4 teaspoons olive oil, divided
4 (6-ounce) salmon fillets, skin-on
2 teaspoons Essence, recipe follows
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 recipe Fruit Salsa, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
3/4 cup small diced pineapple
3/4 cup small diced mango
1/2 cup small diced strawberries
1/4 cup small diced red onion
1 jalapeno, stemmed, seeded and finely chopped
2 tablespoons chopped fresh mint leaves
2 tablespoons freshly squeezed orange juice
1 tablespoon freshly squeezed lime juice
1/4 teaspoon salt

Steps:

  • Preheat a grill to medium.
  • Brush both sides of the salmon with the olive oil. Season the salmon on both sides with the Essence, salt and pepper. Place the fish on the grill, skin side down and cook for about 3 minutes then turn the fish 45 degrees and cook for an additional 3 minutes. Turn the fish over and cook for an additional 2 minutes, or until cooked through to the desired degree of doneness.
  • Remove the fish from the grill and serve with the fruit salsa spooned over the fish. Serve immediately.
  • Combine all ingredients thoroughly.
  • In a medium non-reactive bowl, combine all of the ingredients and stir to blend. Cover with plastic wrap and allow the salsa to macerate for 20 to 30 minutes before serving.

2 mangoes, peeled, pitted and cut into chunks
1 red onion, chopped
6 red radishes, chopped, plus 1 sliced for garnish
2 limes, peeled and cut into segments
1 handful fresh cilantro leaves
2 tablespoons extra-virgin olive oil
1 teaspoon Southwest Spice Mix, recipe follows
1 (2 to 3 pound) salmon fillet
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 ancho chiles, stemmed and seeded
2 tablespoons whole cumin
2 tablespoons whole coriander
1 cinnamon stick
1 tablespoon sweet paprika

Steps:

  • For the Salsa, put all the ingredients into a food processor and pulse until finely chopped; set aside.
  • Heat the grill to medium high.
  • Drizzle some olive oil over the salmon and season it with salt and pepper. Gently rub 2 tablespoons of the Spice Mix into the salmon. Pour some olive oil onto a paper towel and rub the grill with it - this will help to prevent the fish from sticking. Grill the salmon flesh side down for about 12 to 15 minutes.
  • To serve, spread most of the Salsa onto a platter and place the salmon, skin side down, on top. Garnish with more Salsa, radish slices, cilantro, and a drizzle of olive oil.
  • Put the ancho chiles, cumin, coriander, cinnamon stick, and paprika into a small dry skillet over medium-high heat, and toast the spices just until they begin to smell, about 1 minute. Empty into a spice mill and grind to a powder.

1/2 red onion, chopped
1 jalapeno, chopped
1 mango, diced
1 avocado, diced
fresh cilantro, chopped
2 limes, juice of
salt & pepper

Steps:

  • Season (I only used salt & pepper) the salmon, and grill it. You can use a skillet, if you don't want to go outside and grill.
  • In the mean time, combine the rest of the ingredients in a bowl.
  • When the salmon is cooked to your taste, serve it with the fresh salsa on top, and surrounding it. You will have "leftover" salsa, that you might just eat it by itself, since it's so good.
  • It is very simple, but yet, really tasty!

Fresh Salmon is just the best. I go fishing in Alaska once a year and bring home a fair amount. Testing different peoples recipes is great. This one is from EMERIL. I keep some of his Essence on hand at all times. The fruit salsa is so refreshing and a great summer time addition to the fish. I have not tried it on other fish but I am sure it would be great.
