Nonstick cooking spray, for the grill grates
3 to 4 large russet potatoes, cut lengthwise into 1/4- to 1/2-inch oval slices
Kosher salt and freshly ground black pepper
Garlic Oil, recipe follows
4 cloves garlic
3/4 teaspoon kosher salt
1 cup extra-virgin olive oil
2 tablespoons finely diced fresh chives
2 tablespoon chopped fresh parsley
Juice of 1/2 lemon

Steps:

  • Heat grill to medium heat and oil the grates with cooking spray.
  • Add the sliced potatoes to a rimmed tray or baking dish. Sprinkle with salt and pepper on both sides. Pour 1/2 cup Garlic Oil over the potatoes and toss gently to coat. Add the potatoes to the hot grill, then brush with the remaining oil mixture. Grill, flipping the potatoes once, until golden brown, about 5 minutes per side.
  • Mash together the garlic and 1/2 teaspoon salt with a knife or bench scraper on a cutting board until it is a paste. Add the garlic to a small saucepan with the oil, chives, parsley, lemon juice and remaining 1/4 teaspoon salt. Cook over medium-low heat until the ingredients have combined, 3 to 4 minutes. Use as a marinade for potatoes, brush on rolls before toasting or brush on proteins for extra flavor.

5 medium red potatoes, sliced into 1/4 inch slices
1/3 cup mayonnaise
1/3 cup sour cream
2 tablespoons minced chives, plus more for garnish
1/4 teaspoon kosher salt, plus a pinch more
1/4 teaspoon pepper
1/2 teaspoon garlic, powde

Steps:

  • Place sliced potatoes in pot and cover with water. Bring to a boil and cook just until fork tender, 3 - 4 minutes. Drain.
  • In a bowl combine mayonnaise, sour cream, chives, salt, pepper and garlic powder. Mix well.
  • Preheat grill.
  • Reserve 1/4 cup of chive sauce. Dip boiled potatoes into remaining chive sauce, coat completely. Repeat until all potatoes are coated.
  • Place potatoes on the grill and cook until browned and tender.
  • Transfer to a plate. Sprinkle with kosher salt. Place a dollop of remaining chive sauce on each of the potatoes. Garnish with chopped chives.
  • Serve.

1/2 cup mayonnaise
2 garlic cloves, smashed to a paste
1 heaping tablespoon Dijon mustard
1 heaping tablespoon whole grain mustard
Kosher salt and freshly ground black pepper
2 1/2 pounds baby Yukon gold potatoes, scrubbed
2 tablespoons finely chopped fresh flat-leaf parsley leaves
1 tablespoon finely chopped fresh chives
1 tablespoon finely chopped fresh tarragon

Steps:

  • 1. Whisk together the mayonnaise, garlic, and both mustards in a small bowl; season with salt and pepper. Cover the aioli and refrigerate for at least 30 minutes and up to 1 day.
  • 2. Put the potatoes in a pot, cover with cold water by 2 inches, and add 2 tablespoons salt. Bring to a boil over high heat and cook until a skewer inserted into the center of a potato meets some resistance, 15 to 20 minutes. Drain well and let cool slightly.
  • 3. Heat your grill to medium for direct grilling.
  • 4. Put the potatoes in a large bowl, toss with the aioli, and season with salt. Grill until golden brown on all sides, about 8 minutes.
  • 5. Transfer the potatoes to a platter, sprinkle with the fresh herbs, and season with salt and pepper.

2 pounds large Yukon Gold or other yellow-fleshed potatoes
1/4 cup chopped mixed herbs such as parsley, chives, rosemary, and oregano
2 garlic cloves, smashed
1/3 cup extra-virgin olive oil
1 lemon wedge plus additional for serving

Steps:

  • Prepare a gas grill for direct-heat cooking over medium-high heat; see Grilling Procedure .
  • Cut potatoes into 1/2-inch-thick slices and cook in a large pot of well-salted boiling water 10 minutes (potatoes will not be cooked through).
  • Meanwhile, stir together herbs, garlic, oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large shallow dish.
  • Drain potatoes well and transfer to herb oil, tossing gently to coat.
  • Transfer potatoes to grill, letting excess oil drip into dish (reserve oil in dish). Grill potatoes, covered, turning once or twice, until tender, about 5 minutes total. Return potatoes to dish and toss again with herb oil. Squeeze lemon wedge over potatoes. Season with salt and serve with additional lemon wedges.

6 red potatoes, scrubbed
6 tablespoons unsalted butter
6 tablespoons chopped fresh chives
1 teaspoon finely grated lemon peel
nonstick vegetable oil cooking spray

Steps:

  • Cook potatoes in large pot of boiling salted water until tender, 25 to 30 minutes. Drain. Cut potatoes in half; place cut side up on rimmed baking sheet. Press each gently with fork to flatten slightly.
  • Stir butter, chives, and lemon peel in medium saucepan over medium heat until butter melts; season with salt and pepper. Brush some chive butter over potatoes.
  • Coat grill rack with nonstick spray. Prepare barbecue (medium-high heat).
  • Grill potatoes, cut side down, until cut side is crisp and brown, 10 to 12 minutes.
  • Rewarm remaining chive butter. Transfer potatoes, cut side up, to platter. Drizzle with warm chive butter.
