2 large English hothouse cucumbers
1/3 cup red wine vinegar
1 tablespoon sugar
1 teaspoon salt
3 large tomatoes, seeded, coarsely chopped
2/3 cup coarsely chopped red onion
1/2 cup chopped fresh mint
3 tablespoons olive oil

Steps:

  • 6 SERVINGS Cut cucumbers in half lengthwise; scrape out seeds. Cut halves diagonally into 1/2-inch-wide pieces. Place in large bowl. Add vinegar, sugar and salt. Let stand at room temperature 1 hour; toss occasionally.
  • Add tomatoes, red onion, mint and oil to cucumbers and toss to blend. Season salad with salt and pepper.

2 red onions, peeled and sliced 1/2-inch thick, crosswise
Olive oil
Salt and pepper
3 cucumbers, peeled, halved lengthwise and sliced 1/2-inch thick
3 tablespoons finely chopped fresh oregano
1/2 cup crumbled feta cheese
1 cup plain yogurt, drained in fine sieve about 30 minutes
2 tablespoons tahini
1 tablespoon olive oil
2 tablespoons fresh lemon juice
2 cloves garlic, finely chopped
1/4 teaspoon cumin
1/4 cup mint chiffonade
Salt and freshly ground pepper

Steps:

  • Preheat grill. Brush both sides of the onion slices with olive oil and season with salt and pepper to taste. Grill on each side for 2 to 3 minutes. Just to obtain grill marks and cook slightly. Remove from grill and coarsely chop. Combine onions in a medium bowl with cucumber, oregano and toss with the yogurt-mint dressing. Season with salt and pepper to taste. Sprinkle with feta cheese.
  • Whisk all ingredients together in a medium bowl and season with salt and pepper, to taste. Serve immediately.

2 cucumbers, peeled and very thinly sliced
1/2 red onion, thinly sliced
2 teaspoons salt
1/2 cup plain yogurt
3/4 teaspoon ground cumin
2 tablespoons olive oil
2 teaspoons lemon juice
1/4 cup fresh basil or 1/4 cup of fresh mint
fresh ground black pepper, to taste

Steps:

  • In a large bowl toss together the cucumbers, onion, and salt. Add cold water to cover the mixture by 1 inch and refrigerate for 30 minutes.
  • Drain the vegetables, pressing out as much water as possible, and return them to the bowl. Stir in the remaining ingredients and refrigerate salad until ready to serve.
