Large slices of baking potatoes that are lightly brushed with olive oil, sprinkled with Mrs. Dash®, and grilled to perfection. A delicious alternative to your plain baked potato! Works great on indoor or outdoor grills.

2 large baking potatoes, scrubbed and patted dry
2 tablespoons extra-virgin olive oil, divided, or to taste
½ teaspoon salt-free seasoning blend (such as Mrs. Dash®), or to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Cut a small slice off the bottom of each potato to prevent them from rolling back and forth on the cutting board. Slice potatoes into 1/4-inch slices on the widest side.
  • Lay slices flat on a large cookie sheet. Lightly brush one side with 1 tablespoon olive oil. Sprinkle with seasoning.
  • Place potatoes on the hot grill, seasoned side-down. Brush with remaining tablespoon oil and sprinkle seasoning over the second side. Close lid and cook for 15 to 20 minutes, turning once halfway through.

This is fast and easy... and so good! We do this with other veggies too, potatoes, carrots, turnips, etc. The caramelization of the veggies mingled with the smokey flavor from grilling makes this just wonderful! .

3 large sweet potatoes (sliced about 1 inch thick on an angle)
1 - 2 Tbsp olive oil (or butter)
salt to taste (optional)

Steps:

  • 1. Oil or butter both sides of the sweet potatoe slices. Set on the grill to get grill marks on both sides. Poke holes in aluminum foil. Oil the foil. Place foil on grill. Oil or butter the slices of sweet potato and place on the foil. Cook over medium heat for 10 minutes. Turn over. Cook 10 - 15 minutes longer, they should be tender. (If using salt, add it after you flip potatoes over).
  • 2. I likt to cut the potatoes on an angle to give them a pleasing shape. *** If you don't want the grill marks you can skip that part... but it is pleasing to look at.

1 pound potatoes, preferably fingerling, cut lengthwise into 1/4-inch-thick slices
2 cups white vinegar
2 tablespoons extra-virgin olive oil
1 1/2 teaspoons coarse salt, plus more for sprinkling
1/4 teaspoon freshly ground pepper

Steps:

  • Bring potatoes and vinegar to a boil in a medium saucepan (vinegar should cover potatoes). Reduce heat to medium-low, and simmer potatoes until just fork tender, about 5 minutes. Let potatoes cool in vinegar for 30 minutes. Drain well, and gently toss with oil, salt, and pepper.
  • Preheat grill to medium-high. Grill potatoes in a single layer until browned on both sides and cooked through, about 5 minutes per side. Sprinkle with salt before serving.

I'm actually quite surprised it is not already on 'Zaar but I do need to save it for future reference as my goal is to one day not have one cut-out recipe anywhere in my kitchen but have them all saved here on 'Zaar. :)

6 large potatoes
1/2 cup olive oil
salt and pepper, to taste (is an option instead of the salt & pepper) or garlic salt (is an option instead of the salt & pepper)

Steps:

  • Boil potatoes until almost tender - about 25 minutes.
  • Drain, peel (optional) and cut lengthwise into 1/2" slices.
  • Brush with olive oil and sprinkle with salt and pepper or for a spicier taste use garlic salt / seasoning.
  • Cook over glowing coals (or a medium high heat for a gas grill) for about 5 minutes on each side until golden brown.

These are just delicious, dip in or spread on cream cheese and crumbled bacon, and they are addicting!!!

2 sweet potatoes
1/4 c mild chili powder
2 tsp smoked paprika
1/2 tsp cayanne pepper
olive oil

Steps:

  • 1. Peel sweet potato and slice them long ways very thin. I use my mandolin on the middle width blade. Drizzle with olive oil and make sure both sides of each slice is coated with the oil.
  • 2. In a small bowl mix together chili powder, paprika and Cayenne pepper. You can use more Cayenne if you like more heat. Add a little cracked black pepper is desired.
  • 3. Sprinkle spice mix over potatoes and rub on both sides of each slice.
  • 4. Lay on med hot grill and cook on each side for about 10-15 min until done. Cooking time will depend on thickness of potatoes and heat of grill. Sprinkle salt on as soon as you remove from grill if desired.

3 pounds sweet potatoes or yams
1/3 cup butter or margarine, melted
1/2 teaspoon salt
Coconut, toasted, if desired

Steps:

  • Heat coals or gas grill for direct heat.
  • Peel sweet potatoes; cut into 1/2-inch diagonal slices. Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan. Add sweet potatoes. Cover and heat to boiling; reduce heat. Simmer about 12 minutes or until almost tender; drain. Mix butter and salt.
  • Grill sweet potato slices uncovered 4 inches from medium heat about 20 minutes, brushing frequently with butter mixture and turning once, until tender.
  • To serve, sprinkle coconut over sweet potatoes.
