Grilled Pizza with Fresh Tomato and Basil image

Top homemade pizza dough with mozzarella, tomato and basil, then grill it to perfection.

1 pound prepared pizza dough, at room temperature
All-purpose flour, for rolling
1 tablespoon olive oil
2 cups shredded mozzarella
1/4 cup grated Parmesan
2 medium plum tomatoes, sliced and patted dry
Kosher salt and freshly ground black pepper
1/2 cup lightly packed fresh basil leaves, torn

Steps:

  • Stretch and roll the dough on a lightly floured surface into a thin rustic round about 1/4 inch thick and 12-inches in diameter (no need to be perfectly round). Transfer to an 18-inch-long piece of heavy-duty aluminum foil and brush the pizza with the oil. Lift the whole piece of foil and put on the grill. Grill until the dough is charred on the bottom and almost cooked through, turning the foil a quarter turn a few times to ensure even cooking, 4 to 7 minutes.
  • Using the foil, remove the crust from the grill. Scatter the mozzarella and Parmesan over top, add the sliced tomato and season lightly with salt and pepper. Using the foil, lift the pizza back onto the grill. Cover and grill until the cheese is melted, 2 to 3 minutes more. Remove the pizza from the grill and top with the basil.

1/2 medium red onion, finely chopped
1 pint cherry or grape tomatoes, quartered
2 avocados, preferably Hass, pitted and coarsely chopped
2 tablespoons extra-virgin olive oil, plus more for brushing
1/3 cup fresh lime juice (about 3 limes), plus lime wedges for serving (optional)
Coarse salt and freshly ground pepper
Cornmeal Pizza Dough (page 209)
4 ounces coarsely grated pepper Jack cheese (about 1 1/3 cups)
Sour cream, for garnish (optional)

Steps:

  • Toss the onion, tomatoes, and avocados with oil and lime juice in a medium bowl. Season with salt and pepper; set aside.
  • Heat a grill until medium-hot. Generously brush one side of the pizza dough with oil; grill, oiled side down, until the underside is golden brown and the top begins to bubble, 3 to 5 minutes. Quickly brush the top with oil; flip the crust. Top with a layer of cheese. Grill until melted and the crust is cooked through, 3 to 5 minutes more.
  • Slide the pizza with a large spatula onto a cutting board. Season with salt and pepper. Top with avocado mixture. Dot with sour cream and serve with limes, if desired. Repeat to make more pizzas.

1 pound pizza dough, thawed if frozen
Flour, for work surface
Extra-virgin olive oil
4 ounces soft goat cheese, crumbled
1 cup cherry tomatoes, sliced 1/4 inch thick
1 cup baby spinach
1 avocado, diced large
3 tablespoons fresh oregano leaves
1/4 cup fresh basil leaves
Coarse salt and ground pepper

Steps:

  • Heat a grill to medium. Clean and lightly oil hot grill. Divide pizza dough into 4 balls. On a lightly floured work surface, stretch or roll dough into 6-inch rounds. Lightly brush both sides of each with olive oil and transfer to grill. Cook until undersides are lightly charred and bubbles form all over top, 1 to 2 minutes. With tongs, flip dough and grill until lightly charred, 2 to 3 minutes. Transfer to a cutting board. Top crusts with goat cheese, tomatoes, spinach, avocado, oregano, and basil. To serve, drizzle with olive oil and season with salt and pepper.

2 avocados - peeled, pitted and diced
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lime juice, or to taste
salt to taste
1 clove garlic, peeled
4 (7 inch) pre-baked pizza crusts
1 tablespoon olive oil
1 cup chopped cooked chicken breast meat
1 cup cherry tomatoes, quartered
1 cup shredded Monterey Jack cheese
1 pinch cayenne pepper

Steps:

  • Preheat your oven's broiler. If you have a pizza stone, place it in the oven while it preheats.
  • In a food processor, combine the avocados and cilantro. Puree while adding lime juice and salt to taste. Cover, and set aside.
  • Slice the garlic clove in half, and rub the cut side onto the tops of the pizza crusts for flavor. Brush both sides of the crusts with olive oil. Spread the avocado mixture thickly over the top of each crust, then arrange chicken and tomatoes on top. Sprinkle with cheese, and season lightly with cayenne pepper. Place pizzas on a baking sheet if you do not have a pizza stone.
  • Broil for about 5 minutes in the preheated oven, or until the cheese has just melted and the crust is lightly toasted.

6 tablespoons butter, softened, divided
8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
4 ounces Brie cheese, rind removed, sliced
2 medium ripe avocado, peeled and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Place bread, butter side down, in a large cast-iron skillet or on an electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie; add avocado slices. Sprinkle cheddar cheese mixture evenly over avocado slices. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.
