with the celery slaw.

Onion, Cucumber, and Coriander Pickles:
¼ cup coriander seeds
1 large red onion (about 1lb), diced into ⅜" squares
2 teaspoons fine sea salt
12 Persian cucumbers, ¼" to ⅜" dice
¼ cup apple cider vinegar
Dusting:
1 ½ teaspoons fine sea salt
½ teaspoon black pepper
1 teaspoon ground turmeric
1 tablespoon all-purpose flour
Fish:
4-6 thick skinless salmon fillets
¼ cup olive oil, divided
5 cloves garlic, finely grated
1 cup apple cider vinegar
2 tablespoons date molasses
1 scant teaspoon cayenne
1 tablespoon dried fenugreek leaves
5 medjool dates, pitted and halved
1 cup fresh herbs such as cilantro leaves, basil leaves, or chopped spring onions, for serving
Kateh, for serving (optional)

Steps:

  • Onion, Cucumber, and Coriander Pickles:
  • In a medium-sized skillet over low heat, toast the coriander seeds, shaking the skillet constantly until the aroma rises. Remove from heat and set aside.
  • In a large mixing bowl, place the onion, salt, and coriander seeds, and toss. Add the cucumber and pour the vinegar over it. Toss well and set aside.
  • Do Ahead: This pickle can be stored in an airtight container in the fridge for up to 3 days.
  • For the fish:
  • In a small bowl, mix together all the dusting ingredients and set aside.
  • Rinse the fish and pat dry. Place fillets on a sheet pan lined with parchment paper.
  • Dust both sides of the fish fillets and arrange on the sheet pan. Cover and keep cool until ready to cook.
  • Heat 2 tablespoons oil in wide, non-stick skillet a over high heat until very hot, but not smoking. Sear the fish until brown on both sides (about 1 minute on each side). Remove the fish from heat and set aside.
  • In the same pan, add 2 tablespoons oil, reduce heat to medium heat, add the garlic and stir-fry for 1 to 2 minutes until golden brown.
  • Add the vinegar, molasses, cayenne, and fenugreek leaves, and give it a stir. Return the fish to the pan and simmer for 10 to 15 minutes over low heat until the fish is tender and the sauce has thickened. Adjust seasoning to taste. Add the dates, cover and keep warm until ready to serve.
  • Serve over rice, with a bowl of fresh herbs and the onion and cucumber pickle.

1 1/2 pounds Spanish onions
1 teaspoon olive oil
2 teaspoon coarsely grated unpeeled ginger
1/4 cup red-wine vinegar
10 ounces salmon fillet
3/4 cup seedless green grapes
1 teaspoon minced fresh oregano
1 teaspoon minced fresh thyme
Freshly ground black pepper to taste

Steps:

  • Peel and cut onions into quarters or eighths and slice in food processor.
  • Heat oil in nonstick skillet and saute onion, partly covered, about 10 minutes.
  • When onion begins to soften, stir in ginger and vinegar; cover and continue cooking over low heat until onion is soft, 5 minutes more.
  • Wash and dry fish. Grill on stove-top grill, or broil. Measure fish at thickest point, and cook 8 to 10 minutes to the inch.
  • Wash and stem grapes. Add grapes, oregano and thyme to onion; season with pepper and cook, covered, until the rest of the meal is ready, a few minutes longer. Arrange salmon on two dinner plates and top with onion-grape mixture.

1 side fresh salmon, boned but skin on (about 3 pounds)
2 tablespoons Dijon mustard
3 tablespoons good soy sauce
6 tablespoons good olive oil
1/2 teaspoon minced garlic

Steps:

  • Light charcoal briquettes in a grill and brush the grilling rack with oil to keep the salmon from sticking.
  • While the grill is heating, lay the salmon skin side down on a cutting board and cut it crosswise into 4 equal pieces. Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl. Drizzle half of the marinade onto the salmon and allow it to sit for 10 minutes.
  • Place the salmon skin side down on the hot grill; discard the marinade the fish was sitting in. Grill for 4 to 5 minutes, depending on the thickness of the fish. Turn carefully with a wide spatula and grill for another 4 to 5 minutes. The salmon will be slightly raw in the center, but don't worry; it will keep cooking as it sits.
  • Transfer the fish to a flat plate, skin side down, and spoon the reserved marinade on top. Allow the fish to rest for 10 minutes. Remove the skin and serve warm, at room temperature, or chilled.
