1 tablespoon Worcestershire sauce
1-1/2 teaspoons brown sugar
4 boneless pork loin chops (3/4 inch thick and 5 ounces each)

Steps:

  • In a small bowl, combine molasses, Worcestershire sauce and brown sugar. Reserve 3 tablespoons sauce for serving., Grill pork, covered, over medium heat or broil 4 in. from heat 4-5 minutes on each side or until a thermometer reads 145°, brushing with remaining sauce during the last 3 minutes of cooking. Let stand 5 minutes before serving. Serve with reserved sauce.

4-6 thick-cut boneless pork chops
salt and pepper
1 cup ketchup
⅔ cup brown sugar (packed)
3 tablespoons worcestershire sauce
3 tablespoons apple cider vinegar
2 tablespoons dijon mustard
1 teaspoon mesquite seasoning (see note)
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon cracked black pepper (if using ground pepper, reduce to 1/8 teaspoon)

Steps:

  • In a medium sauce pan over medium heat, combine all ingredients for the bbq sauce. Bring to a boil, reduce to low and simmer for 5 minutes, stirring throughout. Reduce from heat and set aside.
  • Preheat grill to medium and oil the grates.
  • Season pork chops generously with salt and pepper on both sides.
  • Place pork chops on the grill, cook for 2-3 minutes, then turn over and brush bbq sauce all over the tops and sides of the pork chops. Cook another 5-7 minutes, then turn and brush bbq sauce all over the tops and sides again.
  • Cook 5-7 minutes longer until internal temperature reaches 140 degrees F or there is no longer any pink in the center. Allow to rest on a plate or cutting board - covered - for at least 5 minutes before serving - this is KEY to keeping the pork chops nice and juicy.
  • Serve with remaining bbq sauce. Enjoy!

4 pork loin chops (about 1/2 pound/2.50g each), cut 1 inch/2.5 cm thick
salt and pepper
For the classic barbecue sauce:
2 tablespoons vegetable oil
1 onion, finely chopped
1 garlic clove, finely chopped
1 lemon
1/2 cup/100 g brown sugar
1/4 cup/60 ml vinegar
1/2 cup/125 ml tomato ketchup
1 tablespoon Worcestershire sauce
1/2 teaspoon Tabasco sauce, or to taste
1/4 teaspoon chili powder, or to taste

Steps:

  • Make the barbecue sause:
  • heat the oil in a frying pan and sauté the onion and garlic until soft and lightly browned, 4-5 minutes. Grate the zest from the lemon and squeeze the juice. Add the lemon zest, half the lemon juice, the sugar, vinegar, ketchup, Worcestershire sauce, Tabasco sauce and chili powder to the onion and simmer gently, 5 minutes. Taste, adjust the seasoning and let cool.
  • Light the grill. Season the pork chops with salt and pepper and brush with the cooled barbecue sauce. Grill them, basting often, 5-7 minutes. Turn over and continue grilling and basting until the chops are done, 5-7 minutes longer.

6 ounces molasses, by weight (about 1/2 cup)
2 tablespoons apple cider vinegar
1 tablespoon dijon mustard
2 cloves garlic, minced
Kosher salt and freshly ground pepper
1/2 teaspoon ground ginger
6 to 8 sprigs fresh thyme
4 6-to-8-ounce bone-in pork chops (1 inch thick)

Steps:

  • Combine the coffee, molasses, vinegar, mustard, garlic, 1 teaspoon salt, 1/2 teaspoon pepper, the ginger, thyme and pork chops in a 1-gallon zip-top bag; seal and shake to combine. Marinate in the refrigerator for at least 2 hours or overnight.
  • Preheat a grill to medium-high. Remove the pork from the bag. Pour the marinade into a saucepan; boil gently over medium-high heat, stirring, until reduced to 1/2 cup, 12 to 15 minutes. Remove the thyme stems.

2 tablespoons vegetable oil
1 tablespoon apple cider vinegar
1 teaspoon ground cumin

  • Begin by making the marinade. In a small bowl, whisk together the honey, oil, vinegar, cumin and red pepper flakes. Easy, right?

7 cups cold water
