20 to 25 large scallops (about 3 pounds)
5 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 1/2 tablespoons lemon pepper

Steps:

  • Pat dry each scallop and lay them on a tray. Sprinkle on some olive oil, coating scallops on all sides. Season the scallops with salt, black pepper, and lemon pepper, making sure that the seasoning covers all sides. Refrigerate until ready to cook.
  • Grill for about 2 to 3 minutes on each side. Serve immediately.

GRILLED MISO MARINATED SCALLOPS WITH HIJIKI SALAD



Grilled Miso Marinated Scallops with Hijiki Salad image

1/2 cup sake
1/4 cup canola oil
1/2 cup light miso paste
2 tablespoons minced ginger
2 tablespoons sugar
1 teaspoon coarse ground black pepper
12 large scallops (U-15)
1 cup dried hijiki seaweed (can substitute wakame)
2 tablespoons rice wine vinegar
2 teaspoons sesame oil
2 tablespoons sliced scallions, green part only
1 teaspoon sugar
Salt and white pepper to taste
1 cup cucumber, peeled, seeded and finely diced

Steps:

  • Mix all marinade ingredients together and marinate scallops covered and refrigerated for 4 to 6 hours. Large scallops can marinated overnight as well. On a hot grill, mark the scallops on both sides. Should be served medium to medium rare. Serve 3 scallops on top of a small mound of hijiki salad.
  • HIJIKI SALAD: In a bowl, pour warm water over seaweed and soak for 30 minutes, or until soft. Boiling hot water will leak out too much flavor. Drain the seaweed well. Mix all other ingredients and toss with the seaweed and cucumber. Check for seasoning.;

GRILLED SHRIMP WITH PONZU SAUCE



Grilled Shrimp with Ponzu Sauce image

Yield Serves 2, can be doubled

Number Of Ingredients 8

3 tablespoons soy sauce
3 tablespoonsmirin (sweet Japanese rice wine), or 3 tablespoons dry Sherry mixed with 1 tablespoon sugar
3 tablespoons fresh lemon juice
2 tablespoons olive oil
1 tablespoon chopped peeled fresh ginger
1 teaspoon grated lemon peel
10 uncooked extra-large shrimp (about 10 ounces), peeled, deveined
2 cups thinly sliced bok choy or Napa cabbage

Steps:

  • Prepare barbecue (medium-high heat). Whisk soy sauce, mirin, lemon juice, oil, ginger and lemon peel in shallow bowl to blend. Add shrimp and stir to coat; let marinate 10 minutes.
  • Drain marinade into small saucepan and boil 1 minute. Grill shrimp until just opaque in center, turning occasionally, about 3 minutes.
  • Divide bok choy between 2 plates and drizzle with some of warm marinade. Top with shrimp. Serve, passing remaining marinade as sauce, if desired

LKG LOBSTER LOLLIPOPS

8 cups canola oil
4 live Florida lobsters
2 cups tempura batter
Salt and freshly ground black pepper
2 limes
Dipping sauces, for serving

Steps:

  • Heat the oil in a deep fryer or Dutch oven to 350 degrees F.
  • Remove the tail section from the lobster by grabbing and twisting off. Use a large chef knife to cut the lobster tail in half lengthwise. Use your thumbs to separate the lobster meat from the shell and cut each half into four equal chunks. Repeat for the remaining lobsters. Sprinkle with salt and pepper.
  • Dip the lobster chunks in the tempura batter and gently place in the oil. Cook for 3 minutes to 3 minutes 30 seconds. Transfer to a paper towel-lined plate and season with salt and pepper. Skewer 2 pieces of lobster on each bamboo skewer.
  • Take a head and the tail pieces of a lobster and deep fry them using caution since air bubbles will pop.
  • Place the head at one end of a serving plate and the tail pieces at the other. Place the skewers in middle of the plate. Sprinkle with a squeeze of lime and serve with your favorite sauces.

QUICK MARINATED GRILLED SCALLOPS



Quick Marinated Grilled Scallops image

Number Of Ingredients 6

Zest and juice of 2 lemons
2 cloves garlic, minced
1 tablespoon finely chopped fresh oregano plus 1 small bunch fresh oregano tied with butcher's twine to make a basting brush
Olive oil, for marinade
Kosher salt and freshly cracked black pepper
12 U-10 sea scallops, cleaned and patted dried with a paper towel

Steps:

  • Set up your grill for high heat by building coals evenly on the bottom of the grill.
  • In a mixing bowl, whisk together the lemon zest and juice, garlic, chopped oregano and 1/2 cup olive oil. Season with salt and pepper, then add the scallops, tossing to coat. Allow to marinate for 10 to 30 minutes.
  • Remove the scallops from the marinade, letting the excess drip off. Reserve the marinade for basting. Place the scallops on the grill and cook until charred, 3 to 4 minutes. Flip, and using the oregano brush, baste with the leftover marinade. Char on the other side, 1 to 2 minutes. Remove from the grill and serve.
