ROAST BEEF WITH YORKSHIRE PUDDING, GRILLED EGGPLANT AND PEA, MINT, AND AVOCADO SALAD

Roast Beef with Yorkshire Pudding, Grilled Eggplant and Pea, Mint, and Avocado Salad image

Provided by Nigella Lawson : Food Network

Categories     main-dish

Time 2h35m

Yield 8 to 10 servings

Number Of Ingredients 23

5 pounds beef roast
4 tablespoons olive oil
5 sprigs rosemary leaves, chopped
1 1/4 cups milk
4 eggs
Scant 1/2 teaspoon salt
Freshly ground black pepper
1 1/2 cups all-purpose flour, sifted
1 tablespoon beef drippings or vegetable oil
2 tablespoons garlic infused oil, plus more if needed
1 eggplant
Salt
1 tablespoon snipped chives
Freshly cracked black pepper
1/2 a lemon, juiced
9 tablespoons extra-virgin olive oil, plus more, if needed
1 1/2 tablespoons good white wine vinegar
Fat pinch superfine sugar
Bunch mint leaves, chopped
1 pound shelled peas (about 3 1/2 pounds unshelled)
1 package (10 ounces) mixed salad greens
2 heads Belgian endive, separated into leaves
3 ripe avocados, cut into bite-size chunks

Steps:

  • To make the beef roast, preheat the oven to 475 degrees F.
  • Place the beef roast on a clean work surface and rub with the olive oil and chopped rosemary.
  • Place into the preheated oven and cook for 15 minutes and then turn the heat down to 350 degrees F. Cook for about 15 minutes per pound for rare meat, about 1 hour and 15 minutes. Remove from the oven and let rest, covered, for about 15 minutes before slicing.
  • To make the Yorkshire Pudding, preheat the oven to 450 degrees F. Mix the milk, eggs, and salt, and add pepper, beating all well together. I use my freestanding mixer but a hand-held electric mixer, rotary, or balloon whisk would do. Let these ingredient stand for 15 minutes and then whisk in the flour. Meanwhile, add the drippings a large heat-proof pan and put it in the oven to heat for about 10 minutes. Into this intensely hot pan you should pour in the batter and cook for 20 minutes, or until well puffed and golden. Bring it, triumphant, to the table.
  • To make the grilled eggplant, place the garlic-oil into a shallow dish and set aside. On a clean work surface, slice the eggplant into long, thin slices and then place into the garlic-oil, turning to coat.
  • Preheat a griddle or stove top grill pan and then place each eggplant slice onto the grill. Cook about 2 to 3 minutes and then turn, and cook 2 to 3 minutes more. Remove the grilled slices to a platter and drizzle with more of the garlic-oil. Garnish with coarse salt, cracked black pepper, lemon juice and snipped chives.
  • To make the pea, mint and avocado salad, first make the dressing: put the oil, vinegar, and sugar into a large bowl and then put in a decent handful of the chopped mint. Stir well so all is amalgamated. Cook the peas for 2 minutes or so in salted boiling water, just so that they're ready, but not soft. Taste after 2 minutes and keep tasting. Drain the peas in a colander, put them straightaway into the bowl of dressing, and let steep for 1 hour or up to a day.
  • Just before serving, stir in the mixed greens, the endive, and the avocado. You may need to drizzle a bit more oil after tossing. Serve this on a big plate. Sprinkle with some more of the chopped mint.

1 2-4 pound chuck roast
2 Tbsp meat tenderizer plain
1 Tbsp toasted cumin
1 Tbsp adobo
2 clove fresh garlic, minced
1 Tbsp onion powder
2 Tbsp peppercorn medley
1 tsp red pepper flakes
1/2 c dark brown sugar
GRILLED SWEET POTATOES
4 large fresh sweet potatoes, peeled and quartered
4 Tbsp dark brown sugar
1/4 c garlic flavored olive oil
1/2 c chopped fresh cilantro
1 tsp sea salt
BLACK BEANS
1 can(s) black beans, drained and washed
1/4 c chopped fresh cilantro
GARNISH
4 large limes, quartered
1/2 c fresh cilantro, chopped

Steps:

  • 1. Rub chuck roast on both sides with meat tenderizer then place on platter to rest.
  • 2. Add toasted cumin, adobo, minced garlic, onion powder, and ground peppercorn medley, red pepper flakes, and dark brown sugar; mix well.
  • 3. Coat both sides of chuck roast and place uncovered in refrigerator for 30 minutes to 1 hour.
  • 4. While roast is resting start sweet potatoes. Peel and quarter sweet potatoes.
  • 5. Fill a 4-quart pot 2/3 with water and add salt. Place on medium-high heat.
  • 6. Add peeled and quartered sweet potatoes and cook for 10 minutes.
  • 7. Remove from pot and place on foil-lined pan. Drizzle with garlic flavored olive oil and sprinkle with fresh cilantro and dark brown sugar. Set aside.
  • 8. Using a charcoal grill, build a medium-hot fire on one side of grill to place roast. Then place aluminum foil with sweet potatoes on side without fire. Make sure you poke at least 12 holes in foil so smoke and heat get to all potatoes. Close cover and grill for 7 minutes.
  • 9. Then turn chuck roast and grill another 7 minutes. Turn potatoes each time you turn roast. Potatoes need to be fork tender so they may need an extra few minutes.
  • 10. Remove roast to a baking sheet tent with foil and place in a 375 degree preheated oven to bake for 20-30 minutes.
  • 11. If you like your meat medium to well, you may want to leave in oven longer. We like it pink in the middle remove from oven to rest. Place sweet potatoes and black beans in large bowl add the juice of one lime and fresh cilantro and toss gently.
  • 12. Remove tent from roast and slice on the diagonal place in center of platter spoon sweet potatoes and bean mixture around sliced roast and squeeze the juice of 1 lime over entire platter. Cut 2 limes into quarters and place over and around dish.

GRILLED PEPPERCORN-CRUSTED ROAST BEEF WITH PORT WINE SAUCE

Grilled Peppercorn-Crusted Roast Beef With Port Wine Sauce image

Living in Florida I love to find great recipes that can be grilled outside to keep the house cooler. This is one I found in Cuisine at Home Magazine and I added garlic powder to the seasoning. This isn't your large standard size roast that feeds a group but rather a small 1 or 1 1/4 pound Eye of Round Beef Roast. If it is tricky to find this size, ask the butcher to cut a larger one in half, or buy the larger roast and cut in half and freeze one of the parts for another time. This was served with horseradish mashed potatoes.

Provided by diner524

Categories     Roast Beef

Time 1h

Yield 1/2 cup of sauce, 2 serving(s)

Number Of Ingredients 13

1 -1 1/4 lb beef eye round
garlic powder
salt
coarsely ground black peppercorns
1 teaspoon butter
2 tablespoons shallots, chopped
1 tablespoon butter, softened
1 1/2 teaspoons Dijon mustard
1 teaspoon all-purpose flour
1 1/2 cups tawny port
1/2 cup chicken broth
1/4 teaspoon red wine vinegar
salt and pepper

Steps:

  • For the roast:.
  • Heat one side of the grill to high; leave the other side unlit.
  • Season the roast with salt and garlic powder on all sides, then press top and bottom into cracked black pepper.
  • Grill roast over direct heat for 5 minutes, then turn roast over and grill 5 minutes more. Transfer beef to the unlit side of grill and roast to an internal temperature of 140 degrees, 30-40 more minutes, turning every ten minutes. Remove roast from grill and let it rest 5-10 minutes before slicing.
  • For the Sauce:.
  • Saute shallots in 1 teaspoon butter in a saucepan over medium-high heat, until beginning to brown, 1-2 minutes.
  • Combine 1 tablespoon butter, Dijon and flour in a small bowl; set aside.
  • Add Port and broth to shallots. Bring to a boil and reduce to 1/2 cup, 10-12 minutes. Strain and discard shallots; return liquid to pan and bring to a simmer over medium heat. Whisk butter-flour mixture into sauce and simmer until thickened, 1 minute. Finish with vinegar, salt and pepper to taste.

GRILLED ROAST BEEF AND HORSERADISH CHEDDAR NAAN

Grilled Roast Beef and Horseradish Cheddar Naan image

This recipe came as an accident in an attempt to clean out the fridge. I love hot roast beef sandwiches with horseradish cheddar cheese. I opened the fridge and knew I needed to use that Naan (flatbread), but I wanted a sandwich. Then everything just fell into place...I said, "carmelized onions would be great!" Then I was sad...

Provided by Sherry Blizzard

Categories     Steaks and Chops

Time 15m

Number Of Ingredients 9

THINGS YOU WILL NEED:
2 naan (indian flatbread)
1/2 onion, slices about 1/4"
5-6 roast beef slices (from the deli)
1 c horseradish cheddar cheese (grated or slices to cover roast beef
5-6 pepperoncini peppers, stems and seeds removed rough chop
2 Tbsp mustard (coarse or german style) i used trader joe's garlic aoli mustard
2 Tbsp butter
1 Tbsp olive oil

Steps:

  • 1. Slice onions and caramelize in butter and olive oil. Remove with a slotted spoon to a bowl.
  • 2. Grate horseradish cheddar and rough chop peppers.
  • 3. Lightly spread mustard on Naan. Layer roast beef slices, then onions, grated horseradish cheddar, top with peppers.
  • 4. Place on a preheated barbecue grill (350). Turn after a few minutes to get good grill marks on the bottom and get a crispy, "wood oven-like" crust. WATCH it carefully....keep the heat low and move so as not to burn the bottom. When cheese is melted and is heated through, remove to plates.
  • 5. I bought prepackaged Naan, but here is a website to make your own. I'm going to try this too. http://allrecipes.com/Recipe-Tools/Print/Recipe.aspx?recipeID=14565&origin=detail&servings=14&metric=false

GRILLED ROAST BEEF

Grilled Roast Beef image

Provided by Mark Bittman

Categories     dinner, roasts, main course

Time 2h30m

Yield 6 servings

Number Of Ingredients 3

1 5- to 7-pound standing rib roast
Salt and freshly ground black pepper
1 clove garlic

Steps:

  • Prepare a grill for indirect cooking. If gas, turn only one side on, or just the front or back burner, depending on grill's configuration. Placing an aluminum tray of soaked wood chips over flames to impart a wood flavor to meat is optional. If grilling over wood or charcoal, build a fire on one side of grill only.
  • Sprinkle meat liberally with salt and pepper. Cut the garlic clove and rub all over meat. If you want intense garlic flavor, cut slivers of garlic and use a sharp, thin-bladed knife to insert them into meat.
  • Place roast directly on cool side of grill and cover. Monitor meat's temperature and keep fire alive, checking every 30 minutes or so. Target internal temperature for meat is just over 120 degrees for rare, 125 degrees for medium-rare (meat's temperature will climb about 5 degrees after you take it off grill). A 5-pound roast will be done in under 2 hours; a 7-pounder in just over 2 hours. Let meat rest before slicing and serving.
